I don't spend a lot on many things anyway and only 3 or so years off paying off my place anyway. Have to start thinking of where to go with investments, I guess. Those machines are bloody heavy btw!

There is an ad in the local newspaper(s) on Coventry Square Markets saying "Opening Soon" - trying to get shops in with a mock up of the inside of the building.

went past tha other night after tha movie, lots of work done on tha exterior...

apple green. that's what the mrs wanted. Had to pretend it's for her.

Do you just use the mixer or have you got the grinder/pasta/ice cream attachments?

samboy

I got the meat mincer from amazon just recently (about 1/3 of the price here). I must admit though, even though it works the quality and/or functionality of the attachments aren't as good as the original mixer.

PS: Always lift the mixer from the base. The locking mechanism that holds the head in place can not be relied on and you may get a nasty surprise. Depending on use (I do a lot of dough kneading so it shakes about quite a bit) it can stop locking in the up or down position every now and again. Just a matter of adjusting a screw though to fix it (it's in the manual).

lunch @ kanta in langford, pretty good once again, among the best jap in perth IMO

sashimi was good but nothing spectacular, i suspect they keep the special stuff for dinner like raw scallops etc but sushi was pretty good. we also had an oxtail sukiyaki, simmered pork belly dish and some gyoza, all very good, prob oxtail, gyoza and then pork belly in order of preference. gyoza texture is really nice also

also recommend the egg thread fish stock type soup

3 of us overordered slightly, had soup and drinks and lunch was $105 which was pretty good.

u can certainly get away with $12-$15 per head if you go with your katsu/karaage/teriyaki type dishes

PERTH foodies will be able to taste Nobu Matsuhisa's famous Black Cod Miso soup from September 5, when the world's most recognised Japanese restaurant opens its doors at Burswood.

The official opening date of the restaurant has been under wraps until now.

Part-owned by Hollywood superstar Robert De Niro, Nobu restaurant will join Neil Perry's Rockpool in a new culinary era for the gaming mecca.

While there is still no word as to whether De Niro or Matsuhisa will attend the Perth opening, De Niro has been at the openings of many of the far-flung franchises, including those in Beijing, Moscow and Budapest.

Nobu currently has 25 restaurants in 21 different cities around the world, spanning across five continents.

Nobu joins a cast of high-profile restaurants including Rockpool and Italian eatery Modo Mio as part of owner James Packer's $500 million overhaul of Burswood Entertainment Complex, which also includes multi-award winning chef Guillame Brahimi's famed Bennelong restaurant, as first revealed last month on the PerthNow iPad.

prices arent too bad, i think they'll get away with it. plenty of people out there dont midn spending that sort of money fairly regularly (im not one of them) and also i think burswood isnt far off being a place people go to for a meal without knowing what theyre going to eat yet, similar to crown (difference being iot is more of a mission to get to burswood)

if they get the vibe right i think it will do well, there really is only p'tite ardoise that is doing bistro well in perth for reasonable prices (must being that bit more expensive)

they own a small farm that supplies their own beef which they then dry age on site.

p.s - prices above for melb, knowing our luck perth will be more expensive (the grill'd excuse), also charging nearly the same price for bourguignon and veal tongue as they do for bouillabaise and lamb is prob taking the piss a bit

Did you see I said JB's not Fibbers? Funnily enough I typed Fibbers but corrected b4 I posted. I've not eaten there (Fibbers) for years - but recently having quite a few Friday drinks there. The food used to be good and I believe they still are distinctly better quality than most pubs.(the owner once slagged me off totally in the local press - local ALP hit-man so I shunned it for a while - which was tough when there were not many drinking options).

JBs is a great pub. $18 for 2 pints of Guinness as well! My food was great - although I didn't exactly risk much with the beef and guinness pie on mash and mushy peas. THe pumpkin curry serves looked a tad small but no one complained. I think better as a pub then restaurant though, and the bar meals are good. Good atmosphere and good priced booze are what a pub should be measured on though, so it rates highly with me.

Service was good as always, food was good but not great, eg pizza base couldve been a bit better but still very acceptable, fig and haloumi a bit overdressed, goat chops a touch underseasoned.

Dinner for 2, including a big jug of sangria (close to 6 glasses worth), 2 entrees and a pizza, 64.50

Very good value imo, food portion was 46.50. Interestingly he wasn't the only old fart there, good to see more oldies venturing out into the warzone

Don't bother. It's horrible."

"Store bought (lame) taco shells were stale. Didnt even taste like Mexican food. Chicken tacos tasted like chicken curry in a stale tortilla. At least put in an effort !"

"Really feels like a fast food franchise calling itself Mexican food. Small portions for what you pay and pretty tasteless."

"My partner and I stop in here occasionally for a quick bite to eat. Being vegetarian we are thrilled with the vegie friendly options, and love the fresh lime squeezed across our burrito. Yum! Fresh, fairly light, and healthy! And lots of cute options. An easy, quick bite."

So, dad and I went to bivouac for dinner last night, must say I'm yet to have a bad experience there.

Had breakfast there the other day. The place wasn't too busy, maybe four tables full of people, but I could barely hear who I was sitting with -- the place is in dire need of some acoustic panels or some soft furnishings, place echoes like a motherfucker.

Had the canteen tray (scrambled eggs, sausage, baked beans, toast). The sourdough toast was too hard and thin for my liking - you know when it cracks and breaks when you try to cut it, like a cracker? Yeah. Otherwise everything was great and I'm looking forward to going back.

Chefs turn pigskin into tasty treats

San Francisco chef Chris Cosentino isn't much of a football fan. But that doesn't mean he doesn't know how to toss the pigskin around the gridiron. Or the frying pan.

We're talking hide of the hog, of course, that often-neglected part of the pig that is winning new appreciation as chefs tune in to its lush, unctuous properties.

"We're starting to see it become the focus," says Cosentino, chef at Incanto restaurant in San Francisco and a champion of so-called nose-to-tail eating.

"Pigskin is becoming the highlighted item in the dish now, whereas before it was more of an additional component to the dish. It has its own uniqueness. It has its own texture, its own flavour."

Among his specialties is ciccioli, a kind of sausage made by braising scraps of lean meat with fat and skin and seasoning the mixture with garlic and rosemary, and chicharons, pieces of pork rind that have been seasoned and deep-fried.

Perhaps the most interesting recipe is the pigskin pasta, in which marinated skin is slowly braised so it's tender, but not too soft, then chilled. After that, excess fat is scraped off and the skin is cranked through a pasta cutter to produce "spaghetti".

Cosentino first encountered the pigskin pasta, served with a marinara sauce, at the Joe Beef restaurant in Montreal and was "bummed out" that he hadn't figured it out first, he says with a laugh.

Fortunately, chef Fred Morin was willing to share. He has served the pigskin pasta with porcini and truffles - a natural pairing since pigs hunt truffles - as well as with clams and cherry tomatoes.

In Texas, chef Tim Love of the Lonesome Dove Western Bistro in Fort Worth has his own take on pigskin.

Chef Chris Cosentino turns pork skin into "spaghetti". Pictures: AP

Unlike Cosentino, Love is a football fan, the Dallas Cowboys to be specific, and has cooked for the players.

Sundays mean roast meat and tailgating, which often includes the PLT - crispy pigskin, lettuce and tomato - a sandwich he broke out at a tailgate party one day "and everybody went crazy".

An easy snack is to take a bag of fried hot and spicy pork skins and top them with red onion, creme fraiche and some caviar. Zippy and creamy "it's a great hors d'oeuvre", Love says.

He also makes pigskin nachos, using pulled pork on top of crunchy pigskins with a few pickled chillies.

A pork and beans dish by chef Chris Cosentino.

Boston chef Ken Oringer has divided loyalties when it comes to football. As owner of six Beantown restaurants including Clio, Uni and Toro, his sympathies lie with the New England Patriots, some of whom often visit his restaurants. But as a native of New Jersey he has to root for the Jets, too.

Pigskin, on the other hand, inspires no such reservations.

At Clio he fries pigskin and uses it as a vessel for "chowder" with oyster emulsion, freeze-dried corn and crispy slivers of potato.

At La Verdad, his taqueria, he braises pigskin in spicy salsa verde for tacos and stuffs it into corn tortillas topped with radishes, cilantro, pickled onions and jalapeno.

"I love cooking with pig skin. It's an ingredient used in so many cuisines, from south-east Asian to Spain to Brazil, and I love seeing how different cultures use it," Love says.

"It's interesting to see how chefs turn this rustic, almost peasant, ingredient into an elevated and composed dish. It's something that is so rooted in the food of grandmothers, and has recently been embraced by chefs and diners more than ever."

There is, he says, "nothing like that slippery, voluptuous mouth feel of pigskin, so gelatinous and tender".

Incanto's Cosentino, an authority on offal whose website, Offal Good, promotes eating animal parts that have fallen out of favour, also points out that the new emphasis on pigskin is reviving old customs.

"There's really cool old dishes of skin and beans and skin and braised greens. Nobody's reinvented the wheel here; we're just finding new ways to showcase it," he says.

ive salivated over some of tim love's and chris cosentino's stuff in the past but this is seriously awesome

Phon Vinh puts shredded pork skin in top of their pork chop, can there be a better combination than pork with pork??? Pork skin is really great, they add it to the chinese burger at Kung Fu kitchen as well.

Sanj, that pigs trotter we had (or was it a hock) at Hawkers - that was gelatinous goodness right there!

mmmm gelatinous

It really is a whitey thing not to like gelatinous foods, I have several friends who can't do it.

Gelatinous things I have tried, but didn't like:

* Tendon (willing to give this another go)
* Jellyfish (crispy jelly fish was fine, the gelatinous stuff, not nice)

Also, for the first time in a while, I had boneless duck for lunch today at Good Fortune. I am hard pressed to remember having ever eaten nicer duck in my entire life. It really is world class, iconic, duck.

No, I didn't get the plum sauce, and I was glad! The duck was that good.

a bit too much msg in the soup but the wantons had vgreat texture. good selection of condiments too, 3 kinds of chilli, soy sauce, salt etc

Speaking of burgers and Asia. The MOS Burger in Brisbane has been doing way better than expected. They are opening a CBD Brisbane one shortly and plan to expand to Sydney, Melbourne, Adelaide and Perth over the next few years!!!

I often wonder.... with the high % of the population made up of asians, brits, irish, south africans in Perth..... would the political landscape be vastly different if tomorrow they announced an amnesty and everyone could have citizenship and hence vote?

There must be a hell of a lot of people here of voting age who can't vote, and who would most likely be more in favour of things like deregulated trading (seeing as the Asians are the only ones who seem to be shopping in NB on a sunday!), daylight saving etc...

Amnesty? There are only around 50-100,000 illegal workers in the whole country so maybe 5-7% of that would be in Perth? Not much to make a difference in referendums imo.

On only 3 or maybe 4 Sundays every year, I don't have Dim Sum for breakfast/brunch/lunch.

Tomorrow will be one of those mornings. It is unscheduled, hence the late notice.

Can someone tell me where to get the best whitey cooked breakfast these days? On a Sunday? I like eggs, bacon, all that English breakfast style fry up, but willing to go other European styles. I want a hearty breakfast/brunch.

All responses appreciated.

In an ultimate act of 'impulse buying' I ended up getting a Scoopon $39 for a place called Ribaudos in Como. I really wasn't looking forward to it, especially since the reviews were really bad. After postponing for months I decided what the heck it's better than dominos so went there with the Mrs. on the weekend.

I was prepared to be extremely disappointed and more than happy to cope it.

Ok the place looks like a converted bingo hall but other than that I was blown away by how un-disappointed we were.

The service was top notch. I'll go as far as saying it's one of the best I've experienced in Perth. Friendly attentive and efficient staff.

The food was not as gastronomic delight but everything we got was more than palatable. (Marinated Olives with Ciabatta, Salad, Veal Medallions/Pizza, Semi Fredo/Affogato). Even the free glasses of wine were good.

It looked like every table there were Scoopons so I'm not sure how they can survive on $500 takings per night.

I really wanted to fault something but I couldn't. Would I go back at full price? Probably not. Would I buy another Scoopon? Hell Yeah!!

Sayers for breakfast this morning.

Two people, $50, large servings. A big breakfast type of thing (eggs, bacon, sausage, tomato, mushroom, toast, potato rosti, home made baked beans - the beans would have been the highlight) , and a spinach ricotta crepe with some cheese, toast, and a poached egg.

Service - great! Taste, good, not mind-blowing. Coffee, again - good, not great.

Would I go back? Possibly. All food items, apart from the beans, just lacked a certain "something". Everything was cooked nicely.

I'd give it a 6.5 out of ten - it was just that lack of flavour that let it down. It could have been the produce used. It's bugging me, I can't put my finger on it, but overall, slightly lacking.

The thing with opening a business in Perth, if you are an international business for example, is that even if it would do well, it's still probably for a lot of businesses, not the best option. For example, although a Nespresso cafe would clearly do well in Perth, Nestle probably has a controlled plan as to how many stores they want to open in the region over x amount of years. Why open a store in Perth when you can open an additional one in Melb or Syd which will do even better?

Once the govt has completely moved into 140 and all the linkages between that building and 140 are completed (are they yet?), you'll get a lot more foot traffic through there and I think you'll see the leases get taken up.

Rents too high? Wrong location? Waiting until the Forrest Place work is finished? Better options elsewhere in the CBD?

I have a feeling they will get occupied by funky consultancy types, creative design etc. Just does not seem to suit retail. But yes the above reasons will have made retail people not want to get in yet. I doubt will ever have massive foot traffic through there.

Dilaz89

It needs to have at least one bar/restaurant. The interior of the building is great and only looks dingy because there's nothing in there. It wouldn't take much to activate that space.

All the linkages are pretty much done except for the bit between the GPO/CBA/140 which will be done as part of the last stage of forrest place.

I reckon if they improved the finishes it would make a good area for high end Australian or International stores. Not necessarily fashion. Maybe a restaurant bar in it too.

A bar or restaurant would be great, but I don't think it would work with the glass they have used at the front of each tenancy.

September 5th, 2011, 04:13 PM
i would think that that could easily be changed during a fitout couldn't it? I think that although it is currently a waste of space in the long term (after the final upgrades to forrest place) it could become a highend retail/food location in the CBD

jackso
September 5th, 2011, 05:44 PM
Yeah, it could definitely work.

entrees:

salmon carpaccio with croutons, olives, anchovies
some beef thing with truffle that dilaz ordered, they altered it for him without fuss
octopus salad
shared bruschetta

mains:
i couldnt decide between duck or lamb so they made me a dish with both, dilaz and jackso had the same
sides - peas and pancetta

shared dessert:
some apple tart thing
hazelnut parfait

dessert came out already portioned on 3 plates which was a nice surprise

one of the best galileo experiences ive had and ive had quite a few, lots of little touches that add up. we also never felt rushed despite leaving around 11.30 or so (im pretty sure it was that late)

You guys know about La Cucaracha taco cart?

Very good taco's, bean = $3, pork = $4, beef = $4.

Exceptional value, all three flavours good (pork was my favourite), guacamole made from Avocado's grown in Highgate, quality, service, and price = 10/10.

Edit : it may have actually been cheaper. All I remember is hearing "$3" and saying to my GF and her friend "buy about thirty bucks worth", which fed three people.

Once the govt has completely moved into 140 and all the linkages between that building and 140 are completed (are they yet?), you'll get a lot more foot traffic through there and I think you'll see the leases get taken up.

The link between 140 and the GPO were completed month ago. The problem is that so few people are 1) not using Forrest Place and 2) not aware of the link.

Top fashion chains hunt big CBD space
07-Sep-2011 by Catie Low
http://www.wabusinessnews.com.au/article/Top-fashion-chains-hunt-big-CBD-space

A SHORT supply of big retail spaces in the CBD is hampering plans by two of Europe’s top fashion chains to set up shop in Perth and reap the benefits of the state’s long-term economic outlook.

Zara and Topshop are both understood to be seeking suitable properties in the city but their requirements for large floor spaces in high-profile locations have proved a stumbling block for the fashion giants, despite the launch of a number of new retail projects in the city in recent years.

Spanish fashion phenomenon Zara already has outlets in Sydney and Melbourne and it’s close to opening the doors of its third store, in South Australia.

The Adelaide boutique will cover 2,300 square metres over two floors in the Burnside Village redevelopment and feature a glass lift, modelled on Zara’s Fifth Avenue boutique in New York.

The former Borders Bookshop store has been suggested as one city site that could be big enough to support either a Zara or a Topshop but the location would also have to meet a number of other stringent criteria, such as profile, exposure and street frontage.

Retail property specialist Jim Tsagalis said both the labels had forged a presence on the east coast and they needed to expand their network to make that investment work for them.

“They have a backbone of infrastructure in the Australian market … they are in a cycle for their businesses where they need to expand to pick up on a lot of fixed overheads,” said Mr Tsagalis, who is managing director of Lease Equity.

“If the climate is such that it’s difficult it also means the commercial terms they can get are better but, having said that, both of those particular organisations need parameters that are difficult to get.”

Continued interest in the CBD from major global brands is at odds with the historically weak consumer spending, which claimed another scalp this week, with Australian clothing chain Satch calling in the administrators.

But retail property analysts claim it’s symptomatic of the uneven performance of the sector as well as the changing nature of CBD retail.

The Satch move follows the closure of a string of high-profile retail businesses this year, including middle market fashion labels Colorado, Brown Sugar, book chain Borders and high-end fashion label Bettina Liano. Among the sea of red sale signs and unleased shop-fronts, a handful of high-profile brands like Apple can’t seem to keep up with the demand and lease inquiries from new food and beverage operators are still strong.

Mr Tsagalis said it was part of the broader evolution of the city, driven in part by the work undertaken for the Commonwealth Heads of Government Meeting (CHOGM) next month and the maturation of the city’s hospitality scene.

“All of a sudden people who haven’t been to the city will see this rejuvenated shopping environment but also some new retail and it won’t all be fashion but it’s going to be fashionable, fashionable food, fashionable alcohol, fashionable venues,” Mr Tsagalis said.

“People are happy to feel good about what they are going out for, a meal and a drink rather than buying a frock, shoes or a suit, so we are seeing disproportionate growth in food and beverage.”

In terms of the leasing deals, Mr Tsagalis said the core activity had been clustered above the $650,000 per annum mark but more generally retail rents had flattened.

The performance of the Apple shop on Hay Street is understood to have caused a number of international retail brands to adjust their expansion strategies to include Perth.

But more broadly, CBRE retail services associate director Fred Clohessy said CBD retail rents were either flat or trending down and incentives were on the rise.

“It’s an interesting market because all the fundamentals are still saying retailers should open in Perth but middle range (price point) fashion is doing it tough,” Mr Clohessy said.

“And the problem we have in Perth is most of the decision makers and headquarters for Australian fashion operators are in Sydney and Melbourne and the spend on retail in NSW is dismal so … getting them to expand or open a new store in Perth is proving difficult because of that.

“It’s a funny market because there are some big-name retailers looking at coming to Perth and yet you are hearing that some of the Australian retailers are having second thoughts.”

Sounds promising. Here's hoping there are some interesting developments in the near future. In terms of large floor spaces the borders store is available, but it isnt a great location. The first floor of the building on the cnr of William and Hay is available. I would love to see Zara take over Florsheim at ground level, and then the first level of that building.

Not sure what is still left at Raine, but there are some relatively large floor plates there I think.

Zara and Topshop in Perth would totally change the fashion market here. There is nothing like Zara in Perth. Finally an international name, that sells decent, reasonably priced clothes in Perth. Big game changer and could have a great lead on effect for other mid range brands to open up in Perth that sell good men's stuff.

...of course it could just be like a lot of other international brands that have huge men's sections overseas but only an afterthought of a corner for men in Aus.

I must say, I really do not like Zara. I find their product to be totally ordinary in both design and quality. It appears to me like cheap rip offs of quality brands.

Also, has anyone noticed that in a lot of major European cities Zara seems to have 2 stores across the road and a few shops down from each other.

If the both came to Perth. I think the building florsheim is in would be good building to fit in both. Though it require them to rework the renovation.

Zara can be hit and miss, but generally is quite good. Their whole business plan revolves around taking what the bigger fashion brands are doing and copying it to a large extent. Their business shoes, boots and coats are excellent. Plain t-shirt and sweaters are great too.

Yes they are everywhere. In central London you can find 6 of them within a 15 min walk radius!

H&M - now there is a crap store. Used to be hit and miss, now is just miss.

Well Shearers in the city is closing down so that's one large shop that can be absorbed. Although not sure whether it meats the foot traffic criteria.

The other good one was the Surf Shop near target. I'm not 100% sure but it looks like Target's actually taking over that area? Huge waste if you ask me. That site is as good as it gets for something like Zara.

Zara would want to have their ugly branding all over the building though. The GPO is already cheapened enough with tacky signage.

I think EPRA will be pretty desperate to see something happen this time around. They are advertising it for the same purpose - restaurant/bar etc. So they must be confident that it is possible to get a license for the site. I can't see RGL knocking it back a second time because I think the backlash would double.

I really don't think the borders site is right for Zara. It literally has NO street presence. The only frontage it has is the doors, which a setback a good 5 metres from the mall, so unless they filled in the outdoor foyer I can't see it working. Even then I don't like the idea.

Cops cite Clink to sink new bar

http://www.oneperth.com.au/2011/09/08/cops-cite-clink-to-sink-new-bar/

CHRIS THOMSON
An 11-month bid for a boutique bar overlooking the Fremantle cafe strip has been sunk after police and competitors claimed its location beside the notorious Clink nightclub would escalate drunken violence in the port city.

In October last year, Soho burger bar owners Joanna MacLeod and Gareth Hancox requested a licence to open a cocktail bar in the loft of their historic South Terrace premises.

The application was rejected in April, and earlier this week the Liquor Commission of Western Australia set aside the couple’s requested review of that decision.
This was despite the fact that Fremantle City Council had earlier granted planning approval for the bar.

Just two objections were received to the liquor licence application – both by likely competitors, the Newport and Orient hotels.

The usual notice of intervention was lodged by police commissioner Karl O’Callaghan, and another by the Department of Health.
Dr O’Callaghan submitted the bar’s proposed location beside the “problematic” Clink would be a major problem.

The Newport and Orient submitted that a high number of incidents had been recorded at The Clink.
In October last year, the commission fined The Clink $7500 after police reported 56 incidents at the nightclub in 2009.

Before the commission, Ms MacLeod and Mr Hancox argued they should not be penalised for crime reports relating to The Clink.
The health department expressed concerns about the big number of liquor outlets in the area, but submitted that conditions contained in the city’s planning approval would help minimise the risk of harm.

In delivering the planned bar a second knockback, the commission found the city’s planned conditions would not protect the community.

Karl if you're reading this - Why don't you adopt a no child policy. It'll cut down on crime as well. Imagine in 50 years the perth population may be down to 200 people. 150 of them cops. Problem solved.

Karl's Solution to "problem" bars/clubs like the clink is to ensure they have no competition, so that they may carry on with business as usual.

Karls (Hitlers?) solution:

Step 1: Pull up a bunch of stats about current licensed establishments

Step 2: Publish these stats without any details (54 out of 56 incidents were in regards to dirty glasses)

Step 3: Scare off law abiding public from frequenting existing places leaving only criminals patrons

Step 4: Number of incidents increase further proving the Axis of Evil theory

Step 5: Do not allow any new establishments to open for law abiding citizens to visit

Step 6: ?

Step 7: Public protected

Step 8: Wonder why my son was involved in manufacturing meth. (Yes, seriously, he will never understand this, ever!)

Isn't he the one with the drug lab child? If so, I don't really think he's the best fit for the job. It sounds offensive I guess, but seriously? He can't be make a cities decision re: licensing if some of his decisions have led to what has happened. The bar probably would've taken people away from Clink and forced them to behave better.

No, it would have absoutely no effect on the Clink and vice versa. The only effect it would have is "thinning" out the derro crowd on the street. But why would you want to do that? Makes it hard to justify your hitler dictatorship.

Free lunch! Doesn't say how many places are up for grabs though. Edit: 20 places, so a slim chance of being a fat biatch.

Top chef delves into the archives to bring historical menus to life

The State Government is offering West Australians the chance to win a place at a luncheon where WA chef Hadleigh Troy will delve into the archives to interpret and reinvent menus from a range of State dinners dating from the 1920s.

Culture and the Arts Minister John Day today announced that Eating the Archives would be a special event and online exhibition as part of the Commonwealth Festival Perth.

“The staged luncheon will not be a re-creation of a single historic dinner but a demonstration of how historical archives can be reinterpreted to be relevant today,” Mr Day said.

“The idea for this event emerged when archivists from the State Records Office (SRO) uncovered a treasure trove of menus and documentation about State banquets.”

Agriculture and Food Minister Terry Redman said Hadleigh Troy will use fresh, local produce to interpret the archives with a creative and modern twist.

“The Department of Agriculture and Food has partnered with SRO for this event and the dishes will be prepared using premium quality WA produce supported by the Buy West Eat Best campaign,” Mr Redman said.

“Eating the Archives will bring history alive and connect people with the State archive collection but it also throws the spotlight on the best local produce WA has to offer.”

Head chef and owner of Restaurant Amuse, Hadleigh Troy, said that as a chef the last thing he expected to find himself doing was trawling through archives for menu ideas.

“The process of putting on the gloves and looking through all the old archives surprised me and I drew unexpected inspiration from handling original documents,” Mr Troy said.

“Asparagus and aspic were definitely the food fashions of the day, like heirloom carrots would be today; heirloom refers to vegetables grown before the 1950s - before commercial farming led to hybrids - you could call them archival vegies.”

The open-air lunchtime event will take place on Friday, October 28 in the People’s Space at the Perth Cultural Centre (PCC) directly after the official opening of the Commonwealth Heads of Government Meeting that will be streamed live to the PCC’s big screen.

Places at the lunch can be secured by registering online on the SRO’s website http://www.sro.wa.gov.au/eta

The Commonwealth Festival Perth will be held from October 23-30 with the People’s Space open from October 26-29 and is supported by the Department of Culture and the Arts and Lotterywest.
