Much like making Napoleones, it should be prepared with the right stuff. If cream is not cooked properly, you are making a crepe with a bad presentation, too messy. If cooked too much, hahaha, you get a sugar coated charcoal.. It should be just right.. Patience is key to perfection..

Yep. napoleones. puff pastry that's tedious to cook. make a butter based dough just right, chill it but not freeze then put it back sa table and beat it flat then fold and beat it flat, careful not to break or crack...then chill sa freezer...then repeat and repeat....and everybody complains why napoleones is expensive...hehehehehe....only the filling and the topping is the easy part...daw Bacolod gid ah....balbalon anay antes mag namit...:cheers:

Yeah...agree...by our own pace lang....we tried to go as fast as we can not so long ago but daw wala lang pulos because nobody cares to read and enjoy the stuff we post because we are beating the numbers...puro lang satsat...so better yet slow and easy ah....malab-ot man ta da gyapon...

I remeber this article sa filipiniana section sa la salle... malagaw ko bala to take picturws of these articles.. wala d b portable scanner mo.. hays..

Really? all I know Princess of Negros carried Pres. Quezon from Corregidor to Tacloban via Romblon, then transferred to a submarine to Ubong Point in Hinobaan before being brought to Australia. So its somewhere along that line of travel. ^^

yup dalagko because our churches were built on the later years, that's why mas modern looking aton mga churches di, unlike the traditional and classic (massive) old churches, basilicas and cathedrals of large Spanish Era cities like Cebu and Iloilo that are "hands down" grand and beautiful.

yup dalagko because our churches were built on the later years, that's why mas modern looking aton mga churches di, unlike the traditional and classic (massive) old churches, basilicas and cathedrals of large Spanish Era cities like Cebu and Iloilo that are "hands down" grand and beautiful.

It's Sabado de Gloria today...pro sa English calendar Black Saturday?ay ngaa?

Not open pa na sa public migs..., but if you know somebody sa SMR office, puede lang ka lisensya and puede na dayon ka stay sa tower and do snorkeling ... according to the SMR chief., Panal reef is far better than the other two reefs (Carbin and Macca) in SMR area ...

I needed to use Spanish words in my title because the beautiful tale of this city dates back to the time when Spanish was the popular language for its highbrow population. Way before the time when Barney and his friends instilled a powerful influence on our youth’s language preference, there was the era of poise, grace, immense wealth, and yes, Spanish words.

The place that I speak of is the city of Silay in Negros Occidental. And this city made me realize the immense power of sugar to transform lives.

Apparently, being manufacturers of sweetness has allowed people to get filthy rich and party from 8 a.m. until midnight with booze and music. And since Silay City was one of the first cities to discover that planting sugar can change their way of life, it became the most affluent city in the province at the turn of the 20th century.

Silay City is coined as the “Paris of Negros Occidental” because it is the seat of art and culture. And once upon a time, if you are not from Silay, you are considered an afuera, or an outsider. So, let me tell this tale from the point of view of an awed afuera.

The Sweet Life

There was a certain stillness when I walked through the historic streets of Silay. It seemed too calm to belong to the present age and I really wished I brought an abaniko with me so I could laugh sweetly behind it as I speak with a handsome gentleman or use it to slap an aggressive young man.

I remember my beautiful grandmother when I visited Silay—old, lovely, refined, poised, graceful, and with a lot of stories to tell.

Restaurants and pharmacies, which have stood the test of time, still posses that charming periodic feel. One of which is the famous Kapehan, which, as you might have guessed, is a coffee shop. And just as how drinking coffee has the power to make people blurt out their opinions about the government and other things in life, Kapehan remains to be a hangout of people who love rich conversations or even friendly debates about how they would run the country if they were President.

Old houses were transformed into museums and opened for public viewing such as the Manuel Hofilena Heritage House and the Don Bernardino Jalandoni Museum, which were perfectly restored or retained in their original state. As its gracious tourism officer, Ver Pacete told us the stories of Silay, it was so easy to imagine how they used to move around the house.

One of the famous old houses is Balay Negrense. It has 12 bedrooms, a beautiful porch, a vast garden, and two storeys of spacious interiors where you can invite the Streetboys to do cartwheels without bumping into each other.

This place was owned by the son of the man behind Silay’s success—Señor Victor Gaston y Fernandez. He’s a Frenchman who had brought sugar samples from Habana and Puerto Rico and had planned to make a fortune out of them in the Philippines. And after going around the country, he discovered that the perfect place to plant them was Silay!

Since then, the city was never the same again. Perhaps, it was the beginning of the people’s need to have sugar in their coffee, bread, and in any other edible thing. Just like in love, once you’ve experienced sweetness, you can never live without it again.

Going back to my tale, Gaston established the first steam engine in Silay. Other rich Filipinos followed suit and made a great deal of wealth for themselves too. And unlike the usual telenovela scenes where uber rich individuals like to maltreat their workers, sugar planters and workers have a great deal of respect for each other.

And oh, how they partied! If you think partying for hours in this age is a huge deal, you should read about how Silaynons threw parties. Here’s an excerpt from a writeup in Povenir de Bisayas published in March 11, 1895:

“Despite the bad weather, most of the elite in Silay were present. The party started at 8 in the morning and lasted until midnight. The guests were warm and cordial, a profusion of dulces was passed around with all kinds of drinks, from the aristocratic and frothy champagne to the exquisite and popular Lager beer. Lunch and dinner were splendid with Sr. Gaston and his distinguished family outdoing themselves in graciousness and hospitality.”

And it’s not just cocktails. Parties in Silay come with free lunch and dinner too. Guests and dignitaries used to come to the city because of its famous orchestras, carnivals, dances, and balls and its Kahirup Theater was once a famous venue for international performers to present their shows.

It was a sweet life indeed! Bags from Europe could be bought in Silay, and they did not compromise on the quality of anything. Even its cathedral, The Cathedral of San Diego de Alcala was commissioned by a Silaynon, Don Jose “Pepe” Ledesma y Rosario, to an Italian architect who used churches in Italy as its model. They also said that the rich peeps used their four-poster beds as coin banks and underneath these beds were loads of cash. And since there was mutual respect and contentment in all sectors of society, there was relative peace in the city.

And during the countrywide revolution in 1898, the Silaynons made a historic fight on that fateful day of November 5 when they all gathered together and this resulted in making Silay the first city in Negros to gain independence from Spain. If I were a Silaynon during that time, I would scream “We’re richer than you are that we can burn you using my money!”

Silay’s Soil

Centuries after sugar was turned into money, a new breed of planters emerged in Silay and was so apt for the modern, health-conscious, and environmentally concerned individuals.

A mangrove plantation in Barangay Balaring has made Silay into a beautiful ecotourism site. A project of the Ikaw-Ako Japanese Foundation which started in 1997, this mangrove plantation has protected Silay’s coastal areas from strong waves and has enriched its marine life. Tourists can buy mangrove seedlings for five pesos each and plant them themselves. It is indeed a marvelous feeling to step into super soft soil and give a contribution to Mother Nature. According to volunteers, this project of Japan in Silay can prevent any tsunami which may come its way.

And for foodies who love organic food, Silay is also the home of Fresh Start organic farm—a haven of organic goodies in tastefully designed packages that can be at par with other organic farms in the world.

Savoring Silay is more than traveling the distance, it is also like traveling through time. I may be an afuera but visiting Silay has made me feel proud that such a city belongs to the country I live in.

And just like sugar, Silay and its people are indeed, refined.
