my favorite has got to be Bún Bò Huế..... :drunk:

How to cook a pot of Hue beef noodle is the period to learn seriously for years. The noodles should be soft, tough, wet and sweet. The famous restaurant in Hue City can not made the rice noodles, they have to buy it from Van Cu, Bao Vinh villages, the two villages are 5-10 km from Hue. Beside the rice noodles, the secret is inside the pot of water. Learn how to make a pot of clear but sweet water from boiling bone and meat is very difficult, but how to make customer feel wonderful with the dish is even more challenge, that means the cook has to use her secret of putting condiment, particularly the way to suffer shredded meat - the peculiarity of the style beef noodles. The best of shredded meat is in Thuan An. Put it in a separate pot, boil and watch out the suds, keep till cool and take the upper water line to cook, to ensure the tasteful smelling of shredded meat. The collection of meat is one of the most important tasks: fresh meat. The cook has to cook Hue beef noodles just enough. It should be tasteful with a herb dish which includes sprouts, banaras spayte, coriander, that make us feel fresher in summer. In the winter, Hue is very wet with continuous rain, the cook has to put some more salt in the pot, adding there some branches of vervain that make anyone feels warm. They have to attempt making it from good sauce and red chili slices. The eater when enjoy noodles with chili not seeing the hot of chili, they feel the warm of the dish, specially the warm of Hue, the ancient royal city of Vietnam.

he he, I know a lots of restaurant in Saigon that are very, very delicious (I had taken many my friends with me and they also agree with that). They are the best but almost them are , not luxury places (because I'm still a student :D).
My favorites are:
- Ốc (đủ loại ốc với các cách chế biến như xào: xào ớt, xào tỏi, xào sa tế cay, xào tiêu, xào bơ...., nướng: nướng mỡ hành, nứơng sa tế, nướng cà ri.... omg, very very delicious :crazy2:) near Bà Chiểu Market. The sauce' very charming and impressive. Prices are very affordable. (6000VNĐ to 12000VNĐ/saucer) (0,35 - 0,8$) -----> ngon bá chấy bọ chét.
- Bún Mắm (a Southern food) : near my home, very delicious, Saigonese from everydrive drive to it just for a bowl of Bún Mắm, 1$/bowl. ---> đệ nhất Sài Gòn.
- Hủ Tíu (especially Hủ Tíu from Chinese): very delicious but very very expensive. I just know a inn near Gò Vấp market, very delicious but affordable 8000VNĐ/a bowl (0.5$).
- Bún Bò Huế: I know a lot of delicious Bún Bò Huế restaurant but to me, the small one in Tân Bình district (Bàu Cát zone) is the best because of it Huế original taste flavor.
- Phở: in Saigon there are alot of delicious places, check them.
- Mì Quảng: in Bàu Cát Zone where many Central Province person living there, delicious and very impressive depends on your flavouring ----> hương vị Huế đặc trưng.
- Bò Lá Lốt: along the Phan Xich Long street.
- Bánh Đúc: Phan Đăng Lưu street.
- Bún riêu: to me, the best place is on Le Truc, a small street in Bình Thạnh. Very very delicious and cheap prices. The maker is a poor old lady. :(
- Bún ốc: in a alley on Kỳ Đồng street, delicious, taste flavor from The North, 8000VNĐ/bowl. In here, you can call Ốc Bươu Hấp Lá Chanh or Ốc Bươu Nhồi Thịt, the sauce's very charming. Chấm với nứơc mắm gừng....
- Phá lấu.
- Lẩu cá kèo: Bà Huyện Thanh Quan or Nguyễn Thông street, very delicious. There are many foods making from that Kèo fish such as: Cá Kèo nướng... ---------> chua chua ngọt ngọt, ăn mãi không ngán.
- Lẩu Thái: everywhere in Saigon --------------------> chua chua cay cay, ngon bà cố.
- Lẩu dê: Sư Vạn Hạnh street.
- Lẩu đuôi bò: Nguyễn Văn Đậu street.
- Quán nhậu dọc theo kênh Nhiêu Lộc Thị Nghè (phía quận Bình Thạnh, giữa cầu Sắt và cầu bông): ----------------> món Bì Cuốn tuyệt dzời.
And many other foods that I can't remember right now. May be later. :D

I'm an expert fried rice chef. Just add some rice, egg, shallot, oyster sauce and chicken stock and woolah you've got yourself a restaurant quality bowl fried rice.

Favourite place to eat in Saigon would be Dình Ký all you can eat (buffet). I love ốc xào dừa and chạo tôm there and made sure I eat more than I paid for it. Over here in Sydney my favourite dishes are bún riêu by my granny and bún ốc at a Vietnamese restaurant.

I like eating at good restaurants though because in the end you get what you pay for.

Has anyone tried Bò Bảy Món too? Extremely good if you are meat lovers ha.

Does anyone know the origin of it? I've heard somewhere it began in the South and spread eventually to the rest of the country.

'Bò bảy món' ....seven-styles beef .....rough translation haha

The mouth-watering menu consists of: bò nhúng dấm,bò lúc lắc,chả đùm,gỏi bò tái chanh,bò nướng lá lốt,bò nướng lủi or cháo bò...would offer enough protein for Arnold's diet :)

From what lonely planet tell me Vietnam have an enormous variety of foods to offer.

One thing I liked very much was ricepaper rolls.. had this in Hanoi

Are you vegetarian? Coz the eggrolls that I usually eat got boiled egg, shrimps/prawns, vermicelli, herbs and vegetables and eaten with chilli sweet black bean sauce.

Yea...what a shame,some ppl still think cats and dogs as specialities...

Recently,some newspaper in Vietnam has made reports about 'thit cho' and how dirty and awful the process is: they collect dead dogs and pump chemicals in,in order to turn them into fresh meats.That's a good sign and I hope dog meats diners will resign soon :)

Tried it once.. it was alright. Hopefully they processed it like any other kind of meat in Vietnam.. I'm assuming that isn't a terribly bad thing :dunno:

Oh don't worry,I tried it too....but much safer if you have it in the North coz dog meats are more abundant :)

Dog meat (not dog's meat haha) is a real food fest in Korea too,and westerners don't want to understand.

But eating a cat?hey that's cannibalism!

I think i know what LacLongQuan did mention,that's po-pia,a shrimp,tapioca,egg,chinese sausage slices and pumpkin rolls ,origins from Chinese immingrants.

hot black bean sause is that kind of like mắm nêm? the brownish sauce i typically eat with gỏi cuốn.

No I eat mam nem with a another type of banh cuon. But egg roll (goi cuon) I usually eat it with tuong ngot va ot.

Côm ,pronounced like com- in coma (different to cơm-usual rice which is pronounced keum) is made from young,green sticky rice that is harvested in blossom period,then roasted and sieved.

The soft,green Côm grains are kept in lotus leaves to add an unique flavor.

I don't think they are much different from chickens and pigs in that regard. It's a social taboo, as 'mans oldest friend' it can be seen as a step closer to cannibalism.

It's not so much cannibalism. Dogs are not in any way related to human. Rather, most people are just not accustomed to the notion of eating a domestic pet.

That's what I meant! Of course it's not cannibalism, but still giving people a hint of that feeling. Many people who has a dog does in a way consider it a family member. Biologically? - no way! Emotionally? - sure! And that's my point ;)

speaking of ngoui hue. that region: hue and da nang have have a lot of really delicious dishes. probably the best cooks/food are from that region.

I think people who don't eat thit cho are missing one of the best food ever. I stopped eat thit cho hai muoi may nam roi, nhung ma toi van nho khau vi tuyet voi cua thit cho. uh nhuum nhuum ha ha ha sip ruou de umm:cheers:

chả thấy món ăn gì cả.Chỉ thấy các bác nói humanity này khác.Thịt chó không phải là Viet speciality.Nam Hàn cũng có mà còn chuyên môn hơn mình nữa.Bên đấy còn có cả dog juice cơ mà.Mãi chỉ thấy bún bò Huế và cốm.Đúng là speciality rồi.THế còn PHỞ đâu rồi.

eventhough i am a Hanoian all of my life, but i never ever taste even a bit of raw blood soup (tiet canh) and dog meat (? thit. cho'). but in my opinion, it s really disgusting, not the way it look, but the way it processed. it s kinda DIRTY and INHUMANITY ...

WOW those food look gastronomically appetizing!!! except for the blood soup, but thats very intriguing, so Vietnamese eat blood raw?! I know Filipinos cook it, so it actually turns black. I love love love those Vietnamese spring rolls, with the mint i think?, vermicelli or what not and prawns..yumm,

you guys should post more pics too, I think unlike Thai, Indian or Malaysian cuisines Vietnamese food are not totally obsessed with hot and spicy ingredients, is that correct????

Blood soup if you do it correctly and with a clean manner that will not cause trouble to your health.That why ours ancestors ate it since Medieval Age:)
Vietnamese cuisine is founded on very vast natural kind of herbs and epices.The things are to harmonise all these stuffs with each others.That really need experiences and subtilities.

Vietnamese desserts

Banh troi is made from sticky rice flour, similar to the Chinese tang yuan.

In the North, the filling is usually a piece of red sugar, or no filling at all

There are many kinds of 'banh'. Every region of Vietnam has its own 'banh' as regions in france have their own wines.

Banh da lon (pig skin cake): No pork in the ingredients. pandan leaves flavoured cake, layered with mung bean paste.

I think U lack some very important, essential Vitamin like Vitamin T, I, E, N, H... because U can not eat Tiet Canh! :lol:

i believe they have "trung cut" instead of 1 big chicken egg, cook 10 "trung cut" and throw in "thit" evein if "trung cut" have virus, the viruses will be so small and less dramatic for the "eater"

THIS Tết 's MENU : :lol
Công thức nấu món đêm 30 tết:
1_Lấy toàn thể 12 tháng trong năm đem rửa sạch mùi cay đắng, ghen tị, thù oán...rồi để cho ráo nước.
2_Tuần tự cắt mỗi tháng ra 28, 30, hay 31 phần.
3_Trộn đều với : - Một chút tin yêu - Một chút kiên nhẫn - Một chút can đảm - Một chút cố gắng - Một chút hy vọng - Một chút trung thành.
4_Ướp thêm gia vị: lạc quan, tự tin và hài hước.
5_Đem ngâm một lát trong dung dịch "Những điều tâm niệm của mình".
6_Vớt ra, xây nhỏ, đổ tất cả vào "Nồi yêu thương" và nấu với lửa "Vui mừng".
7_Đem ra ăn ~~~>ngon không !!!
