I do the same thing when I fly anywhere else.
But you just can't miss the scene of HK from above. It is just a treat for "Welcome Home!" and I give up the convenient. Lucky the new Cathay planes has some 2-seater in economy by the windows these days. I try to get that row usually so I only need ask one person instead of two when I need to go.

I got stuck at the 3-seater windows when I flew back to the US two weeks ago. I tried to go when the other people go, but somehow the two people next to people didn't ever or only use the restroom once for a 15 hours flight. When we landed I was like.... how the heck you only need to use the toilet once in 15 hours... well, I had to go, so I did ask to get out a couple times. But it just wasn't easy when they slept 75% of the time...
