As I have written Parks are public spaces of the people, for the people and by the people. We saw the sewerage project in Baguio during our Lakbay Aral three years ago and we did make a policy resolution to have a similar one in our city. I really do not know what's cooking up on this regard at the City Planning. Re Davao River promanade, its main champion three-term Councilor Sid Ungab is in hiatus, so no one is pushing hard for it. I have been to Clarke Quay and Boat Quay in Singapore and to the riverbanks in Buenos Aires, Amsterdam, Cologne, and Luboc, Bohol. Yeah, tulo laway always sa ingit. Ang baho ng river market outside Bangkok but busloads of tourists visit it everyday. We can do a lot too for our own Davao River. Political will is getting us in the way with the gargantuan tasks of relocating hundreds of families. Even in the SIR side of the river, which is government property, we can not even see our dream of a promenade. Konsehal...do you know any upcoming huge investments in Davao (after ATF)? also, about Davao Riverfront Corporate City, is there a way that the local government can urge the developer (Sta Lucia) to construct or start a huge project (like a mall maybe). Most of the lot buyers that we have in Riverfront Copr City are wait-and-see investors. but I bet if Sta Lucia will initiate such project, other investors will follow. Like in Cainta, few years back, the place is like in the middle of nowhere. However after Sta Lucia constructed its Sta Lucia Grand Mall - other establishments / investors did follow. And that's also the case in Cebu. And its the best preparation for the development of Sta Ana, Magsaysay up to Bucana into a world-class marina. Tho were too young a city, only made history in late 1800s and theres not much heritage site, lets not focus on foreign architecture. Since we have several Malay-designed structures like Damosa, airport, old SSS, Heritage Batist Church in Bajada and most native restaurants, we might as well call it our Davao brand of architecture which is much related to us. First stop, the Davao tourism promo hand outs/bills, brochures, and the like took sooo long to come out. While other tourist dentinations promo paraphernalias were all already very visible in tourism-related places, Davao's was totally out of sight then. That was disheartening as a Davawenyo. Glad that we have solved the problem on this of late though still much has to be done. Second, Davao's effort at thwarting bad perception re: peace and order, is not enough. Try to eavesdrop at people's conversation either in Luzon and Visayas and you'd overhear them say "don't go to Davao...it's not safe". You could sense that most tourists have heard oh how beautiful our province is but we get bashed and nipped right at the bud. One classic case: The day before the 2003 DIA bombing, I was in Mla for a convention with MDs ( I was accompanying my clients) and while checking in at a hotel, a Mindanawon, an executive of the local soft beverage comapany, specifically from CDO-, went up to the front desk to inquire about something. The lady receptionist sort of "broke the ice" with the gentleman and blurted, "oh you're from Cagayan de Oro, di ba magulo do'n? The guy retorted by saying, "Hindi naman, sa Davao lang magulo". I was fuming mad hearing the guy's nasty remark. Avoiding for a possible verbal tussle, I waited until he'd left and made sure Davao's image was restored with the hotel frontliner. Really, crab mentality is very much alive in our country and it's taking its toll on Davao efforts. Another classic case: DTI VS DAVAO. This august institution which foremost task is to promote all TARGET Philippine DESTINATIONS, DAVAO included of course, dropped (wether it was due to lack of interest on DTI's part or plain honest mistake is still debatable) Davao from the well-funded TV ad. Funny because, with Davao's magnitude in many ways, they gave a lame excuse it was a "non-intentional action". Several incidents like this happened before my eyes and I always made it a point I did my own inroads at projecting true image of Davao. Often times I get tangled into heated discussions with the bashers. Just yesterday, at a local fitness gym here in Vancouver, a young Filipino friend told me he and some friends are flying to Mla for a vacation. He said they would also swing by the Visayas for the beaches. Being a true-bloodied Davawenyo I quickly lured him into making sidetrips to Davao where islands to highlands adventures are abundant. Sad to say, the guy was poorly informed. I got the dreaded answer from him. "Magulo doon di ba? Geeez, it really ticked me off. Before his bye bye, I was pretty sure the bad perception was dealt with but not sure though if it was enough for him to consider Davao. A lot of work indeed davawenyos. This is the biggest hurdle for us. PERCEPTION VS. REALITY. Let's do our share to put our city in its place. In this line I'm hatching a plan to right and publish articles replete with pictures at a local Pinoy broadsheets and tabloids here about Davao. This august institution which foremost task is to promote all TARGET Philippine DESTINATIONS, DAVAO included of course, dropped (wether it was due to lack of interest on DTI's part or plain honest mistake is still debatable) Davao from the well-funded TV ad. Funny because, with Davao's magnitude in many ways, they gave a lame excuse it was a "non-intentional action". Several incidents like this happened before my eyes and I always made it a point I did my own inroads at projecting true image of Davao. Often times I get tangled into heated discussions with the bashers. Just yesterday, at a local fitness gym here in Vancouver, a young Filipino friend told me he and some friends are flying to Mla for a vacation. He said they would also swing by the Visayas for the beaches. Being a true-bloodied Davawenyo I quickly lured him into making sidetrips to Davao where islands to highlands adventures are abundant. Sad to say, the guy was poorly informed. I got the dreaded answer from him. "Magulo doon di ba? Geeez, it really ticked me off. Before his bye bye, I was pretty sure the bad perception was dealt with but not sure though if it was enough for him to consider Davao. A lot of work indeed davawenyos. This is the biggest hurdle for us. PERCEPTION VS. REALITY. Let's do our share to put our city in its place. In this line I'm hatching a plan to right and publish articles replete with pictures at a local Pinoy broadsheets and tabloids here about Davao. Cost might be a hindrance but I'll find a way it won't. AMEN! paulkrps March 27th, 2006, 02:49 PM dave, this is where creativity comes in. the españa logo was done in the style of a great spanish artist, miro i think it was. it doesn't represent any of known spanish symbols. but when you look at it you would of spain as a land of fiestas and fun. so my take is, if there will be one, it should be encompassing and not just to represent the eagle or mt apo. you mentioned about singapore, it's not just the merlion they are promoting. there's a logo and a style they always use till now. as any branding of a product, it won't be an easy task. so i hope the city government can and should take a look at it. let's take a corporate look at it and be consistent in promoting davao. i think i mentioned about going beyond the eagles, kadayawans and mt apos (in the long run, it will abused and tiring for the repeat visitors, we will be needing something new i suppose). davao should be able to portray itself as a city worth visiting with year-round activities, and plenty of things to do and see. I remember in 1984 when I went home after 2 years being in the States, Davao seemed so bleak then. There were no cops on the streets, the police precincts were surrounded with sandbags and after almost a dozen years, my Dad was packing heat again. There were hardly any tourists and I remember that going to or even just going through Agdao was a definite no-no. The city walls were literally painted RED with commie slogans and warnings of the revolution. Even before I left for the States (because my parents thought the country presented no future for a recent college grad), I remember a time when our houseboy came running into the house yelling about how he saw some people in a jeep dumping 2 bodies in an abandoned Shell station only a few hundred meters from our gate on J.P. A lot of HS memories for me.....when I was a junior in HS sa Ateneo our Chemistry teacher was a runner up sa Bb. Pilipinas! So, as you can imagine not much chemistry was going on in the classroom but in our heads and pants. Ateneo was an all-boys school, then. We barely learned anything and the school had to come up with remedial classes in our senior year lest we all failed the NCEE and put a blot on AdeD's spotless record. The administration had to "import" an instructor from the college to teach us chem. I also remember, we would boycott just about anything that we thought were unjust edicts or rules from the Jesuits and on a dime start all the yells and cat calls when "chicks" from Womens or ICC are sighted in our halls!! Ang laag namo during that time was the ARCADE (Galaxy Arcade, etc.) Pinaka-kuyaw na na place to hang out was the first Shakeys that opened along Ilustre in the early-to-mid 70s. Gimik namin noon were parties we organized with the girls from Womens or ICC and those were held almost every Saturday. Saturdays nights were always "ti-par" nights! Yoohoo!! Davao in the 70s for teens: Equivalent sa malling - Galaxy Arcade and the different shops along Ilustre Dakong panghitabo - Miss Universe (met Amparo Munoz who eventually won) and Miss Asia (met some of the delegates during their presentation at the Garmon Theater - of all places). Chicks tirada - Womens and ICC. Some guys had this absurd notion that they could get "luckier" if they "courted" girls from UM who may just be desperate enough to have an Atenean "steady". My Dad was a photography buff and we have crates full of pics from the past. One of these days I'll go through them and post some of the good ones. I've seen photos my Dad took during the last major fire Davao suffered in the late 60s. I still can remember when that fire broke out. My parents had friends who lived along Rizal Street close to the corner of Claveria. We then took our cars to their place to help them evacuate their apartment. They spent a few days with us until the downtown area went back to normal. Thankfully, their building was actually spared by the conflagration. There was a time in Davao's past where criminals ruled the roost. I remember in 1984 when I went home after 2 years being in the States, Davao seemed so bleak then. There were no cops on the streets, the police precincts were surrounded with sandbags and after almost a dozen years, my Dad was packing heat again. There were hardly any tourists and I remember that going to or even just going through Agdao was a definite no-no. The city walls were literally painted RED with commie slogans and warnings of the revolution. Even before I left for the States (because my parents thought the country presented no future for a recent college grad), I remember a time when our houseboy came running into the house yelling about how he saw some people in a jeep dumping 2 bodies in an abandoned Shell station only a few hundred meters from our gate on J.P. Laurel. I remember the early 80s and I hope and pray we never go there again. On a funnier note, I remember when I was a HS senior at the Ateneo my friends and I (most of whom were large and tall) carried this minica from where it was parked and moved it to the sidewalk on San Pedro St. To this day, I wonder what the reaction of the owner was when he discovered his minica suddenly illegally parked. JB I left in '84. Agdao was a nasty area then. I used to walk Claveria to Illustre with no probs at all. Of course the militia killings then was rampant. I remember one bus getting washed after one informant was killed in front of the traffic light in Bangkerohan. UGH! I guess Duterte really cleaned this city. Braceros Jr. Published : 2006-03-27 THE CITY government of will borrow P70 million from the Land Bank of the Philippines for the conversion of the idle PTA grounds into an ecology park similar to the Times Square in New York. City Administrator Wendel Avisado said the city government and the bank will start discussing the loan proposal next month or in May. The P70 million will be part of the P500 million loan package, said Avisado during the weekly television program “Gikan sa Masa, Para sa Masa” over ABS-CBN. Avisado said the city government has doubled their efforts for the realization of Mayor Rodrigo Duterte’s plan to finish the setting up of the park this year. The city government will start tree planting activities at the park. Ria, I think the negative perception of Davao within the Philippines has changed substantially. I can see this from the 40 year olds to the 30 year olds and now to very young yuppies and they are much more open minded. Younger people are much more media savvy and are very aware that they are being "played" by the media too. That's not too say that Davao should not make an effort to present a better image, that always helps. I I honestly believe that Tourism could be a huge huge factor in Dvo city. Not neccesarily only traditional stuff but specially for things like retirement and alternative medicine. It's a big city which still has very much resources in Nature. So on one hand you have well equiped hospitals and 10 minutes away are loads of forests, and farms , beaches as far as the eye can see. That's why I get so dissapointed by needless security measures like moving the waiting shed in the airport to the parking lot. As an international traveller I know immediately that 1)something unusual is up 2) these people are not geared up for tourism as they are not presenting their best face forward 3) there is a very parochial mentality in place. I really hope that the economic activity will start in Riverfront Corp City. Angie said requirements were stiff, 5 hectares and fee of P650 T, so no takers from Davao. Currently PEZA has changed its area requirements for an IT Park/ IT Zone / IT Bldg. The new requirements can be found here (http://www.peza.gov.ph/registration_itp.htm) . And yup, buildings are qualified. Our company's main office in Makati (PeopleSupport Center) is a PEZA accredited building. It's just a 5 level building (19,699.76 sqm floor area). Here in Cebu, there are several malls which are accredited with PEZA as well. JY Square mall is 10,341 sq.m and Mango Square Mall is 10,341 sqm. Both are ICT buildings and into retailing at the same time. I guess our local entrepreneurs can take a hint from this. And also news from within our industry : Etelecare and PeopleSupport are currently looking for a site outside Cebu and Luzon. I hope Davao will be the next site. For PeopleSupport, this is very possible considering that our only recruitment office and training center outside Makati and Cebu is in Davao. I guess, we just have to lure them more with incentives and stuffs... The 650K sounds big konsehal. Would that be per month? annually? However, once these infras will be placed in Davao, giant investors will surely come in. Nanning Mayor Lin Guoqiang and Davao Mayor Rodrigo Duterte are set to sign the agreement in a ceremony at the Marco Polo Hotel around noon tomorrow. Nanning City, which is known as the Green City for its lush tropical folliage, was designated as the permanent site of the China-Asean Trade Expo that started two years ago to promote trade and investments between China and the 10-nation Association of Southeast Asian Nations (Asean). Davao, famous for its fruits and the exotic waling-waling orchid, has sister-city pacts with Keelung, Taiwan, Manado and Bitung, Indonesia, and Tacoma, near Seattle, USA. I remember about 3 years ago, there was this young 'Kano or Aussie (long hair pa gani - murag surfer dude) was actually in the thick of the bedlam that usually occurs when arriviing passengers come out of the baggage claim area. He was out there trying his best to get fares. One day as I entered my office, I noticed 2 white dudes obviously waiting for either me or my brother to arrive. Akala ko mga Mormon pero hindi naman sila nakasuot ng necktie. I asked what I could do for them. They proceeded to try to sell me some cleaning aids and chemicals from their home country of Australia! I just had to find out how they ended up doing their stuff in Davao. Apparently these guys were surfers who just love being in Mindanao (Siargao, of course) and when they run low with cash, they sell stuff in Davao offices door-to-door. When it becomes surfing season in Australia, they go back with Philippine-made beach gear (particularly Oxygen brand and Islands brand) and sell it to their friends for a fairly handsome profit. Hamiguitan was nominated as “Hiyas ng Turismo,” an activity designed by the Department of Tourism to discover more the tourism potentials in the country. This was revealed by Lyrna June Palma, the Provincial Tourism Officer in the Province of Davao Oriental, who also said that the nomination was made in the national level. “I’m sure that the people of San Isidro are now ready to boost their local tourism”, Ms. Palma said . Anton Edquilla, the Municipal Tourism Officer of San Isidro, bared that for Region 11, only Mt. Hamiguitan of San Isidro was nominated. And if only for this, the residents of San Isidro are optimistic that the grandeur of Mt. Hamiguitan will prevail from the array of other tourism destinations vying for the prestige. The Municipal Tourism Officer also disclosed that the nomination encouraged the local government of San Isidro to strengthen it’s information campaign particularly about Mt. Hamiguitan. “We will start from the barangays. The Mayor is so enthusiastic to pursue this move now. The nomination inspires us all the more to really invest on our tourism potential” he said. The winning “Hiyas ng Turismo” will be featured in the Discovery Channel. Hamiguitan mightily stands at 5, 355 feet above sea level, and gained fame through its century old Bonsai plants. Bonsai plants also stand from 1 foot to 5 feet, covering almost 1,000 hectares of Kapatagan Valley. San Isidro is the smallest town of Davao Oriental, covering a land area of 20,520 hectares. KH Marketing manager Jake Mercado II said there is an increasing trend of people and groups from the provinces who travel to Metro Manila to process papers and attend conferences or business deals. “At present 36 percent of our clients are provincial-based while 43 percent are overseas Filipino workers. We are looking that the percentage of domestic travelers will increase to 45 percent by end of 2006,” Mercado told the media here. The hotel’s main market are OFWs, which bulk also comes from the provinces. Kabayan hotels were conceived primarily for overseas workers, who were seen as weary travelers even before departing the country. I called up to book a reservation before I left for Bangkok. One week ko didto sa Thailand and before flying back, I called up to remind them nga magpasundo ko sa airport kay past 8 p.m. akong arrival. First flight ko pauli sa Davao the following morning. This precisely was the reason I arranged to stay at their Pasay Rotunda branch kay duol kaayo sa airport, compare to let us say my usual place at Quezon City, Fersal Inn, or at Tower Inn sa old Pasay Road, Makati. I for one can lure my friends here (diff nationalities) to spend the winter season time there in Davao. I have 2 now who are raring to tag along but it's just not a good time for me to go yet. I also do promote real estate ( not sell) there to those paezanos here who are retiring and awash with moolah. In this regard, I wish there were decent web sites dedicated on this for me (or other volunteers) to show to our prospects. I can see that there are several high end and middle class dev't going on in Davao now e.g. Fuente de Villa Abrille, Villa de Mercedes which are the new ones and more that I can't recal this time, aside from the more established ones. Our Davao gov't web/s can be a good jump off point, akin to Cebu's but I don't know what's has come over our W/S. It's suppsed to be a new one but most links are non-functional. A forumer in the Davao W/S who hails from the US even sarcastically suggested we let their Grade One pupils to do fix this for us, maybe out of desperation. I have been to most of the touristy areas here in Vancouver and been observing how they do their stuff. I'm really amazed coz' millions of tourists flock to this city (the world's perennial most livable city if not second or third at times) be it from the neighboring yankees, Chinese, koreans, Japanese, Europeans and God knows what's more. I believe topmost reason would be that they put their hand where their mouth is. The city, is very visitor friendly and this they do by way of putting in place facilities suited even to people with disablities. The new mayor himself is a quadriplegic (dunno if I spelled this correctly) and he can negotiate any avenue in this city in his motorized scooter without a problem. I know we're like reaching for the stars if we benchmark what they do but somehow we can inch our way into this direction. Another thing I notice here is Tourism Malaysia. I'm not sure if we can do the same but they (Tourism Malaysia) has its satellite office here at downtown Vanco sales pitching to Vancouverites. This for sure translates to tourism boom which is so evident in Malaysia right now. On our own little way and if you allow me to suggest, (though I still have to verify this with local ordinances here) we start by slipping Davao Tourism broshures into the community papers here. This is same idea of the mailed ad commonly practiced here in Canada ( Paul Corpus can attest to this). This can go a long way, even if we start on baby steps. If doable here (legal) then maybe our beloved Davao can produce a nice brochure for this purpose and I will start (with help from some Davawenyos here) disseminate them. Unsay tan-aw nimo konsehal? Makes me more proud being one. IN its infant year in the music industry, Davao-based hip-hop duo Thavawenyoz got a double nomination in Awit, Philippines’ version of Grammy Awards. The pair of Roseller “Mista Silenza” Lagnayo Jr. and Boone Dennis “B.O.N.” Batuto — the guys who were given the break by Davao’s 92.3 WILD-FM — were nominated for Best Regional Recording and Best Novelty Act, both for the hit, Hubag. Mista Silenza, a former tenor of the University of Mindanao Choir, said he was very excited to be included in this year’s Awit. Awit, organized by the Philippine Association of the Record Industry (PARI), is now in its 19th year. Awarding is set this May. This is the group’s first nomination in the national level. In Huni sa Dabaw 2005, the group won the first place in the music video segment and the second place in the music composition with their R&B track Mao Kaha Kini ang Gugma. Last year, the group also won a runner-up spot in the NCCC songwriting contest. Mista Silenza, of Sandawa S.I.R Matina, and Toril boy B.O.N. have been touring the country — particularly in Visayan-speaking regions — to promote their debut album under Alpha Records. Thavawenyoz came out in the Davao music scene in 2004 courtesy of 92.3 WILF-FM’s Rap Idol project. The group waxed their album last year and immediately got a huge following in Mindanao and Visayas regions. Their second song, Roger (Ger-Ger), is also getting a good radio play. In the Best Regional Act, the group is facing a strong competition from artists coming from Cebu and Iloilo, including Max Surban for Puerting Hubaga. In the Best Novelty Act, the group is pittied against Parokya ni Edgar (Mang Jose), Aryana (Bop Bop), Boy2 Quizon (Ragarabo) and another Davaoeño guy Gary Granada (Babadap-Badap). The veteran Manila-based Gary Granada got a total of three nominations including Best World/Alternative Music and Best Jazz Recording. Hale, led by Tagum boy Champ Lui-Pio, got seven nominations including Album of the Year (for Hale) and Best Song of the Year (for The Day You Said Goodnight). Aside from two nominations in the Best Ballad Award (The Day You Said Goodnight and Kung Wala Ka), the group was also nominated for Best Performance By A New Group (for The Day You Said Goodnight), Album Packaging Excellence Award and Best Engineered Recording. Brownman Revival, the reggae group with at least two members coming from Davao, will be facing Hale in the Best Performance By A New Group for their Eraserheads revival Maling Akala and for Best Engineered Recording. Brownman Revival is also up for Best World/Alternative Music Awards facing Gary Granada. South Border, headed by Davao boy Jay Durias, got four nominations, including two for Best R & B for the songs Sweet and Asa. They are also up for Best Performance by a Group Recording Artists (for Sweet) and Best Song written for Movie/TV/Stage Play for the Sugo theme, Asa. MYMP, voiced by Davaoeña Juris Fernandez, is up for Best Selling Album of the Year for the double-CD Versions & Beyond which contains the hits Tell Me Where It Hurts, Get Me, Especially For You, and Talaga Naman. Tagum boy Thor, who won the best movie theme in last December’s Metro Manila Film Festival-Philippines, is also up for Best Performance by a Duet for The Closer I Get To You, his collaboration with Nina. Another Davaoeña Jinky Vidal, of Freestyle fame, is also up for two awards for her solo track Work It All Nite which was nominated for Best Dance and Best R&B. I know we're like reaching for the stars if we benchmark what they do but somehow we can inch our way into this direction. Another thing I notice here is Tourism Malaysia. I'm not sure if we can do the same but they (Tourism Malaysia) has its satellite office here at downtown Vanco sales pitching to Vancouverites. This for sure translates to tourism boom which is so evident in Malaysia right now. On our own little way and if you allow me to suggest, (though I still have to verify this with local ordinances here) we start by slipping Davao Tourism broshures into the community papers here. This is same idea of the mailed ad commonly practiced here in Canada ( Paul Corpus can attest to this). This g way, even if we start on baby steps. Davao, Nanning step up relations By Moses Billacura DAVAO CITY—City residents and officials are anticipating the signing of a sister-city agreement on March 30 with Nanning, the capital of Guanxi province in China. Nanning Mayor Lin Guoqiang and Davao Mayor Rodrigo Duterte are set to sign the agreement in a ceremony at the Marco Polo Hotel around noon tomorrow. Nanning City, which is known as the Green City for its lush tropical folliage, was designated as the permanent site of the China-Asean Trade Expo that started two years ago to promote trade and investments between China and the 10-nation Association of Southeast Asian Nations (Asean). Davao, famous for its fruits and the exotic waling-waling orchid, has sister-city pacts with Keelung, Taiwan, Manado and Bitung, Indonesia, and Tacoma, near Seattle, USA. While Nanning has sister links with Akita, Japan, Somogy, Hungary, Christchurch, New Zealand, and Oklahoma, USA. Nanning is located in the southern part of Guanxi Province, in the southernmost region of China, which borders Asean country Vietnam. Known as the “South Gate of China,” Nanning’s 20-year development plan, coinciding with the implementation of China-Asean Free Trade Agreement, seeks to develop the Chinese city into one similar to Davao. It boasts of what they claim to be the largest herbal gardens in the world, a 20-hectare landscape featuring over 1,000 plants, herbs and medicinal trees. “We realized then the significance of the Davao-Nanning ties. Davao is the southern gateway of the Philippines, and de facto seat of the BIMP-EAGA, while China is developing Nanning as its southern link to the Asean,” said Davao legislator Peter Tiu Laviña. Laviña cited similarities in the rich agricultural and natural resources of the two cities and the vision of becoming key tourism and convention destinations in their respective regions. Nanning now boasts of two air links with the Asean with direct flights to Hanoi and Bangkok. It has also flights to Hong Kong in addition to many destinations in China. Davao, on the other hand, has links to Singapore, Manado, and Palau, and a number of cities in the country, he added. “China plans to use Nanning as it inroads into the Asean. Davao can certainly use Nanning as its door to China. I gave an update on the proposed amendments to the Davao City Investment Incentive Code, where tourism will remain one of our key preferred investment area. I had to move to Manila to be part of the training dept (Philcoa in QC) but only so fleetingly kay nibalhin ko ug pharma. This was in late '91 if my mem serves me right. I had the opportunity to feast on Chef Paddy Lascano's delectable cuisine creation before in Davao. The guy rocks! A Davaoeño Feast BY JEREMY C. MALCAMPO Though most Pinoy gourmands criticize Davao cuisine as something that always goes with liquor, or something you eat to help kill time because the natives prefer their fish and meat sinugba (charcoal grilled), boiled or roasted with ginger and tanglad (lemon grass), I believe otherwise. I do believe—behind all the Sinuglaw fad which roots from classical to contemporary Filipiniaña culinary history—that Davao food is so diverse and good, it takes a lifetime to rationalize and answer the question why they love Durian, and why Davao women are extremely special. For one, the Davao people’s treatment of food, like the fresh bounties of the sea (tanigue, kitong, tuna), is geared towards preserving natural flavors. Whether we like it or not, a hearty tanigue meat, tuna panga (jaw) or tuna belly are at their best when treated with just the most basic culinary requirement (the most important element in cooking) which is plain heat. 1. Guprito nga Tilapia with Mago Ginger Sauce 2. Kinilaw na Barilis 3. Bola Bola Puso ng Saging Perhaps, all types of meat really reincarnate as food for humanity when grilled. They are four times more flavorful and aromatic with all essential oils enhanced. When grilled atop charcoal, meat becomes tastier as salinity (natural chloric acids) doubles, and high and low-lypo fatty acids fuse together, making it good enough to please both the palate and our olfactory sense. Of course, there’s the aged Sukang Tuba, and Sasa (sap) that are romantically fermented through years and years of storage in Tapayan clay jars, and big glassware with garlic, onions, pepper, pork fat oil, and heavily infused with chili peppers. My last Davao food adventure was well over two years ago, and I had forgotten how good Davao food can be. It was precisely to reacquaint myself with the goodness of Davao cuisine that just recently I found myself, together with a few colleagues and friends, at the Hotel Intercon in Makati City giving support to Chef Manuel "Paddy" Lascano’s Davao Food Festival which highlighted a superior buffet line of modern and authentic Davao cuisine. When I arrived at the Jeepney Restaurant of the Hotel Intercon, I found my mentor, Chef Gene Gonzalez, giving detailed instructions to a chef at the rotisserie station about properly grilling a tuna panga to his preference; while asking another member of the staff for a minute serving of Oding or Udong (a Filipinized dish of the Japanese Udon). In the next table, my mentor’s sous chef, together with Café Breizh owner Chef Paul Tee of Davao, was signaling me for an early, afternoon drink. After Chef Paddy was formally introduced to me, I went to check the Oding or Udong station. I was asked by one of the interns who participated in the festival if I wanted to try a sample serving, and I replied yes. She sautéed some chopped garlic and onions in oil and put in about two tablespoons of fresh pork liver slices until they changed in color. She added some herbs and put in some flour-and-egg-based noodles with some kinayod coconut meat. The coconut meat extended its internal oils and turned the concoction into a creamy dish, timely perfect for seasoning with salt and pepper. While she plated it, I proceeded to the grill station. I asked for a serving of marinated, fresh liempo slices and a single order of tuna panga for grilling. When I tried everything with steamed rice and a dip made out of suka at sili, the food was so good I was convinced to try out everything that the food festival had to offer. While Chef Paddy was giving some lectures on Davao food history to the rest of the guests at our table, I signaled to my mentor’s sous chef to join me in choosing some more examples of Davao food to try out. As we stepped into the casserole area, and the fry station, he recommended the Guprito nga Tilapia with Mango Ginger Sauce, which was fried to a superb crispiness. The mango ginger sauce was bliss; it was a basic amalgamation of aroma and contrasting tastes. It was really very good and as far as I know Chef Paddy is renowned for this amazing Davao dip. I then got some pieces of fried Puso ng Saging Bola Bola, which had some reddish outer-burn, and tasted meaty in umami. I enjoyed them with the mango ginger dip, as well. After lunch, my stomach still had some room for Sea Urchin Roe Salad, fried garlic stewed pork belly, Manuk Kiarehan, and some Cassava Dumplings with Durian Cream for dessert. Needless to say, I left the food festival well-sated and intending to come back.
