MALCAMPO Though most Pinoy gourmands criticize Davao cuisine as something that always goes with liquor, or something you eat to help kill time because the natives prefer their fish and meat sinugba (charcoal grilled), boiled or roasted with ginger and tanglad (lemon grass), I believe otherwise. I do believe—behind all the Sinuglaw fad which roots from classical to contemporary Filipiniaña culinary history—that Davao food is so diverse and good, it takes a lifetime to rationalize and answer the question why they love Durian, and why Davao women are extremely special. For one, the Davao people’s treatment of food, like the fresh bounties of the sea (tanigue, kitong, tuna), is geared towards preserving natural flavors. They are four times more flavorful and aromatic with all essential oils enhanced. When grilled atop charcoal, meat becomes tastier as salinity (natural chloric acids) doubles, and high and low-lypo fatty acids fuse together, making it good enough to please both the palate and our olfactory sense. Of course, there’s the aged Sukang Tuba, and Sasa (sap) that are romantically fermented through years and years of storage in Tapayan clay jars, and big glassware with garlic, onions, pepper, pork fat oil, and heavily infused with chili peppers. My last Davao food adventure was well over two years ago, and I had forgotten how good Davao food can be. It was precisely to reacquaint myself with the goodness of Davao cuisine that just recently I found myself, together with a few colleagues and friends, at the Hotel Intercon in Makati City giving support to Chef Manuel "Paddy" Lascano’s Davao Food Festival which highlighted a superior buffet line of modern and authentic Davao cuisine. When I arrived at the Jeepney Restaurant of the Hotel Intercon, I found my mentor, Chef Gene Gonzalez, giving detailed instructions to a chef at the rotisserie station about properly grilling a tuna panga to his preference; while asking another member of the staff for a minute serving of Oding or Udong (a Filipinized dish of the Japanese Udon). In the next table, my mentor’s sous chef, together with Café Breizh owner Chef Paul Tee of Davao, was signaling me for an early, afternoon drink. After Chef Paddy was formally introduced to me, I went to check the Oding or Udong station. I was asked by one of the interns who participated in the festival if I wanted to try a sample serving, and I replied yes. She sautéed some chopped garlic and onions in oil and put in about two tablespoons of fresh pork liver slices until they changed in color. She added some herbs and put in some flour-and-egg-based noodles with some kinayod coconut meat. The coconut meat extended its internal oils and turned the concoction into a creamy dish, timely perfect for seasoning with salt and pepper. While she plated it, I proceeded to the grill station. I asked for a serving of marinated, fresh liempo slices and a single order of tuna panga for grilling. When I tried everything with steamed rice and a dip made out of suka at sili, the food was so good I was convinced to try out everything that the food festival had to offer. While Chef Paddy was giving some lectures on Davao food history to the rest of the guests at our table, I signaled to my mentor’s sous chef to join me in choosing some more examples of Davao food to try out. As we stepped into the casserole area, and the fry station, he recommended the Guprito nga Tilapia with Mango Ginger Sauce, which was fried to a superb crispiness. The mango ginger sauce was bliss; it was a basic amalgamation of aroma and contrasting tastes. It was really very good and as far as I know Chef Paddy is renowned for this amazing Davao dip. I then got some pieces of fried Puso ng Saging Bola Bola, which had some reddish outer-burn, and tasted meaty in umami. I enjoyed them with the mango ginger dip, as well. After lunch, my stomach still had some room for Sea Urchin Roe Salad, fried garlic stewed pork belly, Manuk Kiarehan, and some Cassava Dumplings with Durian Cream for dessert. Needless to say, I left the food festival well-sated and intending to come back. Incidentally, the Davao Food Festival at the Hotel Intercon is until March 31. Diving in Davao is more meaningful around these Islands in the middle of the Davao Gulf area. Angels Cove Diving at the southwest side of Talicud, divers would find Angels Cove. This is a close neighbor of Mansud Wall, another Talicud Island dive site wonder. Due to the gentle water current prevailing in the area, Angels Cove provides an ideal experience for novices when diving in Davao. It is categorized as an easy dive, with visibility within a depth of 20 meters where soft and hard corals abound. For a deeper depth for experienced divers, going down 40 to 50 meters can reveal huge jack fish, tunas, and mackerels. Mansud Wall Also southwest of Talicud, and mentioned here as a close neighbor of Angels Cove, is Mansud Wall. The wall has a rocky surface with rich coral formations. About 60 feet down is the sandy sea floor, but divers may stay up to a depth of 30 feet to enjoy tunicates hanging on the wall, parrot fish of various sizes, and tropical fish. After going down about 20 to 30 feet, divers are treated to wonderful sights of nudi and pluero branches, big sponges and sponge crabs, and scores of pipe, scorpion, trumpet, lion, and cardinal fish. Mushroom Rock When diving in Davao and first-timers hear about the Mushroom Rock, they often think of a coral bed where mushrooms pop up mysteriously. Or perhaps, a collection of strange mushroom-shaped corals. The name is actually derived from the rock bottom of the site which is shaped like a mushroom—a dome on top with a narrow trunk underneath. Divers think the narrowing of the foundation is due to the erosion caused by the strong under water current. Hills of reef can also be seen where numerous reef fish dwell. At times there are also dolphins roaming around. Pinnacle Point Pinnacle Point southeast of Big Ligid, an islet near Samal, is actually an imposing rock formation pointed at the top. This Pinnacle has fascinating pink corals and is surrounded by two other lower pinnacles. The three rock formations stand at 10 to 20 meters high. Diving in Davao at this site feels like climbing up a mountain. The Pinnacle is surrounded by tubastrea, anthias, black corals, gorgonians, and scores of other deep sea invertebrates. Angel fish, lion fish, octopus, eels, and scorpion fish also abound in the area. Ligid Caves For a really memorable diving in Davao, the Ligid Caves are a must-see. When going down deeper than 25 meters two caves will appear leading to a corridor where resident reef fish hide in sponge crabs and black and soft corals. The mall, which does not really look like your traditional mall but merely a place where stalls are located, is already operational but as of last week only a few stalls have opened to the public. City councilor Susabel Reta has pushed for the naming of this district as Chinatown considering that most of the stores here are owned by the Chinese. Lately though, the street has been invaded by Korean businessmen so the name might be a misnomer. Unlike other six entries which got multiple showing, the controversial film is said to have a very limited release as the closing feature on Dec. 9 at IndieSine, Robinsons Galleria. “We don’t want to show the cut version as much as possible,” said Davaoeno director Sherad Anthony Sanchez who also wrote the film which won the Best Picture, Best Screenplay, and Best Cinematography in the Cinema One Filmfest. “That’s why, to be safe, we will run the movie only one.” Sherad told TIMES that he understood the concern of the Cinema One festival organizers in having a limited run for Imburnal which was shot in Matina Aplaya with an all-Davao cast. Cinema One producers were forced to delete some portions to counter the X-rating given by the Movie and Television Regulatory Board (MTRCB). MTRCB initially banned the movie from public showing due to nudity and some sensitive issues. But after the deletion of some objected scenes, it was given an R18 rating which only viewers aged 18 can watch the movie. “We are still uncertain about the rating,” Sherad said. “We share the same sentiment but in time we will try to push it (showing of the uncut movie).” Imburnal also won the grand Lino Brocka Grand Prize Digital Lokal in the 10th Cinemanila International Film Festival last month. Its being sold for just P55.00 ($1=P49) and comes in the store’s colors, which is predominantly blue with a dash of yellow. Reusable shopping bags can be used by customers to carry their groceries in instead of the more common method of a plastic bag. The other great thing about this bag is that you get to acquire shoppers points whenever you use the bag for your groceries. Acac, Orlando Dinoy Mindanao Bureau First Posted 21:11:00 11/29/2008 DAVAO CITY, Philippines -- For the past eight years, Outland Adventure or Project Challenge Foundation in Davao’s Talomo District has been synonymous with ropes courses and adventure team-building programs. But since October, it also known as operator of Asia's longest and fastest zip-line. "The Accelerator," which is at 200 feet high, runs one kilometer in length and sends one flying at a speed of 100 kilometers per hour. Prior to the construction of the zip-line here, the one operated by Samui Fun Park in Koh Samui in Thailand was Asia's longest at 730 meters. Matthew McNeil, Project Challenge founder, said the zip-line is Outland Adventure's "stand alone entity" and was built over two years. He said despite its length, it remains safe because of a redundant safety system that requires riders to wear two harnesses. The cables and the pulleys on both the two-line traverse and the zip-line were also doubled in case one snapped. McNeil said they had to use a three-break system (primary, secondary, and fail state) at the end of the zip-line to further reduce risk. "The cables and the other contraptions are Petzl, which are made in France and can carry multiple weights in tons," he said. In addition, they have well-trained personnel from the United States to respond to any eventualities. "It's great for Davao. We are not competing with Sabros (a zip-line facility in Davao Del Sur) and Eden (in Toril district here) with its skyride but it is an opportunity for Davao to emerge as an adventure-based destination," McNeil said. For those who want to try the zip-line, McNeil said they have to undergo a 15-minute orientation first. Then they have to walk to a platform situated on top of the highest point of the Outland area, which is overlooking the city, where they would be made to wear harnesses. The trip -- or zip -- to the other end of the zip-line takes only a few seconds but the feeling is a mixture of anxiety and happiness, according to those who have tried it. But aside from providing a form of entertainment, McNeil said the Outland Adventure concept was born out of concern for the growing number of youth in the city, who have become idle or are engaged in illegal activities. "I was walking along the Tancontian Street where the old clinic (Mercy Maternity) was and I saw some youths who did not do anything. And I read statistics somewhere that 60 percent of the country's population are below age of 25, so it was something to be concerned about," he said. He said he immediately thought of marrying the ropes course program he underwent in the States 20 years ago to a values-formation activity and came out with the Outland Adventure concept. Attempts to fully establish it failed during the first time until he met the late Al Aboitiz of the prominent Aboitiz clan. During their meeting, McNeil said Aboitiz was really enthusiastic when he told him about the ropes course program he was planning. Aboitiz agreed that the Davao Light and Power Co., which his family owns, would finance the whole project while businessman Hans Gaisano provided the 17-hectare property in the village of Bugac. Since then, the electricity distribution company has already sponsored training for topnotch high school students in the facility. "In the past four years, we accommodated more than 80 public high schools," McNeil said. Duterte said he noticed the error when he browsed through some documents from the Commission on Elections (Comelec) recently. Maryline Lim, general manager of Samantha Homes said there is a large housing need in Davao City saying that the company is targeting the medium level market. She said the newest Samantha Homes project is at Bago Gallera where they enrolled as Pag-IBIG City of over 800 units. The site she said will include playground and multi-purpose hall that will later be turned over to the homeowners association. She said their company caters to employees, the overseas Filipino workers and the self-employed. The subdivision features include water facility sourced out from the Davao City Water District, an overhead transmission lines provided by the Davao Light and Power Company, underground drainage and concrete roads with curbs and gutter. But Lim said they don't just build houses because they see to it that they would also introduce some new designs in their projects. In the pipeline next year she said is the 400 units project in Panabo City. All in all she said to include the new projects, Samantha Homes house and lot units accounted to 3,120. Their other projects are found in Matina Aplaya, Barangay Lizada in Toril, Paligue in Padada, Davao del Sur, Catalunan Pequeno, Catalunan Grande. Lim said they are careful with the supervision of the project because of the "buy back" policy of financial institutions. She said when they sourced out development loan from the government financial institutions, like the Pag-IBIG Fund for that matter they pay particular attention to project development including the first years of repayments of homebuyers. She said they do not want also to be remiss of their responsibilities saying that they need to comply what has agreed between them and Pag-IBIG Fund. "What Pag-IBIG Fund had invested are the funds of the members and we make good of our investment because these are money of the Fund members," she said. Lim however stressed that they reach out to their homebuyers in order for them to make good of their repayment record. She said with the reduced interest rates extended by the Pag-IBIG Fund the rebate extended to homebuyers who are "good payors," now owning a house is very affordable. Meanwhile Davao City Investment and Promotion Center head Engr. Roberto Teo expressed good prospects for real estate in 2009. The fund was launched Friday to fully maximize the facilities of the Mindanao Heart Center which can accommodate heart procedures like cardiovascular surgery, laboratory services, intensive care and many more. DOH assistant secretary Dr. Jean Rosell-Ubial said in a press conference that the fund will enable more poor patients to make use of the resources in the heart center. "DOH spent P400 million for this facility and it will just be put to waste if only very few can avail of the services offered," she said. The fund will allow Filipino heart patients to have access to world-class heart procedures as the center could urge professionals, businessmen and other economically-privileged citizens to share their time and resources in promoting cardiac health. About 100 individuals are targeted to donate an initial amount of P10,000 each to reach the Securities and Exchange Commission minimum requirement of P1 million to put up a foundation. Ubial claimed that the DOH is very positive that the target 100 individuals can be achieved before the year ends as doctors and other individuals in the society have started giving their pledged when the launching was held. The management of the MHC bared that the foundation could be a very big help especially that barely 20 percent of the patients in the center are considered indigents, the 80 percent are paying. They have indentified a 1,000+ sq.m. piece of land just near the existing hospital building where they will build their expansion building. Though there was no blueprint yet presented during the meeting, they agree that they have no choice but to build a highrise building to accommodate the carpark and additional clinics. They will convene again on January 31, 2009 to formally approve the final design of the building. So guys are there new additional roads projects that can transverse and crisscross the West, East, North and South Ends of this huge metropolitan ( covering all political districts of this city)? AFAIK the local govt manage the city by appointing deputy mayors for tribes and the 3 districts. if you mean develop as in expansion sa urban sprawl... it is part of the natural reserves of Davao.. malay nato mahimo pang Megapolis ang Davao in 10 to 20 years from now and still Davao is not yet full since mayroon pang reserves.
