SANDY ROMULO-SQUILLANTINI pays homage to her grandfather, the foremost Filipino diplomat, journalist and soldier, Carlos P. Romulo, with the lovely new restaurant Romulo Café. Growing up with a grandfather who was bigger than life left many impressions on her, and from this she has found a most delicious way to make a new generation learn about him while encouraging nationalistic pride.

Romulo Café, which occupies a grassy corner lot, brings urban-chic designer décor and a Filipino-Spanish menu to the tree-lined streets of an older residential area in Quezon City. Designed by Ivi Almario, the café has Asian Modern lines: Angular spaces, glass walls and open areas with a South Beach Miami art deco era mood to it. Predominantly white with black and white chessboard-tiled floors, it comes alive with printed fabric covered walls in cool lime green.

The various dining spaces are decorated with the great diplomat’s photographs arranged according to highlights in his illustrious career, from his years as a young soldier to his years as ambassador, and eventually as President of the United Nations General Assembly.

There are three private rooms on the second floor named Kasiyahan (after Carlos P. Romulo’s house), Kaligayahan (after the Baguio vacation house) and Kapayapaan (highlighting his years as President of the University of the Philippines). All the rooms are decorated in different pastel colors and exude refinement and simplicity.

The glass-enclosed outdoor terrace is decorated with photographs of Carlos P. Romulo with the different Philippine presidents under whom he served as cabinet member.

Perfect perch

The area fronting the street creates a perfect perch for those who like to stay outdoors and chat over drinks.

On the wall of the restaurant leading to the upstairs dining area is Romulo’s oratorical piece, “I am a Filipino.”

It’s a new and casual way of incorporating history into a modern setting while giving the place character and mood.

Geared to casual eating, relaxed socializing and comfort food dining, Romulo’s menu has a certain familiarity that appeals to all age groups. “The menu includes a lot of family recipes like my Lola Virginia’s Chicken Relleno, still made the old-fashioned way by the family cook. The Boneless Crispy Pata Binagoongan is already a bestseller, as well as the Bagoong Rice and our Flying Tilapia. We get families especially on Sundays who come for a big Sunday lunch. The place is friendly for a diverse mix of people who like to have their Filipino comfort food in a bright, airy and chic setting,” says Sandy.

Romulo Café, with its laidback, urban flair is a breath of fresh air in a part of town that’s normally associated with chain restaurants, fastfood outlets, beer joints, pubs and institutional steak houses. The corner lot was a great find in an area named after the Boy Scouts of the Philippines, an organization co-founded by Carlos P. Romulo.

Clearly pride of place and ownership is apparent in Romulo Café’s surroundings. While it counts families, TV and show biz personalities (because of its proximity to two giant television network stations), among its regulars, it should draw even the most dedicated Makati urbanite to this part of Quezon City.

The General must be very pleased.

There are some really nice pictures in here.
And it makes me think think of ways to making the city streets more beautiful. Wouldn't it be nicer if we just took down all of the posters? I think they've turned more into an eyesore than anything else. I think it would make the city look a lot cleaner. It's not a big money spending project either. It's actually rather simple. I think there are better ways for companies to make more money - such as allocating that money into making better TVC's (commercials). There's already enough of a distraction going above head level with all of the power cables. Eventually in the future when the Philippines becomes a lot more well off, we can replace some of those former posters with screens.

The flavors of Basque cuisine (http://www.mb.com.ph/articles/241817/the-flavors-basque-cuisine)

The unique talent of renowned Spanish architect Antonio Gaudi breathed life to modern “Art Noveau” architectural style – which to some extent mirrored what Spanish cultural lifestyle really represented. And such influence extended far beyond just “structural designs;” in fact, it was carried even in today’s culinary landscapes.

One such restaurant that has infused the culture of Spain from its culinary mastery to its dynamic interiors in all its authenticity is the Gaudi Restaurant, a fine dining resto named after the famous architect.

Located at the modern Serendra complex, Gaudi restaurant draws its culinary influence from San Sebastian, Spain, where Basque cuisines take root. The authenticity of the ingredients, and the savory flavors of Gaudi’s dishes coming from both Mediterranean and Inner Spain, speak much of the “Basque” culture for which this part of Spain is known for.

Gaudi Restaurant head chef and owner Chef Alexandra G. Cacho has perfected what Filipinos look for in Spanish dishes, under the tutelage of Chef Ignacio Muguruza, a known chef in San Sebastian.

The diversity of Basque cuisine is evident in Gaudi’s starters. The Surtido de 8 Pintxos Calientes, a platter of eight different hot tapas, consisting of an assortment of meat, shrimp, cheese and mushrooms, ably excites the taste buds with its myriad of strong flavors, from salty to spicy.

Gaudi Restaurant also offers Surtido de 8 Pintxos Frios, a sampler of eight different cold tapas, quite contrasting to the other appetizer but as equally delighting. This platter on the other hand, is made up of an array of seafood, and cocktails of onions, olives, and pimiento, accented by hints of olive oil.

Aside from tapas, Gaudi also has appetizers for both meat lovers and vegetarians. The Plato de Ibericos, a dish of Serrano ham, salami, and chorizo coupled with a serving of Manchego cheese is a must-try. The gentle texture of the deli matches well with the rich flavor of the Manchego cheese, owed to the careful preparation of the dish.

The Gaudi Salad, on the other hand, comes as a feast to the eyes with its mix of tossed fresh greens, certainly a great choice for those who prefer light meals.

Out of the long list of available Spanish cuisines on their menu, there are three that stand out as must-trys: The Lomo de Mero Dos Salsa, Chuleton Villagodio, and Paella de Cocid.

Lomo de Mero Dos Salsas, a pan- fried sea bass with two sauces poured on each side, is a palatable sight behold. The dish is dressed with puréed piquillo pepper on one side and a healthy amount of squid ink sauce is drizzled on the other.

With its gorgeous presentation, the dish is a veritable meal in itself already. Having two different sauces, the dish works well as a sort of ‘yin and yang.’ The piquillo pepper sauce creates a strong impression on the palate, while the squid ink sauce enhances the taste buds with its rich flavor. Both tastes complemented each other well along with the soft texture of the sea bass.

Chuleton Villagodio, a US Certified Angus Beef Brand Prime Rib steak served with pimiento and potatoes, offers an option for diners to cook the meat according to their preference on a heated plate, with only salt to add to its flavor.

The aroma of the meat erupts as soon as it touches the salt-lined hot plate. Regardless of whether it’s medium rare or well done, the meat stays tender because of its excellent quality. Chuleton is served best along with pimiento, which the meat absorbs like a sponge and integrates well for better taste.

Paella de Cocido, made up of a combination of different cocido meat within the paella, is a perfect compliment for fish and meat dishes but can easily stand alone because of the different ingredients used.

If diners can’t decide what to get for a dessert that would round up the course meal, Gaudi offers as a Detodunpoco, which literally means “a little bit of everything.” The platter includes favorite sweets such as proffetti rolls, rice pudding, crème brulee, chocolate mousse, and others. These endearing confections are like a little Spanish fiesta delights that would put a smile on anyone who loves sweets.

For those who enjoy food and the intricacies involved in it, dining is more than just a necessity. It is about every fun memory usually tied with the meals they have along with it. It pays to experience Spain in a different way by getting a “little slice of Spanish heaven” in the heart of Manila.

Homegrown Sans Rival Chosen ‘Top 24 Desserts’

Dumaguete’s very own Sans Rival Cakes and Pastries has been chosen as one of the 24 top dessert makers in the Philippines for its meringue torte with buttercream filling, popularly known Sans Rival. The distinction was bestowed on Sans Rival last week at the Atrium of the SM Mall of Asia by the Philippine Daily Inquirer, which chose 24 top desserts in the Philippines to celebrate its 24th anniversary.

Sans Rival manager Chining Sabarbarria-Bustamante shared center stage with 23 other dessert makers from all over the Philippines, along with executives from the Philippine Daily Inquirer and SM, led by taipan Henry Sy. The awards night, which cast the spotlight on the crème de la crème of the pastry industry, started with a special audio-video presentation of the 24 desserts, followed by a mini-fashion show of models parading the cakes on white platters.

The dessert makers were awarded plaques of appreciation by executives from the Philippine Daily Inquirer and SM MOA. Including Rene Reinoso, Inquirer senior vice president for sales and marketing; Garry Libby, Inquirer VP for info-tech and pre-press; Jocel Adorable, Inquirer assistant VP for marketing; Jesse Rebustillo, Inquirer assistant VP for classified ads; Steven Tan, SM MOA assistant VP; Cecile Ang, SM MOA marketing head; Nana Ozaeta, F&B World editor in chief; and PDI’s Vangie Baga-Reyes.

The event was sponsored by C2 Classic Cuisine, Carte d’Or, Collezione, Samsung, Gomeco, SM Hypermart, Unilever Food Solutions, PAP, QTV’s Secret of the Master and Vittoria Coffee.

MANILA, Philippines - Kira Plastinina, the world's youngest fashion designer, is set to arrive in Manila on Wednesday.

The 15-year-old designer will officially launch her fashion brand in the Philippines on April 14.

Plastinina, who has more than 80 stores in Russia, Ukraine and Kazakhstan, is widely known for her "bright and trendy" all-occasion garments.

To showcase her latest collection, Plastinina is set to host an invitational "Pink Light District Party" and fashion show at The Establishment, a high-end restaurant complex at the Bonifacio Global City. This will also mark the opening of her Second Style Studio at Shangri-La Plaza mall.

Plastinina will also be sharing her insights with students of the School of Fashion and the Arts (SoFA) and the Philippine press.

Kagay-anons are sick and tired of the usual grill and native restaurants. Hand us a plate of grilled chicken, we won't be excited. We are not after of unlimited rice and bottomless iced tea. What we're craving for is something new and different. This is evidenced by the presence of restaurants and bars in the city which gives a clear distinction between fine dining and fast service establishments. And I am happy and excited to tell the world that big restaurant chains in Cagayan de Oro City are all getting better! CLUB AURA on the right wing of The Avenue at the Smallville Business Complex opened its doors to Metro Iloilo’s party goers, chill-out seekers, and fun lovers on May 7. Wow CDO has some really nice places to shop.
I think it'll be great once the Ayala Center Redevelopment project is finished in Makati.

Dumaguete locals are finicky about their food. It’s a trait shared with all Filipinos, this love of good food, but it’s a telling fact that when the first mall in the "city of gentle people," Robinsons Place Dumaguete, opened last November, the biggest sales of the day were home appliances and KFC.


Even now, a tenant ratio of 35% food to 65% non-food shops, the top earners remain to be food places, namely, KFC, Jollibee, Mang Inasal, Chowking, Sans Rival Cakes and Pastries, Greenwich and Shakeys. This we learned from Joseph Sian, group property manager for Robinsons Land Corp., with Bacolod as his base and nearby Dumaguete his newest site.

The visit to Negros Oriental’s capital last April 14-16 may have been a familiarization for media of the newest RLC property, but it quickly became a food trip, given the variety available in the city -- and we didn’t even have time to visit Jo’s Inato for their patented chicken or Panda’s for their fried ice cream or the resident sugba-sugba (a type of grill house) where corporate types rubbed elbows with dockhands for lunch.

Of the popular food places within the mall itself, Sans Rival Cakes and Pastries is the homegrown favorite, a hangout for families and barkadas, tourists and locals. The original site downtown is still booming, and the mall café is frequently full, with only a few minutes in between customers. Given the traffic, it isn’t too surprising that the owner of the shop, Manuel "Chiquiting" Sagarbarria, is the incoming mayor of Dumaguete (he won by 51 votes).

Since founder Trining Teves Sagarbarria opened her garage-cum-bakeshop in 1977, Sans Rival Cakes and Pastries has been the go-to place for pasalubong in Dumaguete, usually of the namesake sansrival cake, a buttery, nutty cake (P25/slice, P285/loaf with mango, chocolate and mocha flavor variants), and silvanas (P12 apiece, P100 per pack of 10), a round biscuit of thin meringue slices, powdery on the outside with crumbs, and sticky on the inside with caramelized sugar, and oozing with buttercream filling. The family recipes reputedly date back to the Spanish colonial period.

These days, the shop also offers a choice of pasta and sandwiches, and several drink options. Try the flavored café latte (I’d suggest hazelnut, but there’s also Irish coffee, caramel and almond mocha) and for the heck of it, the intriguingly named Teekanne teas -- "Happy Moods," dubbed "enlivening herbal tea blend with green" and "Sweet Kiss," an infusion of cherry and strawberry. Given that the pastries are on the sweet side, tea (or water at that) will be a good idea.

If dessert isn’t really your thing, and Mexican more your style, there’s Cebu-based Mooon Café at the alfresco area of the mall, quickly becoming a local favorite (in fact it’s one of the places a Dumaguete native suggested I check out). At night, the place is packed, outside seating preferred by those who want to listen to the night’s live entertainment, the stage dominating the court despite a water playground of large "bubble" buoys and a balloon slide.

Mooon Café’s interiors are colorful and whimsical, from the painted washbasins to the cute little salt and pepper shakers. With the doors open and the fans whirring, and the air-con on full blast, one can still hear the band and have their slice of quesadilla or quatro quezo pizza too. Add to that a heaping of beef salpicao, dripping "nacho spinners" or campesino jalapeño, and yummy Mexican baby back ribs. The house specialty drink is sangria and their own blend of iced tea, but as these are sticky-sweet and extra fruity, I’d suggest sticking to cola.

Outside the mall, the go-to place would be Rizal Blvd. (so named because Rizal stayed the night on his way to Dapitan), right beside the sea. If you’re lucky, you can be invited to have tsokolate sa batirol (hot chocolate), mangga and budbud kabug (a type of suman made of millet and coconut milk and wrapped in banana leaves), puto maya (rice cake) too, on the second floor of Silliman Hall, the oldest standing stick-style structure in the university overlooking the boulevard. The view is pretty, the wind lovely, and the building itself, which houses the anthropology museum, romantic.

If tea at Silliman Hall isn’t on your can-do list, perhaps you can settle for buying Silliman’s famous cheese bread from the cafeteria, wash it down with Mountain Dew (Silliman graduates swear by this combo) and proceed to the port/boulevard area where tiny plastic tables are set up by street vendors peddling fried goodies, the best of the lot being a fish tempura that’s a cross between kikiam and Jeprox (a type of fish cracker), that old childhood snack for the 1980s babies. They serve soft drinks here too.

Hayahay Treehouse Bar is a popular night spot, so much that even the parked cars would have youngsters passing around drinks, and right beside it is sister-establishment Lab-as Restaurant ("hayahay" connotes relaxation, whereas "lab-as" means "fresh"), a "family place" from the looks of it, both boasting of the freshest catch available, fish and shellfish, you name it, with meat produce thrown in and vegetable dishes as in the serving of okra, kangkong (swamp cabbage) and eggplant slices with a helping of guinamos (sauce made of salted and fermented anchovies, which may also use baby shrimp or oysters).

Five minutes away from the boulevard, but worth the trip for the quiet, would be Likha Tapas and Vodka Bar at the South Sea Hotel (the same owners of the Azalea Restaurant & Bar in Sibulan, more than an hour’s drive away from the city proper). They’ve got a plethora of vodkas from around the world (Russia, Austria, Sweden, Poland, France, Italy, New Zealand, the US, Kazakhstan), Mexican tequila, a variety of imported beer, and specialty cocktails, including martinis and margaritas. Bar chow care of the New York-trained chef ranges from mini pork chimichangas to tiny tuna burgers laced with wasabi to a main course of Australian T-bone steak (P380, 365g). Good stuff.

In Dumaguete, there’s not a lot to be had in terms of entertainment outside a good movie, a beach jaunt, a poetry reading, or getting up close and personal with native deer and bats at the sanctuary in Silliman, but all the locals seem to want is good conversation with good food (of the non-endangered species kind) -- and they’ve got that down pat.

Im sorry but i cant agree on us being d best asian food. Not by lightyears ok maybe not by a mile perhaps.

As big of a staple Filipino food is to my diet, and as much as I love it, and as delicious as it is - I hate to admit it too, but Filipino food has a while before it catches up to the flavors of countries like China, Korea, India and Japan whose cuisines have been evolving and developing for thousands of years. Thousands of years of labor, toil and experimentation have been invested into these master cuisines, and it's really hard to compete with them.

The Chinese did a good job marketing their foods. There's a Chinese restaurant in just about every town of the USA. It's about as integral as the town's city hall. That's why it seems less exotic. However, the Chinese food you find in the states is nothing like what you find in China. The taste between Chinese food in the States and in China is about as different as day and night. In the states, it's cheap, greasy, westernized, lacking in ingredients and proper equipment, hastily prepared, and it tastes nothing like the real deal. That's why it's so easy to label it a "McCuisine." Even the best restaurants in NYC can't come close to duplicating the flavor and variety of what you find when you actually go there.

THE FIRST THING YOU’D notice at Café 1771 is the chic interiors. The colors are cool to the eyes: teal, gray, taupe and ecru. It’s inviting to lounge around in the soft, comfy sofa with throw pillows. The walls are lined with hardbound books, framed vintage photos and paintings. Floor-to-ceiling French windows allow in natural light and clear fiberglass chairs lend a modern accent.

Café 1771 at El Pueblo Real de Manila, Ortigas, is a more casual version of the popular Chateau 1771 restaurant that used to occupy the area. Interior designer Ivy Almario designed the place aiming to give a complete dining experience.

“People from nearby business establishments usually come here during weekday lunch and dinner,” Cyrus Cruz, group marketing manager for the Chateau 1771 group of restaurants, said at the launch. “During weekends, families come here. It is also a place to celebrate special occasions like the coming Father’s Day because we have specific areas for intimate gatherings.”

The roomy place has three sections: Whimsy, Lounge and Wine Bar, each with different menu to suit your fancy.

Whimsy

Whimsy is the casual, stylish café with rows of wooden tables and chairs ideal for quick lunch, snacks and extended chats. The menu consists of light meals and coffee and tea selections.

Sandwich selections are Swiss Cheese Toast, Salmon Cheeseburger Bagel, Ham and Cheese Fiats, Sardine and Anchovy, Roast Chicken and Chicken Cordon Bleu. All are served with tortilla chips and tomato salsa. Pizza varieties include Holy Cow, Brig, Mushroom and Smoked Salmon Pizza.

For breakfast, the Café 1771 Eggs Benedict (also served all day) from the old Chateau menu is still a must-try. Other breakfast sets are Oatmeal and Muesli, Fresh Toast and Spanish Tortilla with Chorizo, Spicy Tuyo Flakes, Pritong Paksiw na Bangus and Beef Sirloin Tapa.

There’s also the dessert counter for your sweet fix and coffee mixes like Irish Flambé and Kahlua Café.

The Lounge

The Lounge resembles a charming den, and you’d probably be tempted to take a nap once you sink in the couches—or go online, there is complimentary WiFi.

This area is ideal for long lunches, relaxed dinners and celebrations. The vibe lets you loosen up and enjoy your food. Signature items from Chateau 1771 are served—Tomato Cheese Fondue, Raclette, Lemon Chicken and Pasta Chorizo.

Make sure to order the house specialty: Organic Chicken in Potato Crust or slow-baked juicy chicken covered with cracked potato chips, an original recipe by executive chef Vicky Rose Pacheco.

“Coming up with this dish was a long process. First, I had to look for a supplier of authentic organic chicken. I tried that recipe a lot of times and gave the chicken as gifts to friends during Christmas, and asked for feedback until I perfected it,” she said. “I like cooking ‘slow food,’ or food that takes a lot of time to make, the matrabaho type,” she added.

Appetizers include Lake Como Fondue Petite, Baked Eggplant Rolls, Fried Squash Flowers stuffed with anchovy and kesong puti.

Pasta choices are Spaghetti with Sardines and Fried Capers, Fettucine Alfredo, Spaghetti with Roasted Tomatoes, Hand-made Ravioli, Salmon Lasagna and Vegetable Lasagna.

Cocottes and stews are meticulous dishes included in the slow-food selection: Lamb Shoulder Chops braised with tomatoes, beans, carrots and olives; Orange Pork Spareribs; Oxtail Stew, callos-style with strips of ox feet, tripe, chorizo and red bell pepper; Korean Ribs in Guava Glaze; Osso Bucco, caldereta-inspired bone-in beef shank.

For those who want something light, there’s the salad and seafood list: Sauteed Sea Bream with French beans, Lacquered Salmon, Lime-Butter Prawns, Pan-Fried Philippine Sand Bass with extra-virgin garlic olive oil and browned garlic, and Escabesh-Poached Sea Bream Fillets with onions steeped in sweet Japanese vinegar.

Wine Bar

The cozy Wine Bar on the second floor can accommodate 100 persons, a perfect place to chill after a long day. Tapas and appetizers that go with the wine selection can be enjoyed here.

“We made sure Café 1771 has a different identity from the other restaurants—Chateau 1771 in Greenbelt 5 and Sentro in Greenbelt 3 and Serendra,” says owner Ricky Gutierrez, Chateau group CEO. “It could be a date place, a hub for friends and a dining destination for families; and of course, it’s a floor specifically for wine-lovers.”

There's just one problem with Singapore Chicken Rice in the Cubao block: everything in their menu is so cheap, you'll most likely overeat. At least I did.

I rarely try out new restaurants when I'm extremely hungry. But since the place came highly recommended by a friend, I decided to sample their bestselling white chicken for a really late lunch.

Singapore Chicken Rice is not hard to miss. Just get to the corner of Time Square Ave. and Gen. Roxas Ave. behind Shopwise and you'll spot the big red sign with the big white chicken. There's a menu by the door so you can check out their offerings before you even enter.

Don't expect anything fancy though, it's a fastfood restaurant inside and out. There are white wooden tables and red plastic chairs surrounded by posters and photos of nicely styled food.

At the counter, cashiers are courteous and patiently wait for your order. You won't have a hard time choosing because there are only four categories in the menu: Chicken with rice dishes, Asian Delights, Pork dishes and drinks and desserts. Sorry fish and beef lovers, nothing for you here.

Service was fast since the dishes arrived a few minutes after ordering. I wondered if it was just because it was way past lunch time and there were only a few customers. But a friend, who has eaten there thrice, said service is quite fast all the time.

The first thing I digged into was the Kaya Toast, mini sandwiches filled with butter and kaya, a spread made of eggs, sugar and coconut milk. It seemed the cook got a bit toast happy since some of the sandwiches were burnt along the edges. But when I bit into one Kaya Toast, it was sweet creamy pleasure. It might be a bit too sweet, not to mention sinful, for some. But if you've got a sweet tooth, every bite is heavenly.

Unless you like eating sweet things for an appetizer, Kaya Toast is best eaten for breakfast, snacks maybe even for dessert. For P45, you'll get a plate of six toasts good for two, or one depending on your sugar tolerance.

Next on the table was Nasi Lemak, a dish with gata rice, a slice of fried egg, anchovies, peanuts and spicy sauce on top of a sliced cucumber. Everything was neatly arranged on the plate, it looked almost too good to eat. The proper way to eat it seemed like you take a peanut here, scoop anchovies there and mix it with a little rice and sauce. But the best way to eat it, I was told, was to slice the egg into small pieces and mix everything up. It didn't look as good as the original presentation but the taste was so much better.

It was a smorgasboard of flavors, the creamy rice went perfectly with the salty anchovies and slightly spicy sauce. Take every spoonful with cucumber and peanuts for a fresh and crunchy kick. People with big appetites may not be satisfied with the small serving. But at P35 a plate, you can easily order two or more so you can have your fill.

I reserved the Hainanese Chicken Rice for last but I was eager to taste the bestseller. Slices of steamed chicken fillets were served with rice cooked in chicken broth, a little atsara made up of carrots and cucumber, an extra cup of chicken broth and two sauces: ginger and spicy sauce. I don't usually bother with sauces so I just ate the chicken with the rice.

After eating the flavorful Nasi Lemak, the Hainanese Chicken Rice (P95) paled in comparison. I tried putting a little ginger and spicy sauce on the chicken fillet but I didn't like the combination. When I tried pouring some broth on the chicken and rice, that's when I started to appreciate its flavor. It was still not as tasty as I'd want it to be but of course, you can only expect so much flavor from boiled chicken.

Otherwise, there's still Wild West Fried Chicken, Curry Chicken Rice and Chicken Satay on the menu which seem to have more promising flavors.

For those who prefer noodles than rice, try the Mee Goreng, stir fried pancit that's sweet and spicy. Marked as a local favorite, Pancit Chino is also tagged as a must - try. It's cooked with egg and gives off an appetizing aroma.

If you want dessert, there's only one available in the menu: the Mini-Dinosaur (P45) which is actually a chocolate malt shake. It tasted like a chocolate drink you can easily prepare at home but the real treat here was the huge mound of malt powder on top. It reminded me of that time, not long ago, when I would sneak extra spoonfuls of chocolate powder on a glass of Milo so I could eat it.

I walked out of Singapore Chicken Rice trying very hard to keep my stomach in. I made a mental note to come back for more Nasi Lemak and to give the Hainanese Chicken Rice a second try.

This Cubao branch is their first and only branch in Metro Manila so you'll have to brave some traffic if you live far from Quezon City. But getting a taste of good Singaporean food for less might just be worth it. Aside from being wallet - friendly, Singapore Chicken Rice will also make your belly very happy.

^^ They say it's currently the biggest club in the Philippines after Encore(formerly Embassy) closed 3 of its room. When I was at Republiq 3 weeks ago, I read a poster saying "Embassy-November 2010". I guess Embassy will be relocated in ResortsWorld as a members-only club then Encore-the Fort will eventually be closed... forever.

Chicken chain threatens Chowking

CHOWKING will not admit it, but some of its franchisees believe that the Chinese quick service restaurant chain of Jollibee Food Corp. is feeling the heat from competition posed by Mang Inasal, a chain of chicken restaurants started in Iloilo City that is expanding at a furious space.

Chowking has already initiated some management changes, including the replacement of Erwin Elechicon effective May 16 this year with Ariel Fermin, who now heads both Chowking and pizza chain Greenwich.

Franchisees in the know tell Biz Buzz that this major change was prompted in part by the aggressive expansion of Mang Inasal, which will have 300 stores by the end of the year.

Some of Chowking’s executives have even moved to Mang Inasal.

Edgar Sia, the young owner of Mang Inasal, however, says that Chowking does not have anything to fear from Mang Inasal, although he did admit that some of Chowking people—as well as those from other food companies—are now on his team.
“They should not be threatened by such a small player like Mang Inasal, they are already giants,” says Sia.
This small player, however, may just turn out to be a David to the Goliath that is Chowking, which has 408 branches as of end-June. Tina Arceo-Dumlao

Chicken chain threatens Chowking

CHOWKING will not admit it, but some of its franchisees believe that the Chinese quick service restaurant chain of Jollibee Food Corp. is feeling the heat from competition posed by Mang Inasal, a chain of chicken restaurants started in Iloilo City that is expanding at a furious space.

Chowking has already initiated some management changes, including the replacement of Erwin Elechicon effective May 16 this year with Ariel Fermin, who now heads both Chowking and pizza chain Greenwich.

Franchisees in the know tell Biz Buzz that this major change was prompted in part by the aggressive expansion of Mang Inasal, which will have 300 stores by the end of the year.

Some of Chowking’s executives have even moved to Mang Inasal.

Edgar Sia, the young owner of Mang Inasal, however, says that Chowking does not have anything to fear from Mang Inasal, although he did admit that some of Chowking people—as well as those from other food companies—are now on his team.
“They should not be threatened by such a small player like Mang Inasal, they are already giants,” says Sia.
This small player, however, may just turn out to be a David to the Goliath that is Chowking, which has 408 branches as of end-June. Tina Arceo-Dumlao

“FORGET love and fall in chocolate.”

At 29 and wise beyond her years, Koby “Kobz” Parcell did exactly that. This milk chocolate aficionado has become Manila’s hottest chocolateur (chocolate entrepreneur) since she opened Chocolate Fire, the metro’s first chocolate lounge.

Here chocoholics will have ample opportunity to get their daily fix and choose from real Belgian chocolates that have no additives, chemicals, preservatives or emulsifiers. Here is where you’ll find from 70 to 200 seriously decadent and oftentimes wildly experimental chocolate creations made fresh daily.

The chocolates in Chocolate Fire are created by a Master Chocolatier (MC), known only by the pseudonym “Picasso-Van Gogh of Chocolate,” says Kobz with a mysterious smile. “He keeps his identity secret as he would rather that his work speak for him,” she explains.

A true artist, this MC says he takes his inspirations from life and lets his mind go beyond normal recipe conventions. The crazier the idea, the better. “I am inspired by the quality of excellent ingredients we can source and where a creative mind will allow that to lead,” he says.

MC works with a variety of fresh, dried and glace ingredients, 90 percent of them imported from Europe or Australia. The remaining 10 percent, such as coconut or dried mangoes are sourced locally, and are “chemical- or preservative-free, as the purity of everything is of utmost importance to us at Chocolate Fire,” says Kobz.

But even this chocolatier acknowledges that one cannot live on love or chocolate alone. Thus, she recently organized a charity auction that brought together a diverse group of celebrity chocolate lovers. The event, held last August 21, auctioned off mouth-watering and quite a few jaw-dropping chocolate portraits taken by top photographer Raymund Isaac.

“Raymund has been a long time-friend whose work never ceases to amaze me,” says Kobz. “We’ve discussed over the past year the possibility of doing an exhibit for charity that brings out the passion ignited by chocolate. Because such a project would be complex in terms of photography and post production, I knew that Raymund would be perfect for the venture, with his skills, his experience and his team.”

Held at Chocolate Fire’s Salcedo Village branch, the charity exhibition became a night of exploring the senses through amazing chocolate and exceptional visuals.

After a blessing by Pastor Robert Hern, Senator Tito Sotto cut the ribbon that signalled the start of a passionate evening of chocolate cocktails, chocolate treats and charity, since the proceeds of the auction will go to the Virlanie Foundation for street children.

Isaac’s spectacular photographs featured Manila’s top models, actors, entrepreneurs and artists, among them Karen Pamintuan, Rocio Olbes, Heart Evangelista, Denise Laurel, Brent Javier, Stephanie Zubiri, Victor Consunji, Maggie Wilson, Kat Agarrado, Ian King, Joey Mead, Eric Tai, Wilma Doesnt, Marc Nelson, Amina Aranaz Alunan, Rafa Alunan, Tim Yap, Ciara Sotto, Bryan McClelland, Tisha Silang, Sanya Smith, Ornusa Cadness, Mia Ayesa, Stephanie Kienle, Maria Dolonius, Mylene Dizon, Ira Cruz, Iza Calzado, Solenn Heussaff, Mark Whittington, Kirja Parcell, Amanda Griffin Jacob and baby Kieran Jacob.

“They are a wonderful array of personalities who are also amazing in giving their support, their time and tolerance to sit for the pictures while having some crazy chocolate explosions happening around them,” reveals Kobz.

It was a star-studded evening, filled with laughter, great chocolate and the wonderful beats of Nykó Macá, with drinks provided by Junnel Marketing and wine by Sommelier Selection. Released for the first time was Isaac’s exceptional video of behind-the-scenes shoots by Portfolio Studio. Some of the pictures were still on auction through Chocolate Fire’s Facebook Page until August 29.

Post auction, Chocolate Fire is looking to franchising, with a great many concepts just waiting to be brought to life, says Kobz. Home delivery will also be introduced, as well as an expanded gifts division to provide giveaways for weddings, birthdays, baptismal and bridal shower parties and similar events. Only three months old, this luxury chocolate lounge is looking forward to some great promos and creative flavors as the year gives way to the holiday mood.

So, with all that chocolate at her fingertips, which is her favorite?

Says Kobz without a moment’s pause: “I’m a milk chocolate person and currently I’m obsessed with CF’s dipped figs, in milk chocolate of course. It’s such a great combination of the fruity glaced fig with its seeds and plump fruit and the smooth milk chocolate. Add an Anzac biscuit and you’ve got the perfect treat with a cup of coffee or tea!”

From farm to fork: Le Bistro Vert makes a pitch for healthy and sustainable eating in a very tasty and creative way

You can almost hear actor Mark Dacascos announcing that this week’s secret ingredient was eggplant.

From out of the kitchen came three dishes that featured eggplant for Chef Sau del Rosario and entrepreneur Pacita “Chit” Juan to taste and assess if they should be included on the menu. One particularly interesting appetizer attempted to transform thin slices of eggplant into chips, which was served with several dipping sauces, including an aioli, which I said worked rather well. Del Rosario felt the eggplant strips could be made shorter and crispier, and instructed the kitchen to try it again.

Another dish, made by del Rosario himself, was a pasta with eggplant slices, spiced with anchovies—a classic native combination, upgraded to bistro quality.

“It’s really like Iron Chef,” says del Rosario of the setup at Le Bistro Vert. “We highlight ingredients that are available.”

That afternoon, Juan had just surveyed the farms that supply fresh ingredients to the restaurant and found out that there’s an ample harvest of eggplants, which explains the rush to create new dishes that highlighted the vegetable.

For Juan, helping find new markets for small producers isn’t new. It’s the same advocacy behind ECHOstore, which she conceived with partners Jeannie Javelosa and Reena Francisco. Now with five branches, ECHOstore sells natural, community fair-trade products from around the country. Le Bistro Vert, which translates to “the green bistro,” is just another platform to showcase—and market—these local artisanal foods and produce.

But for the first three to four months, Juan admits that the restaurant was “just a café,” although the intention has always been there. But when del Rosario came into the picture, the three women found the right chef-partner to bring their concept of having a restaurant that serves sustainable food to the next level.

Del Rosario is not new to the local dining scene—I first tried his food at Le Taxi of the Pan Pacific Hotel in the mid-1990s. But the chef left the country for the next nine years, where he worked at the Equinox in Singapore, among other eateries, then returned with a bang with M Café and then Chelsea.

It was Javelosa who asked the chef to be a partner at Le Bistro Vert.

“We share the same advocacy,” del Rosario says, adding that he was already using organic vegetables at Le Taxi.

The idea behind Le Bistro Vert is to offer “a special sustainable food menu which ensures that food products support earth-friendly initiatives and help sustain local farmers.”

Juan clarifies that Le Bistro Vert isn’t a vegan or a nonmeat restaurant—although there are numerous items on the menu that only use vegetables.

“But we go the extra mile,” she says. “For instance, the chicken we use is organic. And we use brown rice.”

The restaurant is now even talking to suppliers for organic wine.

“In a way, we want to educate the people that they can also do this at home,” she stresses.

Within the restaurant is a deli, which features not just bread items from del Rosario’s own Food Garage but food items sourced from around the country—from cheeses to coffee.

It even has its own little herb garden outside the kitchen “also to suggest to people that they can have a backyard garden,” Juan says.



Go local

For a French-trained chef like del Rosario, Le Bistro Vert poses a definite challenge.

Juan explains: “The challenge for him is to use local produce, maybe not 100 percent, but 90 percent of the time. It’s really up to his skill to use local ingredients.”

For instance, Juan says they don’t use imported fish like salmon and seabass—which are staples in fine-dining restaurants—but local ones like dapa (sole) and apahap.

Del Rosario chuckles when asked about this, saying that having worked in cosmopolitan cities like Paris and Shanghai, he is so used to working with “highfalutin ingredients.”

“I find it very challenging,” he says, “but also fulfilling.”

This is the reason he chose to return to the Philippines. “I came back because I really love this place, and I feel that I have a mission to do,” he explains. “It’s all meant to be.”

“I think it comes with age, too,” he says with a laugh. “If you serve me foie gras, I wouldn’t even touch it.”

Del Rosario was already experimenting with modernized Filipino cuisine at M Café, but more within a pan-Asian context. “This time we’re using local ingredients, so it’s more authentic,” he says. “And we use local ingredients for any other cuisine, not just Filipino food.”

For instance, he cites the tamarind. While this is commonly used as a souring agent for the traditional sinigang, he utilizes tamarind as a dip and as a substitute for lemon—in many ways like they do in Iron Chef.

Perhaps the only imported ingredients he commonly uses at Le Bistro Vert are olive oil and capers.

One recommendable dish, in fact, is the smoked fish and caper spaghettini (P250)—a Mediterranean-inspired dish that’s simple but flavorful, with its coriander and basil herbs and garlic confit.

Smoked fish, or tinapa, is also used for the Le Bistro Vert Caesar salad (P210), which also features salted egg bits and shavings of queso de bola. A bit drier than what you’d expect, but the flavor profiles are definitely there such that you don’t really miss the real thing.

Del Rosario admits that meat poses a challenge since local beef tends to be tough. But his beef mignon “bistek-style” (P375) proved to be quite tender. This was also upgraded in terms of presentation as it is served with garlic confit, onion tempura and fried basil.

The chef, who hails from Pampanga, also adds some native touches, such as using the buro mustasa to flavor an apahap filet, and transforming the bringhe into some sort of curry rice.

“I never had the chance to immerse myself in the Philippines until now,” he says. “I have finally found my calling.”

The showy, playful style of del Rosario is still definitely on display on the menu but at Le Bistro Vert, one also gets a sense of comfort and familiarity—the food has soul.

And that’s exactly the message Juan wants to convey.

“We have to go back to healthy living,” she says.

And help the local farmers in the process.

Another piece of Marquee Mall puzzle has fallen into place with the opening of T.G.I. Friday’s, the popular American casual dining restaurant.

T.G.I. Friday’s Marquee is the 11th branch in the Philippines and 2nd provincial outlet. It aims to provide a new level of fun, great food and unique dining experience. The restaurant occupies150 seats or so with al fresco dining and a cheerful twist of modern and classic design that prompt a laid-back and welcoming ambience. Wooden dining tables provide comfortable seating while funky red and white swirled pendants and star-shaped lighting gives just the right amount of illumination to the interiors. Collection of electric memorabilia such as disco balls and other accents of the 70’s, 80’s and the 90’s are creatively displayed inside the restaurant.

T.G.I.F. is more than ready to serve and please the distinct love for food of the Kapampangans, local residents, students, families, office workers and a large expat community. The menu offers delicious American dishes served in huge portions that elicit an excited “Wow!” from guests. Starters include the signature dishes Buffalo Wings, Fried Mozzarella and Potato Skins. Large plates include Friday’s Chicken Fingers, Baby Back Ribs and Jack Daniel’s Grill mouth watering meat and seafood grill. Save the best for last for the famous dessert over-sized Oreo Madness. And while you are being entertained by the bartender with flair tending of flipping and juggling of liquor bottles, long list of refreshing drinks, concoction of smoothies and flings are available in the bar to complete the fun dining experience.

Last September 22, T.G.I.Friday’s Marquee hosted a VIP Night. It was a very intimate and after-office casual get together of special guests, Friday’s management team, Marquee Mall executives, friends, families and local media. The guests were welcomed with a glass of wine and free photo op at the Bicapture booth joined by lookalike of Michael Jackson, Marilyn Monroe and Elvis Presley. The program highlighted the traditional T.G.I.F. opening ceremony – ringing of bell, signing of dollar and hanging on the propeller, and exciting flair tending. There were lots of fun, groovy music, overflowing drinks and scrumptious food that everybody loved.

T.G.I. Friday’s opens daily, mall hours, located at the ground floor of Marquee Mall.

Chicken chain threatens Chowking

CHOWKING will not admit it, but some of its franchisees believe that the Chinese quick service restaurant chain of Jollibee Food Corp. is feeling the heat from competition posed by Mang Inasal, a chain of chicken restaurants started in Iloilo City that is expanding at a furious space.

Chowking has already initiated some management changes, including the replacement of Erwin Elechicon effective May 16 this year with Ariel Fermin, who now heads both Chowking and pizza chain Greenwich.

Franchisees in the know tell Biz Buzz that this major change was prompted in part by the aggressive expansion of Mang Inasal, which will have 300 stores by the end of the year.

Some of Chowking’s executives have even moved to Mang Inasal.

Edgar Sia, the young owner of Mang Inasal, however, says that Chowking does not have anything to fear from Mang Inasal, although he did admit that some of Chowking people—as well as those from other food companies—are now on his team.
“They should not be threatened by such a small player like Mang Inasal, they are already giants,” says Sia.
This small player, however, may just turn out to be a David to the Goliath that is Chowking, which has 408 branches as of end-June. Tina Arceo-Dumlao

Remember when the shopping/dining hub was called Makati Commercial Center?

FORTY YEARS ago, on Nov. 19, 1970, when Rustan’s Supermarket opened at the back of Rustan’s Department Store, whose elegant display windows fronted Ayala Avenue in Makati, grocery shopping was redefined for a new decade and a changing society.

While reflecting the sophistication of the department store, which carried world-famous brands and introduced them to an uptown market that coveted the Diors and YSLs, the supermarket targeted a larger market that appreciated the convenience of knowing where to find grocery items when they needed them fast, including hard-to-find imported items like blue cheese, feta cheese, bolognas, Italian pastas, Campbell soups, canned fruits and vegetables, Danish cookies, hearts of romaine lettuce, a nice pair of steak knives.

Lured by Rustan’s Supermarket’s bright and pleasant, even festive, atmosphere and neat shelves filled with everything their hearts desired, even the matrons of Forbes Park and neighboring villages made it a glamorous chore to do the grocery-shopping instead of sending out their cooks or maids. They were confident that they would know better the best cut of frozen pork and beef, the best yield of salmon and lamb chop, the properly gourmet herbs and salad dressings, balsamic vinaigrette and Bertolli virgin olive oil, and what to pick from the irresistible offerings among the refrigerated deli goodies.

And the wine section (now called The Vineyard)—there was nothing anywhere near it in sophistication and range of selections that we knew of then. Come to think of it, was there any such place then? Perhaps the five-star hotels.

But it was Rustan’s Supermarket that understood, and introduced to Filipinos, the western sophistication of drinking wine with their food. And it caught on among wine connoisseurs who were thankful that at Rustan’s they could get their favorite French chablis, chardonnay, merlot, beaujolais and cabernet sauvignon and the German pinot noirs and rieslings—and for a fraction of the price by the bottle that they would pay for it by the glass in a hotel.

Bohemian of ’70s

It was probably the bohemians of the ’70s that gave wine-drinking that haute cachet of indulgence and worldliness. These pale, haunted romantics sipped their wines in cafes or entertained friends at home with Mateus if they were penny-pinching, or with a merlot and cabernet if they had gotten their checks for painting commissions or bridal ensembles.

Rustan’s Supermarket pampered that new worldly spirit.

Many people then would think of Rustan’s Supermarket as an expanded, neatly arranged, and better stocked PX goods store. They could not be blamed for thinking so: they had not seen anything like Rustan’s Supermarket before.

The old PX goods stores they were familiar with were a jumble and tumble of armchairs, kitchen utensils, bed sheets, bric-a-bracs, chocolates, ovens, footwear and others that look like other people’s, or American GIs’, detritus.

The goods at Rustan’s Supermarket were no GI detritus; they were the quality goods from around the world.

More than that, the shelves were also filled with the best local grocery products, not to mention the farm produce—vegetables and fruits—and the sea harvests that were as fresh as you would want them.

And there were delightful surprises where you didn’t expect one. “Look here, brooms in Rustan’s! You don’t need to go to Ilalim ng Quiapo for them.”

With its allures of a wide variety of local fresh produce and excellent local and imported goods of your heart’s desire, going to Rustan’s Supermarket was like going to a different world.

Highway 54

Whether you were coming from the north or the south, you passed through Edsa, then called Highway 54, the undisputed territory of raucous and undisciplined jeepneys. The supermarket was just a few meters away after you turn to Ayala Avenue—and then the sense of coming into a different world would strike you.

Ayala Avenue, like it was transported from another city in, say, California, was a wide and neat avenue with manicured shrubs and tall lamp posts down the center islands and a growing number of high-rises flanking both sides of the avenue.

The Ayala Center, as we know it now, was then called the Makati Commercial Center, not yet the central business district that it is today, with sprawling malls and high-rises and traffic in the manner of the world’s capitals.

The Makati Commercial Center, however, was a charming enclave in its own way, where people went for the best spaghetti at the Makati Supermarket, the pizza and baby-back ribs at The Plaza and its al fresco tables, the Vendo sandwiches and the hot meals plunked down on the chrome counters of the Automat, the elegant big-party dinners at Sulo Restaurant and Cocktail Lounge, the fabrics and clothing retail at Arcega’s at the Maranaw Arcade.

Rizal Theater

When Rizal Theater was built (in the site now occupied by Shangri-La Hotel), “in the middle of nowhere,” people snickered, it soon enough drew crowds to watch its first-run movies and stage performances and have coffee and cakes at Leila’s coffeeshop afterward. (Was Leila’s owned by Leila Benitez, the TV variety show co-host who insisted on pronouncing the Philippine currency “pey-sos”?)

And if you must know or want to remember (gosh, that was 40 some years ago and you wouldn’t want people to know you brought your dates to Panciteria Moderna in Sta. Cruz!), when Rustan’s Supermarket opened, local movies were cashing in on the phenomenal popularity of the singing love team, Guy and Pip, everybody was listening to the Apo Hiking Society and The Carpenters and James Taylor, fashionistas were wearing bell-bottomed pants and hippie flower-print tops, and antiwar student demonstrations intensified, inspired by the killing of four students in the Kent State University.

The opening of the supermarket came close to the declaration of martial law, which ushered in an era of social and political upheavals. It was not the best time for business, but Rustan’s Supermarket soldiered on, sticking to its quality merchandise and reasonable prices, possibly readjusted for the times.

What this also said is that you could not put down the Filipino’s proclivity for enjoying life when they could—not denying themselves the best groceries they could afford-even in harsh times. Tell you what, at around that time, young socialites and wannabes were also dancing it up at Hotel Intercontinental’s Where Else? disco.

Milestone

By then, however, the other early MCC landmarks were gone or fading away; one Rustan’s loyalist put it, “they could all be found now at Rustan’s and its supermarket.” Earlier big supermarkets like Acme Supermarket are now also gone, with the exception of Cherry’s Foodarama.

Today, of course, Rustan’s Supermarket, at the ever-renewing Ayala Center, is surrounded by other supermarkets, restaurants, specialty eateries and groceries, and a whole lot of others.

2006 brought on a major milestone, with the Supermarket being taken over by the Shopwise group led by Donnie Tantoco, grandson of founders Gliceria Rustia and Bienvenido Tantoco Sr. (the name ‘Rustan’ came from their surnames).

The infusion of young blood has enhanced Rustan’s legacy, with the new guard introducing innovative concepts and products that are spot-on in terms of today’s consumer trends but faithfully in line with the Supermarket’s core values.

And Rustan’s has since established 30 branches, composed of supermarkets and express lanes (the precursor of today’s convenience store) in Forbes Park, Greenbelt, Rockwell Powerplant Mall, The Gateway Mall in Araneta Center, The Shangri-La Mall, Paseo de Magallanes, Corinthian Hills, Ayala Center and Arcenas Estates in Cebu, and along Katipunan Road and at Il Terrazzo Mall in Quezon City.

Wherever it is found, it continues to hold on to its tradition of best quality and best prices (the Supermarket’s Traditions catalogue, started in 1980, is alive and well, and a pleasure to browse through).

As importantly, the Supermarket continues to realize the expectations of its confident customers that here they could find the items they needed fast and would not have to go elsewhere to find them. That essentially is what going to your favorite grocer is all about.

How time flies! Donnie Tantoco, who got paid with a burger at the supermarket’s first in-house café, now runs the Rustan’s chain

WHEN HE was 8, Donnie Tantoco had his first job at the package counter of Rustan’s Supermarket in Makati, right by the entrance of the in-house eatery then called Blast Off Café.

Tantoco recalls he helped in simple tasks like gift-wrapping, and would be paid with a hamburger. Blast Off Café was known to be the first to serve burgers in a round bun in the Philippines. “I didn’t know then that I was being underpaid,” he says in jest.

Also, he didn’t know that 36 years later, he would be running the family-owned chain of supermarkets itself, and would, in fact, rehire his now-retired first-ever boss from the package counter. (“After he retired, I found out he would come by and help them here [at Rustan’s] for free,” says Tantoco. “He said he had nothing to do anyway; I decided to hire him back. He was my first boss.”)

The in-house café, where Donnie once enjoyed his burger paycheck, has just been renamed Benny’s Café, in honor of the founder, and to mark Rustan’s Supermarket’s 40th year. Before that, it was also called Yum Yum Tree Coffee Shop, then Le Gourmet.

The menu for the native Filipino café slash handmade pasta and pizza bar was conceptualized by chef Beth Romualdez, to cater to varied tastes. (Sinigang sa Bayabas and Ginataang Santol share equal billing with Pumpkin Ravioli and Agnolotti Quadratti.)

So I'm starting to see some new restaurants and coffee houses opening up here. Couple I tried recently:

Cafe Laguna. This is a nice welcome to Dumaguete. It's upper scale, CLEAN, good service, good food and in a nice setting. Even the bathrooms were very nicely decorated - I'll spare you the photos of those!

All the food, every bit of it was very good and we'll be back to Cafe Laguna soon. At the end they even asked if we enjoyed the meal!! Something that's just never asked at a filipino business. EVER. The meal ends with complementary hot tea, a nice touch.

Total bill was 880Pesos

and, for those that might fancy a cup of coffee and a desert I can recommend Cafe Mamia on the boulevard. Apple crumble pie was 69Pesos and finished it off with a nice coffee. Relaxing environment, decent pie and service was friendly. At the front is a round table with 4 nice chairs, I wish they had continued that seating throughout. Signs say they also have WIFI. :-)

Chicken chain threatens Chowking

CHOWKING will not admit it, but some of its franchisees believe that the Chinese quick service restaurant chain of Jollibee Food Corp. is feeling the heat from competition posed by Mang Inasal, a chain of chicken restaurants started in Iloilo City that is expanding at a furious space.

Chowking has already initiated some management changes, including the replacement of Erwin Elechicon effective May 16 this year with Ariel Fermin, who now heads both Chowking and pizza chain Greenwich.

Franchisees in the know tell Biz Buzz that this major change was prompted in part by the aggressive expansion of Mang Inasal, which will have 300 stores by the end of the year.

Some of Chowking’s executives have even moved to Mang Inasal.

Edgar Sia, the young owner of Mang Inasal, however, says that Chowking does not have anything to fear from Mang Inasal, although he did admit that some of Chowking people—as well as those from other food companies—are now on his team.
“They should not be threatened by such a small player like Mang Inasal, they are already giants,” says Sia.
This small player, however, may just turn out to be a David to the Goliath that is Chowking, which has 408 branches as of end-June. Tina Arceo-Dumlao
