Aerin March 1st, 2010, 08:47 PM If you're a traveler coming from regions in Asia whose cuisine is fiery (ie. the Indian subcontinent, Mainland/Maritime Southeast Asia, the Korean Peninsula, etc.) and then found yourself in the Philippines later on, of course Pinoy food will come off as bland and uninteresting compared to the other places you've eaten. To begin with, the Pinoy palate likes food with a more savory and sweet taste to it. And our tables aren't laden with spicy condiments like chutneys , [i]sambals [Malaysia and Indonesia], or kimchi [Korean] to compliment the main dishes.
If, you say. Well, she has not yet been to any of those places you named, although she has been to China and Japan, countries where the dishes are not necessarily spicy in nature. Myself, I was quite taken aback when she made that declaration, as I thought she had a bigger problem with the food in Italy (indeed, I would hazard to say that it was blander, and I speak as a pasta lover). Never mind, I guess she has her own peculiarities, though she did love our malls :)

"1938" was a product of Mang Inasal's marketing strategy. Inggo's batchoy is claiming to have been established in the 1920's. So how can Deco's invent Lapaz Batchoy if Inggo's is already selling it in the 1920's? Ted's naman ya, in fairness, never ever claimed to have invented the dish, but one thing is for sure, they did innovate the dish and made it popular. One more thing, guinamos in batchoy is actually an optional ingredient and if you don't know how to process it, its gonna make your caldo malangsa. Also, there in no cow brain in it. Ang utok nga bone marrow, na lost in translation lang ina sang mga writer's hehehe so definitely, there is no Cow's brain in Lapaz Batchoy. There is only one batchoyan in Iloilo that does not use guinamos and that is Ted's. (you can even challenge them to have their broth tested).
IMO you cannot equate better with authentic since better is more of an opinion and authenticity is more on the fact side. besides taste is subjective, depende sa imo, whether it's what you grew up with or other factors
authentic can almost be like original in some ways. deco's prides itself of being the original (part of the nameand 1938 ang dala nila nga date while ted's 1945).
so deco's might be the original but ted's is more popular IMO.

it's just pure marketing strategy and hype that makes it compete with ted's now plus other "innovations" sa mga food items and the ambiance.
othr batchoyans i know are oak barrel (sa may lasalette man sang una), nat's (lasalette man pero nagsaylo sa may kilid sang iloilo supermart - dvd republic area now), nandings sa may jaro - tubang cpu.
more batchoyans i know because of blogging/internet at inggo's and ric's rugged sa mandurriao
some say nga may cow's brain? ang caldo aside from guinamos.
though some may equate guinamos=bago-ong i think lain sila. made with the same ingredients pero different process and result

It could be that Decos... is the first one to branch out in "Lapaz" hence the name... while Netongs and Inggos (sa Super or Central?) stayed there... that is just my assumption based on the info you've given... well, whatever happened after that is a lot more mysterious than the Batchoy kaldo.

Netong's naman ya i think ara pa man sa sulod tienda lapaz. Ang original gid nga Batchoy row ara sa likod tienda lapaz sang una, tanan nga pioneers tulopaday lang ina dira like ted's,deco's,netong's,inggo's,etc. Daw manokan country man bala sa bacolod nga tulopaday lang tanan.
The true origin of Lapaz Batchoy is not really mysterious kay obviously it is a chinese original nga gin innovate lang sang mga taga Lapaz. Unfortunately some sectors in Iloilo are being used to distort culinary history to advance a commercial interest.

Ted's! Dumduman ko pa sang gamay ako nga pirme kami ga hapit sa Ted's da sa sulod sang tienda La Paz every Wednesday tapos Novena sa St. Clements. hehe Born & raised from La Paz, and I've seen Deco's outside sa tienda pero never been inside para ma-matchoy. lol
Dumduman ko pa na dayon nga kung may mga artista gani nga ga kadto diri sa Iloilo, ga hapit guid na sila sa sulod tienda La Paz para lang mag pamatchoy sa Ted's. Never heard guid before or popular ang Deco's sa mga "artista". Si Dolphy bantog na da nga suki sang una sang Ted's. :lol: Tapos pirme pa guid dayon gutok sa Ted's. Urgh...huya ko ya ah! Pero daw kanami bala mag-explore sang guinatawag nga maragtas sang La Paz batchoy. Culinaria history is one of the least explored areas in Philippine historiography.

To close, I would like to share with you the best Filipino Meal we ever had…
It was in a place in Guimaras. The food for the day there is based on what is fresh and available in the market. It is cooked slowly, with love, and using traditional methods. The ambiance is very homey and you always get to chat with the owner. The people there are very friendly too. The food is cooked to perfection -- juicy and flavorful -- and often served with the fresh fruits for the day. I can still remember it to this day... This is how Filipino Cuisine should be experienced.

The man from La Paz: Federico “Deco” Guillergan Sr., inventor of La Paz batchoy.
MANILA, Philippines - A steaming bowl of meke noodles soaked in a tasty broth and topped with generous servings of pork meat, liver and sinful bits of chicharon never fails to entice the palate of foreign and local tourists whenever they go to the La Paz public market in Iloilo City.
Popularly known as La Paz batchoy, this Ilonggo comfort food has captured the taste buds of foodies in search of a hot, delicious and filling meal that can be enjoyed any time of the day — in Iloilo.
While a few eateries in the metro also serve this delectable dish, some say that nothing beats Deco’s Original La Paz Batchoy, the inventor of this now-famous meat soup.
I haven’t tried Deco’s so I was delighted to learn that I don’t have to fly to Iloilo to partake of this mouthwatering treat because there’s now a Deco’s Original La Paz Batchoy Since 1938 branch right outside the Magallanes MRT station in Makati.
Here, special batchoy can be savored for as little as P67 and can be paired with the so-called pre-war pan de sal for P3.50 or the Manapla puto for P6.50 per piece.
Well, who could resist this tempting treat, especially if you can have unlimited servings of kaldo (soup), chicharon bits and crunchy garlic as toppings for free?

A Taste Of Ilonggo History
The history of batchoy dates back to the years before World War II.
Federico “Deco” Guillergan Sr., a butcher who worked at the La Paz market at that time, is the man behind what is now known as the La Paz batchoy.
As a cook, Deco experimented with different ingredients to come up with a kaldo (broth) that was meaty and tasty, a dish he could serve market vendors to ease their hunger.
The aroma of the soup percolated through the large Chinese population of the city who would later troop to his makeshift carinderia for a bowl of the hot soup. Soon, noodles were added to satisfy the cravings of his Chinese customers.
Whenever customers would ask Deco what the name of his noodle dish was, he would hastily reply “batchoy,” which simply means meat soup in Chinese.
The people of La Paz enjoyed the original Ilonggo soup for only 10 to 20 centavos per bowl. From then on, they got hooked.
Realizing the need to pass on the legacy to his sons and daughter, Deco has taught his children to love the business that helped put them through school and earn their degrees.
“I started helping my father when I was 12 years old. It was more like play than work. I enjoyed talking to our customers. I would help him chop the meat and veggies in the kitchen. After school, I would volunteer to wash the dishes in exchange for a hot bowl of batchoy,” relates Federico “Nonoy” Guillergan Jr., the son of Deco, who is now managing Deco’s La Paz Batchoy, the oldest batchoy chain in the country.
Perfect Combination
Today, Deco’s legacy of great-tasting La Paz batchoy lives on as the company expands outside of Iloilo.
With the help of another Ilonggo company, Mang Inasal, Deco’s brings its batchoy to key cities of the country.
Joel Adrias, vice president for operations of Deco’s, said the company has recently put up five stores in Iloilo, all with modern facilities that aim to give diners a cozy atmosphere as they enjoy the taste of the original batchoy.
“Upon learning that Mang Inasal is an Ilonggo brand, most of our customers here in Manila would inquire if we serve La Paz batchoy. Well, that’s how the partnership started,” Joel explains.
Under the new management, Deco’s eldest son Nonoy is tasked to ensure that every bowl of Deco’s La Paz batchoy must be authentically prepared.
“I’ll prepare everything so the quality of the dish won’t suffer. We will also have a commissary based in Iloilo so all the ingredients needed for our branches here in Manila will come from the province,” explains Mang Nonoy.
For Lent, Deco’s is planning to serve a vegetarian batchoy topped with tuna chicharon.
“Of course, we also want to reach out to vegetarian diners. I’m sure they’ll love the healthier version,” says Mang Nonoy.
Now in its 71st year, Deco’s still perks up the appetite of even the most discriminate diners.

Nothing beats the original
Mang Nonoy says not all batchoys are created equal. Here’s a list of the things you should look for in a bowl:
• Lots of toppings. A bowl of batchoy should overflow with toppings.
• Unlimited kaldo (broth). At Deco’s, diners can enjoy unlimited servings of kaldo for free. Just go to the condiments counter where a steaming container of kaldo, garlic and onions is waiting.
• No sebo (lard). One mark of a bowl of Deco’s batchoy is the absence of sebo even when the broth gets cold.

To close, I would like to share with you the best Filipino Meal we ever had…
It was in a place in Guimaras. The food for the day there is based on what is fresh and available in the market. It is cooked slowly, with love, and using traditional methods. The ambiance is very homey and you always get to chat with the owner. The people there are very friendly too. The food is cooked to perfection -- juicy and flavorful -- and often served with the fresh fruits for the day. I can still remember it to this day... This is how Filipino Cuisine should be experienced.

The global economic crises has largely affected the way we celebrate our traditional fiesta but I know a family in Jaro who can’t just pass February 2 without preparing something for visitors. It may not be as grand and lavish compared to last year’s but they have managed to entertain their guests just the same. To some it’s not the food that they came for but it’s the chance of meeting old friends and long lost relatives. The food may be secondary, so they say, but I doubt they just don’t want to admit it. Lol. Unexpectedly, this year’s devotees of Nuestra Señora de la Candelaria has noticeably increased which means more people must have knocked at their doors. Filipino food gets lost among the choices of Southeast Asian cuisines. An approachable introduction to the islands’ food is the stew called adobo, which can be made with a variety of meats. A long cooking period lets the piquant nature of vinegar, soy sauce, and peppers meld flawlessly with the tender braised meat. It’s as easy as cooking gets: All the ingredients go into one pot, and essentially all you have to do is skim the surface often to remove excess fat.
Adobo pork makes a satisfying supper. Use small pieces of pork butt. Add a jalapeno and peppercorns (the dish should be a little spicy), but remove the peppercorns before serving. The dish simmers for more than an hour, until the pork is quite tender; then you have to let the cooking liquid bubble over high heat until it reduces and intensifies. Pair the dish with long-grain white rice. For Monday’s dinner, save some of the pork and rice for congee.
Congee, or rice porridge, is traditionally served as breakfast in China. Think of it as Asian risotto, which can serve as a main dish for supper. The simple flavors of the soup provide a blank canvas on which the punchy adobo shines. Once you have leftover adobo and rice, the dish is quick to make. Saute ginger, scallions, and garlic in a pan, pour in chicken stock, water, and the leftovers from Sunday. Simmer briefly, garnish with a few more scallions and a drop of dark sesame oil. Two classics blend together to create a recipe that you will revisit again and again.

yup it's part of their menu na. damo na sial fish unlike before na fish escabeche lang pero namit man. basta bangrus bisan ano nga luto manamit esp ang tyan :lol:

SOME people think that making bibingka is somewhat the same, thus you can buy from any stall. However, this is not the case. There is always one that stands out. It’s the RCJ Balasan Special Bibingka.
RCJ Balasan Special Bibingka is rich in coconut meat and coconut milk (plus some ingredients that are a best kept secret). This chunky treat is not too sweet and not bland either, thus it makes you clamor for more. The upper and outer crust of the rice cake is a bit crispy and sprinkled with brown sugar.
RCJ Balasan Special Bibingka can be stored in the refrigerator for three days and still maintain its softness. Just heat it or put on top of steamed rice. Some patrons even said that they tried keeping the food for a week and it still tastes good.
They are available in two sizes. The small ones cost P20 per pack of eight pieces while the big plate costs P80. The big plate is equally tasty as well. You can even dip it in butter or sugar, for a twist.

Reginald and Florinda Jaro, owners of RCJ Balasan Special Bibingka.
The owners are Florinda and Reginald Jaro. The birth of their business came about 28 years ago after Florinda resigned from her work as checker in Estancia and started making bibingka with only P300 as capital. Her mother was into this business, thus Florinda knows how to make bibingka and she even cooked it better. She basically lived and slept on the sidewalk for nine months. “We had no house. We slept on the sidewalk, with only a makeshift tent to shelter us,” Florinda said.
That hardship did not hinder the couple from succeeding.
They have six children and all of them are now successful and happy in their chosen occupations. One of them, Ramil, resigned from his work in Brunei and opted to manage their branch in Balasan.
“It was the bibingka business that sent our children to school. Thus, there’s nothing to be ashamed of in selling bibingka,” Florinda said. “I finished first year high school only. I felt bad that my parents asked me to stop studying that’s why I told myself that all our earnings will go to our children,” she added.
The Jaros’ tips for success? “If you have a limited income and it’s just enough for your daily needs, do not get into vices or enjoy too much. Sure, we enjoy ourselves but not always. We focus on the business first and make it grow. Spending your money on many enjoyments would just come someday if you can afford to do so. And whatever it is that you earn, allot a certain amount for your savings. For example, if you earn P100, keep P25 for your savings. It’s really hard to look for money when you don’t save,” she said.
When you are successful, you are prone to jealousy. “Don’t mind jealous behaviors so that you won’t get hurt and won’t hurt others. Just focus on your business,” she added.

All teachers are from Europe and US with minimum 15 years experience in culinary arts. It's not exactly a cheap school :). Classes are also limited to 12 students, with individual kitchens and they are also of international standard.

Now I know nga-a Sarangani Bay ang gina gamit sang Green Mango & not from local bangus producers diri sa Iloilo. Ang bangus sang Sarangani Bay, wala himbis. :lol: Usually kung magbakal ka boneless bangus wala na gina himbisan. Pero ang iya sang Sarangani Bay, boneless na, wala pa himbis. :okay: I guess mabakal naman ako liwat sa sunod sang ila boneless bangus, paborito ko nga da-an ang panit sang bangus. :cheers:

^^ kung sa SM Supermarket ka magbakal bangus, pwede mo man pakwaan sa ila hasang and himbis... its a free service.. pare-pareho lang man price nila sa wet market and manami kay limpyo na ya ang fish.

Kung magbakal kami da isda gina palimpyohan ko. Usually gina bakal da namon sang una boneless bangus nila, okay man. Pero kung boneless bangus wala sila ga himbis na. :ohno: Kay daw ka fragile na sang unod sang bangus kung ila pa i-himbisan. Unlike sang iya ka Sarangani Bay nga boneless bangus, firm pa ya guihapon even after na himbis.

Yup,Try Me is one of those homegrown that was really BIG, I mean at it peak it has around 7-9 branches I think. :)
I missed their foods. Sigh! :ohno:

I was in Iloilo City recently to speak at the Tourism and Hospitality Students' Congress Nationwide Caravan - Iloilo Leg. As always, food tripping was also on the agenda! It was recommended that I try out Carlitos Restaurant which comes from the owners of the Original Biscocho Haus.
The original branch of Carlitos Restaurant is along the National Highway in Pavia. But they opened a new branch beside the Biscocho Haus in Jaro.
They serve some local Iloilo favorites. But the menu choices are plentiful since they also serve pizza, pasta, meats and seafood, burgers, sandwiches, breakfast and dessert among others.

I tried out their pizza best-sellers: Carlitos Overload Pizza with everything on it, and Teresa's Spanish Pizza, with Spanish chorizo on mozarella cheese. Both were really good!
For the local food, we had Teresa's Special Efuven (egg noodles with pork and vegetables), and their Dinuguan which is served with Puto Manapla. I also tried out the Carlitos' Steak (beef tenderloin served with a special steak sauce) and the Fillet Steak (which is seasoned with herbs and spices and covered with a creamy crabmeat sauce).

For dessert, I highly-recommend the Butterscotch a la Mode (which is the famous Biscocho Haus butterscotch topped with vanilla ice cream and their homemade custard sauce) and the Banana Fritters (their version of turon but served with their really rich homemade custard sauce).

After dinner, I walked over to the Original Biscocho Haus store to buy goodies to take home. On top of the list was butterscotch. I got introduced to this really yummy butterscotch way back in high school and I've been a fan ever since. Aside from the original flavor, they've innovated and created some with dried fruits such as prunes and mangoes.
Biscocho is another main product. That's why they're called the Biscocho Haus! They also have the Ilonggo favorites which include barquillos and piaya. I was actually amazed at the variety of products the Biscocho Haus now produces.

It wasn't mismanagement ang nagpa-close sa Try Me. If I remember it right... it was the Union . Remember they are getting bigger at 7-9 branches at that time. Though I have a hard time remembering it one by one. :bash:

May ara man Carlos sang una sa atubang sa DB Ledesma St., nangin CICADA restaurant pa sya gani at one time.

Hmm maayo gid tani to restore the old CBD and with it the OLD Iloilo restos or even Stores... kay its like travelling back in time.... siguro kung makabisita ang mga old folks they will be moved to tears... I mean its like they are young again. :)
And they will remember whats it like... daw trip down memory lane. Mas gusto ko nga amo ini set up plus some new restos/coffeshops to complement the old CBD. Tapos pedestrianized ang iban nga areas. Deym!
Basi ako man maluha-luha kung makita ko kag masimhutan ang Old Iloilo. :)
