inihaw na pork/pata
(grilling gives it a distinct flavour
though its CHOLESTEROLIFIC mas masarap ang taba nito for this recipe just like sa sinigang)
kadios (soaked in water)
batuan (or any pang asim like sampaloc/sinigang mix)
langka cubes
kamote leaves (optional pero mas okay pag meron :lol: )
salt to taste
Boil langka, kadios and baboy until tender. DO NOT ADD "pang asim" if langka is still "hard".kadios will give the broth a purplish color while langka will make it milky.
When tender, adjust flavour with salt and pang asim (dont make it as sour as sinigang though. just add something to make it a little sour)
Add kamote leaves
its just as simple as that

One cannot be truly called an Ilonggo if he or she does not appreciate food, good food at that. Ilonggos' tongue for good food can be reflected in the many restaurants mushrooming every corner of Iloilo City.
Ilonggos are known for their passion in cooking good food and preparing sumptuous meals. Indeed, there is no denying that good food is what Ilonggos crave for when they go to their favorite restaurants. Even in their homes, one will observe how meticulous a typical Ilonggo family prepares their food—it would always spell a delightful meal.
Iloilo's local specialty of course is still the famous La Paz Batchoy. Nothing beats Iloilo City's original La Paz Batchoy, the city's trademark of what Ilonggo food is all about.
Deco's La Paz Batchoy offers really affordable and mouth-watering batchoy prices ranging from P45-55. These are the Special, Extra special and Super special batchoy One can also choose from noodles of meke, miswa or bijon. It goes well with puto manapla at P3.50/piece, pandesal ni Pa-a at P2.50/piece or pre-war pandesal at P1.50/ piece.
For tourists who want to have a taste of Ilonggo cuisine, there is still the famous native lechon chicken of Tatoy's located at Arevalo or Nes 'N Tats along Diversion Road, Mandurriao. For those who are fond of seafood with a nice beachfront, Breakthrough Seafood and Restaurant in Arevalo is still the best place. Located at Guzman St., Mandurriao, Tib's Rock's beef tapa, sizzling talaba (oysters) and T.R.S. (Tib's Rock Special baked oysters) are must eat specialty of this much affordable and relaxing restaurant.
Panaderia de Iloilo's pancit molo and Dac's kutsinta are still a must-try Ilonggo homemade food located at Arevalo. Jiecel and Thea's siomai, siopao and lomi are also the best home made food restaurant located along the old airport in Mandurriao. Roberto's siopao though is already an institution when one would talk about the best siopao in Iloilo City. So never leave Iloilo City without tasting Roberto's siopao located at J.M. Basa Street or even the Dinagyang siopao with branches in Arevalo and Marymart mall.
Afrique's Restaurant is popular among Ilonggos who are pizza and pasta enthusiasts. It has branches at the historical Macavinta house located at Gen. Hughes, City Proper, Desamparados, Jaro and right outside Hotel Del Rio, along General Luna Street. Westown hotel's all meat pizza is a must taste. There is also the Dos Maria's Pizzeria along Gen. Luna Street which is open until 2 AM which has a variety of pizza choices.
To those who are chicken inasal or "sinugba" (grilled) freaks, there are the Barrio Inasal located at Aurora Subdivision and Jaro, Mang Inasal at almost all malls in Iloilo City and Jo's Inato with a branch at Jalandoni, Jaro. Buto't Balat's specialty which is the "halang-halang" (a Cebuano word which means spicy), an appetizer made of ground chicken with spices and fried potato chips still stands as the restaurant's most ordered food.
Bigby's Restaurant at Smallville Business Center (SBC), Diversion Road offers the best emperor caesar's salad, Mexican soup (only on Wednesdays), Titanic Treat (30 scoops of ice cream in a bowl and the catch is, if you finish the whole bowl in 5 minutes, the Titanic treat is on the house) and organic strawberry tea. These are all favorite treats to those who want a quiet, relaxing ambiance. Bigby's is indeed, a cozy place to dine with family and friends. The waiters and waitresses are friendly and good service is never a problem.
JD Bakery and Restaurant caters to those who want to enjoy good and quality food but at a cheaper price. JD now has expanded and offers a variety of food. From short orders of its pioneer meals like baked macaroni, chicken ala king and palabok, JD now is serving delightful breakfast, lunch, dinner and even desserts and beverages.
Meat lovers can try Bourbon's honey mustard braised pork or baby back ribs. The serving for the half-rack alone for baby back ribs is big enough for 2 people who have large appetites. Also, Bourbon's seafood chowder and fish and chips are a must-try as well as its side dish of mashed potatoes. For burgers with really good patty and uniquely Ilonggo, Glor's Hamburger at Ledesma Street is a must try. They grill their patty and they do not use oil. Its double cheese burger is still its top seller.
For coffee lovers, Iloilo has its own version of Starbucks—Bluejay Coffee and Deli. It has branches at Smallville, Diversion Road and main branch along Gen. Luna Street. Grand Dame Hotel's ambiance is a thumbs-up and it has also good, affordable coffee and tea served in french press. There are also other good alternative coffee shops which are located inside a mall in case you are doing your shopping spree, like Figaro, Pancake House and Vienna Kaffeehaus (Vienna has another branch in Robinson's mall) in SM City.
Buho Bakery has the best pancho bread in town. Pandesal ni Paa at Jaro still has the best pre-war pandesal and pan de siosa. Tibiao Bakery's unique bread which is called teren-teren is also a must try. Tibiao Bakery has branches in Molo, Jalandoni Street and Gen. Luna Street.
For tourists who are in a hurry and who want to bring pasalubong for their family and friends, Wewin's biscocho along Taft North, Deocampo's barquillos at Jaro, BB's garlic peanuts which you can buy at Deco's Pasalubong Center at La Salette Bldg, Valeria St., JD's meringue and ciabatta at Gen.Luna Street are sure food gifts.
Ilonggo cooking includes the famous KBL (kadios, baboy, langka). Also, the tasty dried fish which are called uga, tabagak and uga-balingon usually served with eggs during breakfast are uniquely Ilonggo food.
There are also must-try restaurants which are not Ilonggo like Bavaria, a German restaurant famous for its sausages and really tasty pepper steak. Spezi, Bavaria's own non-alcoholic concoction is also a must try. Peppy Thai Restaurant is also a must try Thai food restaurant located along Sambag, Jaro as well as Kim's Bob restaurant's bibim bap located outside Robinsons mall along Quezon Street.

this issue could almost well be the most "exposure" ive seen regarding iloilo on any "food" magazine. this really strengthens iloilo's position as a food haven since even though we may lack some attractions but when it comes to food, we have more than enough.

SEAFOOD batchoy is now cooking in Iloilo City for the first time.
Federico Guillergan, 65, of La Paz district and owner of the famous Deco’s Original La Paz Batchoy, has launched his seafood batchoy recently.
The newly-introduced soup/food is made of meke noodles, fishballs, tuna flakes, crab meat, squid rings and shrimp strips.
Guillergan started his original menu in 1968 and soon became a toast among the locals who want hot and tasty soup that will satisfy a hungry stomach.
La Paz batchoy was born and soon found its way to other restaurants and stalls, even in Metro Manila, to cater to Ilonggos and other Visayans who crave for a hot soup/food.
Deco’s original La Paz batchoy has three branches in the city conveniently located in shopping malls.
Seafood batchoy will soon hit the branches Mar. 17 in time for the Holy Week celebration as religious Ilonggos shun from meat and pork.
With additional ingredients, customers will just pay a little more of the original batchoy to feast on the seafood-flavored one.

My introduction to Ilonggo cuisine took place in 1978, when, upon graduating from UP, I set out for Iloilo for an extended vacation with the hope of capturing its landscapes in paintings for my first ever exhibition in mind. I stayed with my aunt Dra. Alicia Tayag Saldaña and her family, who is a transplanted Ilongga herself, having married Ponciano “Pons” Saldaña, an ex-basketball Olympian star (together with Carlos “Caloy” Loyzaga) in the early 1950's.
Having lived in Angeles City all my life, while considering studying in Diliman, Quezon City, only a transient period, I was steeped in Pampanga's culinary traditions. Lacking a seacoast, Pampangos looked to its fertile land and its freshwater from the Rio Grande for sustenance. Generations have subsisted on plentiful homegrown and often wild-gathered food like tugak (frogs), kamarù (mole crickets), bulig (mudfish), itu (catfish), ulàng (crayfish), and dumarà (mallard ducks) as staples. Pampanga to me still means all these foods, and a lot more - its egg and carabao's milk-based sweets (tocino del cielo sans rival, tibuk-tibok), its fermented sauces (balo-balo, burong isda, taba ng talangkâ), and its preserved meats (tapa and tocino).
But I found Iloilo to be another world entirely - a place where the cuisine reflected not only the province's coastal terrain but also the famously hospitable sweet nature of the Ilonggos. I remember quite vividly the time my aunt drove me all the way to Tiolas, the last town on the border to Antique, visiting the historic churches of Tigbauan, Miag-ao and San Joaquin. We would stop intermittently as we came across roadside vendors and food hawkers along the way. I had my first taste of bingkâ (that's bibingkâ to us Luzonians) in Oton; inasal na manok (barbecued native chicken flavored with lemongrass and achuete) in Villa beach; and a deliciously grilled fish steak oozing with fat called sibingan, peddled by an elderly lady as we were nearing Tiolas. It was clipped between two flat bamboo sticks, much like an elongated clothespin. As I bit a morsel off the somewhat charred fish steak, oil dripped down my lips. It was a belly portion of what I was to learn much after - a blue marlin. It was still unheard of in Manila then, but the experience was indelibly etched in my taste buds.
Upon reaching Tiolas atop a hill, we stopped by this karinderia nestling on a precipice with a spectacular view of Guimaras Strait. Perched on the rocks below was a flame tree in full bloom, solitarily and bravely, constantly being battered by the breaking waves. Here, I had my first fill of what was typically daily Ilonggo fare: kadios kag pata (black-eyed beans with pork trotters); ubad (pith of the saba banana trunk) cooked with native chicken and green langkâ; takway adobado (gabi root) simmered in vinegar and guinamos (Panay island's distinct dark shrimp paste); and guisadong pancit Efuven (sautéed egg noodles). Simple and honest food but made memorable with the constant sea breeze and sound of breaking waves.
On subsequent repeated forays, my aunt took me and her brood on boat rides to this uninhabited islet Naburot, just off the southwestern tip of Guimaras. On our way to Fort San Pedro, where we would take the boat, we would pass for the lumpiang ubod she had pre-ordered; buy several kilos of lechon (redolent of its lemongrass stuffing) in Oton; drop by the central market to pick-up a sack full of talaba (oysters), diwal (razor clams), pitik-pitik (rock lobster tails) or kasag (crabs); and a tiklis full of the famous sweet Guimaras mangoes. In her inimitable way, my Tita Alice had retained the Pampango flair of preparing lavishly, most especially for family. Our makeshift picnic table on the island was always groaning with food. Isla Naburot, the world-renowned island resort as it is known today, was yet in the offing then, and came about as a natural consequence of these outings.
Two soup dishes that are equally famous and have become popular even beyond Iloilo's border are pancit Molo and batchoy. Both of Chinese influence, pancit Molo is actually a light chicken-based soup with pork-filled wonton thrown in. It was named after the district of Molo, that used to be the parian or Chinese enclave during the colonial times, where this snack food was sold by Chinese hawkers.
The batchoy on the other hand, is a bit more complicated. It first appeared in the wet market of La Paz district in the 1930s. It may look like mami to the rest of us, but that's where the similarity ends. Its rich broth has been steep boiled for hours with soup bones, meat of pork and beef, innards and guinamos for flavoring. A serving consists of a large bowl of thin noodles, topped with slivers of the meats and innards cut with a barber scissors (one would hear its constant clacking), then ladled with the piping hot caldo (broth), and finally smothered generously with crushed chicharon and fried ahos (garlic). I've tried one version with a spoonful of beef bone-morrow and native powdered msg added to it. Though it tasted heavenly, it's a hellish nightmare for the cholesterol and uric acid conscious.
And on a sweet note, the Panaderia de Molo, the oldest bakery in the south, continues to bake its traditional delicacies for over a hundred years. Its biscocho, hojaldres, galletas, broas, and rosquetas have become favorite pasalubong packed in their signature round cans. Another Ilonggo product of note is the pinasugbo (thin slices of green saba banana fried and made chewy with caramelized sugar) that will surely sate any sweet tooth person.
Needless to say, I got hooked on Iloilo, its cuisine and its hospitality that I keep coming back for more all through these years. And oh, by the way, regarding what I originally set out to do, after my four months stay with my aunt, I succeeded in painting enough work for an exhibit, and a lot more.

originally TEDS ang located in front of SM delgado but now may DECO's na :lol:
we should be open for chages and personally i make it a point to try these new things para kung mauna ako - i can share it kag indi ako maulihi sa balita :lol:

The Dinagyang Festival was very excelent and everyone have a great time. The Illongo food was super delicious.Everyone who have experienced everything in iloilo and panay would like to go back again next year.
I have read one article here not way far back from these postings regarding a landfill or a dumpsite. I hope it won't be too close to the airport coz, we will be looking at all sorts of trash before landing.So i hope our engineers or whoever saints sitting in thier city throne would have a better common sense wherever they want to build them far distant and not making our province nasty and trashy.

I was guessing that one of you must be residing close to the town of Cabatuan.I am so proud to say again that all the westerners who went with me had a best wonderful time.Some of them even took the actual kitchen recipe of the tinuom in Cabatuan,pancit molo, and Batchoy in Lapaz.I am just so curious if they're gonna start experimenting of cooking them and i wonder what would it taste like for first timer.,otherwise i'll be checking them over at weird foods glossary.
Iloilo and the towns close to the airport have a lot of big to huge potentials in terms of business and more income for the province.The only thing that everbody is asking about if where and how the province promotes,show and make it attractive to the interest of investors and business enterpreneurs.We could not count how many hundred times we drove from Cabatuan to san Miguel and Alimodian and in every place of the barangay everyone will say "this is the best place for......" or" This place is a great place for ......" or I could rest my legs and straighten my knee while looking down the airport while running my business.
But i have nothing to say, coz in my mind whatever and whenever the government in Iloilo can remember or have the gesture to do those improvements. So i thought IN SHALLAH....
But for now, since everyone seemed to be or kinda addicted to the smell and tastes of illonggo food and hospitality, it seems like everyone is making thier reservations a year ahead.Everyones favorite: ibos with yellow iloilo mango,alupi,suman, moasi,molasses or polot,balensyana,sotangon, pansit yellow canton,pansit molo,pancit batchoy in lapaz,arroz caldo with san miguel beer,beef caldereta,linaga longbone,and all that everybody keeps bragging about that could not say how is it called.Also the coke in a bottle taste really good than the ones we had in cans.
Everything is great in Iloilo and pls dear God pls don't let anybody change anything about Panay and the Illongo.

Actually its not that bad. I tried some seafood noodle soup in a Chinese restaurant here with fishballs in it and it actually enhanced the flavor as long as its done right.

I got curious with tortitas after being mentioned (and with recipe too) in FOOD Magazines March 2008 issue. Though the recipe's accompanying photo showed a very ordinary looking bread, still I set my eyes for one. Finally, I was able to get one from Tinapayan. Curiosity satisfied but at the same time dismayed since their (Tinapayan's) version was just like ensaymada (dinner roll topped with butter and cheese). Well, I'll pay Pananderia de Molo a visit soon.

with all these local chicken houses (mang inasal, andoks) plus fastfood (kfc, jollibee) then carinderias and foodstalls/foodcourts then restaurants plus household consumption, how much chicken is being consumed or being "used" per day in iloilo city alone?
we could be on top when to chicken consumption density or something :lol:

We just seem to want more despite the mushrooming chicken restaurants in the city. To meet this clamor, a new chicken haven has opened and it's called Fort Manokan, owned by business couple Marisse and Trix Gorriceta.
Fort Manokan offers paa, pecho, iwi, baticulon, atay, corazon and chicken skin. They also serve kansi and pork barbecue.

So naturally I hunted the place since then but it was only today that I had the courage to actually go inside. My plan was to have two burgers to go but after knowing that one of my orders would take 15minutes, I decided to have a snack.

by the way guys, i forgot the name of the resto near SM delgado, it's a very nice resto also and the service is excellent, very nice staffs. it's a new garden resto there with resort theme. the food is also nice that's why it's always full of customers everytime we go there. i've eaten there 2 times last nov.

Several times, I keep on rambling to some friends that Bacolod, unlike Vigan Iloilo or Baguio, is not rich in touristy sights. We only have the Cathedral, the Plaza, the Capitol and some few others. All the rest it’s outside of the city already. But one thing why people continue to come in droves to Bacolod is because of its food. Bacolod City in Negros Occidental may not have a large number of places to visit, but has more than enough kainan, foodshops and retaurants to satisfy all your cravings.

ok thanks must try that dulgies and zavore next time then when i'm in iloilo. the food in butot balat is nice and for me quite better actually than nes and tats there near sm city. i hope bb can expand kay ka limited sang number of tables nila pero galeng daw wala na da space...sa nes and tats damo langaw didto and location is not really nice too since it's an open resto and very near the road. or maarte lang ko ya siguro:lol:

According to legend :D, La Paz Bacthoy's birthplace is at the marketplace itself. Most of the people say that it was Deco's who is the "original" and some say they aren't.
But the receipe did started in La Paz, Iloilo. :)

Criselle EspinosaIt was indeed a summer filled with fun, creativity and cooking when kids ages four to 12 years old completed the 1st Culinary Kids Workshop held at Maki Japanese Restaurant conducted by Pauline Gorriceta-Banusing.
Kids learned how to create food, hands-on. On the first day, it was "Take Me To Europe" where they made crepes, French toasts, pizzas, white chocolate clusters and banana popsicle sticks. There was "Mexican Day" where they enjoyed Mexican Burritos, Mexican Spaghetti, Guacamole and Corn Dogs. It was challenging also for them to make the Chicken Cordon Bleu, Sheperd's Pie, Jamaican Beef Patties, Chocolate Chip Cookies, Muffins and Animal Cookies but they all passed with flying colors. Their cheesecakes were very, very delicious and can even pass for cakes sold at pastry shops. They made Toblerone cheesecake, Blueberry Ripple Cheesecake, Rocky Road Cheesecake and Cookies and Cream Cheesecake .
During the graduation rites of the Culinary Kids held at the Iloilo Business Hotel, parents, grandparents and friends of the graduates were impressed with the buffet spread the kids did. The kids made the food and desserts from scratch on that day and presented them in the buffet table spread. To all the graduates, congratulations!

ILOILO CITY – The influential Asian International Cuisine (AIC) has endorsed the entry of an Ilonggo caterer from Pototan, Iloilo who has been invited to participate in the prestigious Tacoma Holiday Food Gift Festival at The Tacoma Dome in Tacoma, Washington on October 22-26, 2008.
Robert S. Yeow, AIC president and chief operator of Diamonds Hotel, in a letter to the Western Visayas Caterers Association (WVCA) dated May 22, 2008, said the participation of Daniel “Danny” P. Sumagaysay to the Tacoma Holiday Food Gift Festival in October “is a strong manifestation that Asian caterers and restaurant owners are being acknowledged all over the world and are among the world class caterers and food service providers in this part of the world.”
Yeow said other outstanding caterers and restaurant owners with quality products from Brunei, Singapore, Malaysia, Thailand and the Philippines might also send entries in the event which coincides with the festival’s 26 anniversary.
Sumagaysay, a former overseas Filipino worker in Riyadh, Saudi Arabia, and owner of Danny’s Restaurant and Catering Services, said he will include in his exhibit native foods and other gourmet products not yet shown in other food and Gift festival in Europe and the United States.
Iloilo Governor Niel D. Tupas, Sr. earlier said he will support Ilonggos that have excelled in international competitions and exhibits even as he praised them for giving the province a positive publicity despite the current economic woes in the country.
This year’s exhibit will focus on arts, crafts, gifts, gourmet food and entertainment and is reputed by organizers as “Our Biggest Show Ever! With Over 660 Exhibits.”
Show Dates and Times: Oct. 22nd Wednesday 11am - 9 pm Oct. 23rd Thursday 10am -9 pm Oct. 24th Friday 10am-9 pm Oct. 25th Sat. 10am-9 pm Oct. 26th Sunday 10am-6 pm.

She could have been Iloilo's next councilor, considering the best plans for the city to become the "next big thing". She could have been a published psychologist, whose books on Ilonggo psychology are read in universities. She could have been an optometrist, probably examining the eyes of this writer.
If fate, on the other hand, gave in to Pauline Banusing's childhood dreams, then Iloilo City could be nothing without her "children": Al Dente, Villa Regatta, Maki and Freska. Thanks to a tiny Italian restaurant in Tivoli, Italy; Banusing's sleeping passion for culinary arts was awakened.
"From then on, I realized I wanted to cook and there was no turning back," said Banusing, the daughter of the late Pavia Mayor Felix H. Gorriceta Jr. and Dr. Sandra Sarabia of Sarabia Manor Hotel and S.S. Gorriceta Jewelry.
Although she was trained for Italian Cooking and International Cuisine at the Culinary Institute of America in New York, Banusing decided in 2005 that to be a good cook, she has to rediscover the beauty of Ilonggo cooking.
"I have to go back to my roots and be real. Learning to cook Ilonggo food was a humbling experience," she said.
According to Banusing, Ilonggo food has an influence of the Spanish and Chinese cultures, both of which are strong in Iloilo City. But she believes that it is the city's vast source of quality seafood that makes Ilonggo cuisine stand out from the rest.
After embracing the art of Ilonggo cooking, the Mandarin Oriental Makati invited Banusing to guest in the Ilonggo Festival in 2006, sponsored by the Filipino Heritage Group.
"In 2007, they invited me again," she added. In that same year, her brother, Atty. Mark Gorriceta, encouraged her to conceptualize great Ilonggo dishes for Freska- the best of Ilonggo Seafood.
"It is through Freska that we make Ilonggo cuisine hip and globally appealing. It is the traditional Ilonggo cooking mixed with a twist in the presentation that gives Freska a unique selling factor," she related, discussing more on her most recent "child." With her husband Gus, her first venture was Al Dente in 1999.
Putting tradition and innovation in Ilonggo dishes is Banusing's incomparable asset. "I don't want Ilonggo cooking to be a dying art. So I always try to add a twist to everything and make it more appealing to this generation," she said.

Tinapayan's special ube and cheese ensaymadas are always a good buy for me. A little expensive (at P22) compared with other local commercial ensaymadas but it worth more than the price. A single bite would often trigger my appetite for finish at least two of these yummy treats.

The Solid in Vegetable Oil/Water variants are my favorite since you really get your money's worth. I delight myself in experimenting on very simple dishes with a can or two.
Among them is my adobong tuna sisig. Saute tuna then add soy sauce, vinger and pepper. Cook until almost dry then add oil and generous amount of chopped onions.

My favorite is tuna sinigang. Just boil the tuna in half cup of water then add sinigang powder and kamote tops, kangkong leaves or even pechay.
Though at times, I just eat it plain or mixed with vinegar.

Located at the entrance of the ICCHS this was, my ultimate childhood snackhouse. Spaghetti, hamburger and jelly roll made up my orders almost everytime I was there.
OAK BARREL
Located in the old La Salette building, this batchoyan got its name from the "oak barrels" that were used as stools. It was also a convenient place to stay when waiting for our jeepneys to fill up.
NATS
Also located in the Old La Salette building, I considered this before as runner up when it comes to batchoy (after Ted's). Maybe because I was overwhelmed by the very generous toppings (esp chicharon and liver).
MANSION HOUSE
Located along JM Basa street, this used to be the ultimate restaurant in the city. Serving chinese food, this was a special occasion restaurant for the family. Their pancit guisado and morisquita rice never missed our table.
FATIMA
It was their spaghetti that always brought me here and the probably the only memory I got since I cant even pinpoint where it was originally located along Calle Real.
SMOKEY'S
Its hype didn't last long but I was one of its regular customers in their branch beside Amigo Plaza. It was always wrap around dog for me after realizing that their hot and spicy hot dog had tons of chopped onions.
BURGERBELL
A favorite weekend hangout during my highschool years since it was located in the newly opened Marymart mall. Burgers were ok but it was the ambiance that made its mark among the crowd.
TRY ME
Surely it was built as an ice cream house but it was their pancit lomi that made me a regular customer. Of course how can I forget those make your own and eat all you can halo halo during summer.
FELY'S
Catered to CPU students and during its heydays it was where my after school treats always happen. From having a spaghetti and/or hamburger to buying some pasalubong to bring home, it was an all around shop.

singina tani but then i found out na yung sampaloc mix was with MISO. and i dont like that one. i like miso pero no the one na pre mxied with samplaoc powder. so nakakita ako sang spaghetti sauce and voila!

another favorite quick recipe of mine
add century tuna solid to mixed vegetables (carrots, corn, peas, bell peppers) and season with soy sauce, salt, pepper OR those all in one panggisa.pwede man may butter than add rice :banana:

The Filipinos imbibed, imitated and improved the cooking styles of their colonial masters. Thus, Filipino cuisine reflects its culture and history. As the local saying goes, Philippine food was prepared by Malay settlers, spiced by the Chinese, stewed by the Spanish and hamburgerized by the Americans.
Adobo
is the result of the eclectic influences, both regional and historical, that come together in many Filipino dishes. ‘’Philippine cooking probably reflects history more than a national cuisine,’’ says Cecilia Florencio, a nutrition professor at the University of the Philippines in Manila.
Even before the Spaniards came, early Filipinos cooked their food minimally by roasting, steaming or boiling. To keep it fresh longer, food was often cooked by immersion in vinegar and salt. Thus, early Filipinos could have been cooking its meat in vinegar, which is the basic process in making adobo.
From the Chinese traders came soy sauce and thus this ingredient found its way into the meat being cooked in vinegar. Salt was slowly taken out from the recipe and replaced with soy sauce. However, there are adobo purists who continue to use salt in their adobo marinade.
The colonization of the Philippines had a big impact on the evolution of Philippine food, and adobo was one of those Spanish-inspired recipes, along with others like morcon, paella, embotido, pochero and caldereta, that have not only survived hundreds of years of popularity but have undergone infusions of other ingredients.
The Spanish influenced our local cooking with their marinades and sauces. Some say that adobo is related, albeit distantly, to adobado, a tasty Spanish concoction that consists of pork loin cured for weeks in olive oil, vinegar and spices and simmered for several hours. But the recipe is quite different.
The Spanish word adobo means seasoning or marinade, according to Wikipedia. The noun form is used to describe the actual marinade or seasoning mix, and the term used for meat or poultry that has been marinated or seasoned with the adobo marinade is referred to as having been adobada. For the grammarians, this is a first-person singular present indicative form of adobar, a verb meaning to marinate.
The old Spanish word adobar could be where the early Filipinos got the word for their most famous dish. In Spanish cuisine, however, adobo refers to a pickling sauce made with olive oil, vinegar, garlic, thyme, bay leaf, oregano, paprika and salt. The word adobo is also used in Mexican and Caribbean cuisine. The Mexican adobo refers to a piquant red sauce made from ground chilies, herbs and vinegar sold canned or jarred. The Caribbean adobo usually refers to a dry rub of garlic, onion, oregano, salt and pepper.
But the Filipinos’ adobo is the most famous the world over. Filipinos selected their favorite condiments and spices -- vinegar, soy sauce, garlic, bay leaves -- used them to stew chicken and/or pork, and gave it a Spanish name.
This just goes to show that no matter how many cultures may add to the Filipinos’ range of food cuisine, you can’t keep their culinary identity down.

Puta is whore; *marie-con* is 'homosexual.' And I am sure the 'puto' name of the Filipino delicacy is rooted in "puta;" but of course given a playful slant to it.

Goldilocks Batchoy made sure that if they immitate Batchoy, it should be distinct....they are careful, that is why they made it "Tagalog Batchoy" maybe out of frustration of getting the recipe from usually secretive Ilonggo cuisine afficionados. :lol:

* tagalog batchoy if im not mistaken has dugo cubes. so its very far from its la paz coutner part. another thing is that batchoy is used to describe the dish made from "scrap veggies" esp from garbages. thus the term mambabatchoy.seen this sa i witness if im not mistaken. so as much as possible we should always carry LA PAZ :lol;
* so lets see JOLLIBEE, MAX'S, GOLDILOCKS, who's next? indi gid man mabudlay i decode ang recipe sang batchoy ah. just order and let your tongue do the decoding. besides damu man online resources for this one. pero cguro their main problem/dilemma would be being compared to the orig la paz batchoy taste. i;ve tried btchoy of villa regatta and it sucks :lol: definitely thumbs down for miss pauline :lol:
