i'm a graduate of BS commerce major in entrepreneurship. gusto ko sana magtayo ng resto kaya lang kulang pa ang aking kaalaman. saan ba may magandang culinary school sa makati or the fort?

College of St. Benilde has a Center of Culinary Arts, I believe.

Before, when I was there, the in demand cooking instructors were Heny Sison (for baking) and Sylvia Reynoso Gala. Maya Cookfest also does cooking instructions. I wish I had taken those when I was in Pinas.

I've been in two culinary schools (I belong to the cooking club in Ateneo, pero I don't cook. I just eat.)

First one's ISCAHM (Intenational School for the Culinary Arts and Hotel Management). It's just across the street from Ateneo. The school looks okay, but they have foreign chefs as professors. Maganda backgrounds nila, I must say.

Second one's Enderun, a culinary school associated with Les Roches, a Swiss hospitality academy. The campus is small, but aesthetic-wise, breathtaking! They'll be transferring to a new campus in McKinley Hill, FBGC. I saw plans and renderings...ganda talaga! The co-owner is, I think, a Spanish-Filipino. He studied briefly in Ateneo Grade School eh, before going abroad. The other owner is Malaysian. He looks like the guy who played Pontius Pilate in The Passion. Pero he's accomodating and cheery, perhaps because he's a hospitality graduate.

that's good kung lilipat ang enderun sa fort. at least dumadami options ko.

hindi naman talaga ako passionate about cooking pero gusto ko parin mag aral para mas equipped ako magtayo ng resto.

i would say it is one of the best in the country... pwede ka mag OJT sa Intercon Makati, Shang Makati, Shangri-la Cebu...

insured ka pa to work in LONDON! dahil sa internship program... ASTIG!!!!!

Enderun Colleges Inc. cofounder Jack Tuason expects to move the culinary school campus from its current site at the Ortigas Commercial Center to a two-hectare property in Bonifacio Global City by end-2008.

Opened in 2006, the school offers a four-year Bachelor’s degree in international hospitality management, major in either hotel administration or culinary arts, at US$6,000 a year for Filipino students and at US$8,000 for international students.

A Chai tea latte at 7 a.m., a toque at eight and a hearty buffet at 1 p.m.. This used to be my Saturday morning ritual for 12 weeks when I was enrolled at the International School for Culinary Arts & Hotel Management.

No, I’m no chef. I just took up the school’s Fundamentals in Culinary Arts class. For five hours every session, we, the students, were educated on pure hands-on kitchen work that covered the basics in culinary arts, like knife skills, salads and dressings, sauces, soups, pasta and rice, Asian cooking and cooking methods. And yes, we got to eat everything we cooked after class.

So, how good is this school, you ask? ISCAHM began operating in December 2003, in line with the vision of hotel executive Hans Schallenberg and chef Norbert Gandler of maximizing the Filipino’s inherent talent in the culinary and hospitality fields.

“Filipinos, in general, are very interested in culinary arts and they actually have the talent, but it needs refinement and of course, proper training. What I only notice with many chefs right now is, they have this tendency to go very bold with their dishes. They love experimenting and they seem to be forgetting the proper fundamentals or the very basics in cooking, which actually are the most important of all,” chef Gandler, whose sinful pleasures include Filipino delicacies like kinilaw and bulalo, shares his insight.

With a team of international hotel executives, executive chefs, and pastry chefs of five-star international hotel chains with no less than 15 years experience, the school has become increasingly popular, attracting even students from abroad. It plays host to students from the United States, Korea, Venezuela, France and South Africa.

From hobbyists to culinary professionals

Many of the graduates are now successful culinary professionals, some are employed in top hotels like Burj Al Arab (the first and so far the only seven-star hotel in the world), Wynn Hotel and Casino Macau (27 students are part of its opening team), Four Seasons Maldives, Ritz Carlton Union Bay, and Emirates Palace.)

Obviously, a short course won’t land you a prestigious job. The reason I signed up for the Fundamentals course was simply because I like cooking and learning from the experts would help me streamline my kitchen skills. I assume the same for the notable personalities who were my classmates at ISCAHM, such as Ryan and AJ Eigenmann, Marvin Agustin and Cherie Gil.

“Almost everybody enrolls here at ISCAHM, from hobbyist to homemakers to professionals like doctors, nurses, lawyers, etc., male and female alike. We even have people who have been working in the industry for quite some time; basically they come here to be more professional in the things that they know already or to update themselves with the current trends,” chef Gandler explains.

Newfound appreciation

Still, it’s not only for the Stepford wife who aims for perfection. I believe it is a sense of culture that every human being should possess. The Fundamentals course proves useful when I’m dining out. I have a newfound appreciation for food and the process it takes to make them. Having the knowledge made me more particular about the presentation and texture of the food being served. I now know when my carrots are the wrong size (cooked vegetable sidings are supposed to be cut in Macedoine, one-cm cubes or Jardiniere, 0.5-cm cubes). I guess that makes me a bit of a food expert now, doesn’t it?

Further, many entrepreneurs and cooks in the small-restaurant business are taking up short courses to hone their culinary know-how by being imparted with industry insight and important information in handling and serving food.

But for the coveted title of executive chef in a Hilton Hotel, the 12-month diploma course plus 2-month internship program is the way to go. Although this can get pricey (P270,000 to be exact), it’s well worth it if your dream is to climb up the culinary food chain.

Says chef Gandler, “Majority are young people, from 16 years old, fresh out of high school, till about their early 20s. We also have a number of those who are college graduates, have worked for sometime and have decided to take up a second course. And of course we also have those on the mature side already. I remember having a student who was in her 50s already.”

^^my lola told me that one time when they had a party at my aunt's place over there in the US, their foreigner guests refused to eat suman and dinuguan at first coz both looked very unfamiliar to them and unpalatable, but right after they tasted it, my lola said that they got hooked

a tesda sponsored culinary training school is a good way to start your culinary career. once you get the basic skill of cooking, baking breads, cakes and pastries and get started working, you can move on to specialized culinary arts schools to become a chef such as the iinternationally known le cordon bleu or you can enrol in our local schools and colleges. those colleges and universities offering degree programs in nutrition and dietetics or hotel and restaurant management most likely have culinary arts program as well. just go check around town.

I think its now 180t inclusive of all ingredients needed and instructional materials and modules excluding uniforms, knives and other personal equipments that you may eventually need like non-slip kitchen clogs, instant read thermometer, etc, etc......This course consists of 750hrs instructional and actual cooking and 250 hrs of practicum preferably in a hotel restaurant setting.......This is now one of the hottest courses to take if you love cooking, chefs and good cooks are in great demand in the tourist industry worldwide both landbased and seabased.......And you can eventually go into business on your own from coffee and pastry shops to full blown gourmet restaurants to specialty food catering......you can even be a personal chef to famous personalities from actors to professional athletes to "politicians"......In order to be admitted at ICA, you should also pass a medical exam and be reasonably fit to stay on your feet for a minimum 4 straight hours without sitting, able to carry heavy pots and pans, be a self- starter and be able to work under pressure with a minimum of supervision. Baw daw ka lawig gid ba......this in a nutshell is what a culinary career will entail.....hope this helps......:cheers:

MOST's Batch 18 goes Indian

BATCH 18 of Most Institute Davao had its simulation exam last September 25 and the eight culinary students who were subjected to a test that day came to the kitchen well-prepared.

The members of Batch 18 served Indian cuisine and were subjected to a critique by the chefs in attendance -- Gemma Herradura, Alex Bumanglag and Jimmy Marquez -- and got good grades from them.

The culinary students had chicken tikka masala with side dish of panir as the main course. They also had chapati bread in yogurt dip as appetizer, dahl soup, gulab jammun for dessert and mango lassi as a perfect cooler.

Indian food is characterized with spices and herbs. The chicken tikka masala is an Indian food, but it is now also a true British national dish.

Everything was really Indian as the setting at the dining room was also Indian. The students, too, were in Indian attire.

The chefs made their assessment after the hearty meal and Chef Gemma Herradura and Alex Bumanglag specifically cited Batch 18 for the taste of food that was served and for maintaing a clean kitchen during the exam.

"I like the way they performed, especially in maintaining cleanliness in the kitchen," Bumanglag said.

Batch 18 is composed of Cindy Colina, Robernitto de Castro, Jessly P. Enog, Divine Grace Ventura, Arvin D. Mascariño, Aminah Yvonne Guani Ross, Analou E. Alegado and Daryl Siarot.

The students did well for this exam and they also thanked the chefs for their review of the Indian food they served, which really satisfied everyone's appetite.

IT HAS been more than two years since entrepreneurial couple Bubuy and Gene Bangayan, in partnership with gourmet celebrity chef Eugenio Ramon “Gene” Reyes Gonzalez of Manila’s Center for Asian Culinary Studies (CACS), established CACS-Davao. The culinary institute was founded to afford students from all over Mindanao actual hotel and restaurant professional services as well as food service as part of their good culinary education and training.

“CACS-Davao offers a full range of course in cooking, baking and pastry, health and nutrition, and food business management. Menu planning and wine appreciation are also part of the program. For students who wish to pursue a course in the culinary arts, professional chef-training programs are available using the best-equipped classroom in the Mindanao region with modern, state-of-the-art equipments brought all the way from Europe and the USA. A beginner, male or female, with no cooking experience is most welcome to join,” explained master chef Gene Gonzalez who was in Davao last week for a cooking demo at SM-Davao’s Entertainment Centre.

“The comprehensive training CACS-Davao is offering the Mindanaoans is a response to the growing demand for the hotel and restaurant businesses for both the domestic and even international markets,” the icon for modern Pinoy cuisine said.

Since CACS-Davao started its operations in 2007, 10 batches have happily graduated from the institute further enriching Davao’s culinary scene.
CACS’ Batch Uno, which was then headed by Davao restaurateur Baby Maceda-Montemayor as Executive Chef, then presented an unforgettable, spellbinding Legacy Buffet enhanced with the beautiful floral arrangements done by fellow Uno graduate, Charisse Puentespina, who, with the able help of her colleagues, transformed the cavernous Venue into a theatrically magnificent culinary palace on October 4, 2007. Just as spectacular that memorable evening was the haute cuisine meticulously prepared by the members of Batch Uno. Culinary dignitaries from Manila flew all the way to Davao to attend the event; and they were not disappointed at all. It was that impressive.

CACS’ Batch Cucina Cinco, then headed by Executive Chef Ana Vi Laxa Ramos, passionately expressed its culinary as well as artistic talents when it presented its own Cucina Cinco Legacy Buffet on August 14, 2008. Batch Cucina Cinco then did a marvelous job in tastefully softening Linmarr’s nondescript Ballroom with billowing white linens from wall to ceiling; with each dining table impressively decorated with floating bouquets of beautiful white Cana Lillies as designed by the evening’s event planner, Ana Vi. The delightful food that was served to the lucky guests by batch Cucina Cinco was done in the classic hybrid Filipino manner.

Last October 22, CACS’ Circulo 1910, the 10th batch to recently graduate, held its own brand of Legacy Buffet. Perhaps, as a reflection of the difficult times we are in, it was a rather simple affair without the bongga factor as compared to the previous ones I attended in the past. CACS Circulo 1910 cuisine was also on the “safe side” as described by chef Manuel “Paddy” Lascano.

“There are only 19 CACS Skills students who comprise the 10th batch. So far, this is the batch with the least number of student enrollees we have had,” revealed Agnes Ann Acena, herself a graduate of CACS Batch 8. Agnes is presently the Marketing Officer of CACS-Davao.

The almost zen-like quality (translated as austere) of the Circulo 1910 Legacy Buffet could perhaps be attributed to a designated male Executive Chef this time in the person of Alexander Diesta. The male Skills Students outnumbered the women in the batch as well. But definitely, each one shares the same passion and determination for cooking good food.

“Cooking is one sure way of expressing my love to people I care for. I am truly passionate about it,” said Francis McVicker del Rosario, Jr. who traveled all the way from Cagayan de Oro City so diligently for months to finish his CACS course. Big boy Francis, definitely the group’s Mr. Congeniality, is presently a sales representative of a CDO publishing company who plans of putting up a food catering business in the immediate future. He can definitely make it as he is a CACS Silver Medal awardee “for distinguishing himself in both culinary and baking skills; and has realized potentials in the professional levels of culinary technology.” The other CACS Silver awardees include Irene Hernandez and Alexander Diesta.

The most senior member and thus the mother in the batch is Minda Mastura from Cotabato. “As Ms. Mastura is of Muslim faith, CACS took seriously into consideration her religious beliefs. We are accommodating and respect those with other religious and cultural practices. We have had other Muslim graduates who enrolled in the past,” explained Agnes Ann Acena.

The pretty and charming Eliza Joy Balinas was all smiles as she stood by her cold kitchen station with fellow members Liezel Limjuco, Ella Melgar, Dennis Vallescas, and Minda Mastura.

The hot kitchen was manned by sous chef Francis del Rosario, Jr., Cesar de Guzman, Ramon Tubog, G. P. Menguito, Emmanuel Afable, Geraldine Zapanta and Jose Nino Bulac. On the other hand, the pastry kitchen was ably handled by sous chef Irene Hernandez, Dennis Espacio, Kerrie Cresia Ko, Grace Linda Carriedo, Bill Joshua Parilla and Leilani Ramos.

The culinary industry has never been this “hot.”

Today, it has evolved not only as a hobby but as an art and profession that has made popular chefs into overnight sensations, and even spawned a new performing arts discipline. All teachers are from Europe and US with minimum 15 years experience in culinary arts. It's not exactly a cheap school :). Classes are also limited to 12 students, with individual kitchens and they are also of international standard.

Hmmmm....how much is the tuition fee?

Yup, indeed the school will be very expensive because they are hiring all expat faculty.. How will they get the money to pay for these people?Do they see a market (students)that will sustain their operations?

Not really because those teaching are the ones who own the school. They also own a restaurant in Dumaguete. Some short courses (as short as a day to 14 days) are really affordable for those who really want to get serious into culinary arts.

Maybe through their Filipina partners. But there's a bill in Congress (I don't know if it's still pending or already approved) for foreigners to own lands here and to participate more in our economy, maybe own businesses, if they invest a certain minimum amount of money here and employ a certain minimum number of people.

Yes AHA is a good culinary school. Im currently studying in AHA. You could already earn a Diploma in Culinary Arts in six months. If you're interested naman to establish your own business,may 8-month Diploma in Culinary Entrepreneurship naman sila.

They also provide international trainings abroad lalo na sa USA.Take note, these trainings/internships are PAID! so you may actually get back the amount you've paid for. Ayos na rin, kasi you're paid while learning

I've been researching culinary schools in Manila. So far I found AHA good for the price and for the location. I like they're six months culinary course.

Centre for culinary arts manila is also nice and seems even cheaper than AHA (if you compare the six months course)

but in not really in favour of the location. Its a bit far.

Im not the one who is intending to do the course but i will be the one paying for it should it pushes through so I'm keen to know about culinary schools in Manila.

Has anyone hear of this one? I heard good things about them having lessons as low as Php1000 to PHP1500.

It’s different strokes for different folks. Innate interest, adequate preparation, commitment, perseverance and resolve play a big role in ensuring the probability of success. However, it cannot be denied that different people learn in various ways. While some prefer serious, highly academic and lengthy training sessions, others are happier when following a quick approach. The end-goal is the same: to learn valuable competencies. And, as in most fields of study, this holds true in the field of culinary arts.
Culinary programs nowadays vary to suit preferences and schedules, thus attracting an even wider audience than before. Authentic Cuisine At The Chinese Culinary Arts Center
When the Chinese Culinary Arts Center (CCAC) first opened in 1974, it was exclusively for those who could speak and understand Chinese. This was because chef instructor Liong Yu Lu felt it was in this language that he could effectively impart the knowledge to whip up authentic Cantonese and Fookienese specialties. However, due to the clamor among non-native Chinese speakers who learned about the cooking lessons, mainly by word of mouth, chef Lu eventually opened his doors to Filipino students in 1977. His wife, Connie, assisted him when cooking methods became more complex and more explanations were required.
Since then, the number of graduates has grown by leaps and bounds. The roster of graduates reads like the society pages. There are high-profile society figures, beauty queens and media personalities. Chef Lu was even featured in a television show in the early 1980s.
Likewise, restaurant owners who want to open establishments serving authentic Chinese food send their chefs to chef Lu for training and apprenticeship. At the height of the demand for domestic workers in Hong Kong, a certificate from CCAC boosted qualifications and even increased salary grades. Japanese students have also enrolled to master the intricacies of Chinese cuisine.
The two-hour sessions are intensive, but very effective, so that one can learn authentic Chinese cuisine in one to four sessions. The short courses are very enticing for food enthusiasts who follow busy schedules, and we wonder why we didn’t hear of CCAC sooner. One can only surmise that former students wanted to keep this fount of authentic Chinese cooking learning to themselves. But now, the secret is out.

Recipe For Entrepreneurial Success At Ecmi-Le Cordon Bleu, Manille
This is the Philippines’ pioneer culinary school. Fun In The Tiny Kitchen
Vicky Veloso Barrera has fond memories of learning how to cook. The fascination with cooking started at seven years old. “I remember making a banana pie once that had no butter in the crust. I don’t know how it stuck together! I liked cooking so much that when my cousins came to visit I would be in the kitchen preparing merienda instead of the garden where they were playing,” she shares in her website. From her early interest in reading, cookbooks and food, it is not surprising that Vicky in adult life is the author of several food-based books. I’ve noticed that some adults — parents and yayas — are quick to step in and take over what the child could be doing by him or herself. Remember that some children move more slowly than others.”

Cooking With Sylvia Reynoso-Gala
Believe it or not, there was once a time when a career in the culinary field was not considered as acceptable and glamorous as it is today. During that bygone time when parents scoffed at the idea that their children pursue an interest in culinary arts (forcing them to take up medicine or law, or something like that), Sylvia Reynoso-Gala was an icon to be emulated and held in awe.
Gold Medalist at the Academia de Gastronomos in Madrid Spain, she held reign in her family’s Ipil Road, Forbes Park kitchen and supervised her students as they whipped up delicious concoctions.
Sylvia Reynoso-Gala’s great advantage is that she comes from a family that believes in the importance of food. Cooking Is Fun At Kitchen Hobbies
Kitchen Hobbies Cooking Center started in November 2004. The cooking center run by the husband-and-wife team of Jerry and Eleanor Ty was conceptualized because of a shared passion for cooking, and eating, good food.
“Oftentimes, friends and relatives would give us very good feedback on certain dishes and would ask us to teach them the recipes,” says Eleanor. “When it came to preparing food for their family, there was always a dilemma on what food to cook for lunch and dinner. They would say, ‘Is there another way to cook fish other than frying it? My kids are complaining about my cooking. Nagsasawa na raw sila with always adobo.’ Because of this, we thought of putting up a venue for people to learn to cook and serve good food to their family and friends.”
Kitchen Hobbies offers a variety of cooking modules, including Chinese, Japanese, Filipino and an Asian cooking series. There are also courses on beef, chicken, seafood, desserts; and baking classes once in a while. Cooking classes are held from Wednesday to Saturday, with sessions lasting for three hours. Also available are special classes like Basic Cooking Workshop and Advanced Cooking Workshop for those who want to learn the basics of cooking — from proper measurement of ingredients to developing their knife-chopping skills and proper cooking techniques.

HUMBLE BEGINNINGS

ST. ANNE COLLEGE LUCENA, INC. (SACLI), formerly St. Anne School of Medical Sciences, is a non-stock, non-profit and non-sectarian educational institution founded in March 1986.

The school, then headed by Dr. Elvira Andaman, was first housed at the third floor of St. Anne General Hospital (formerly Andaman General Hospital, Inc.) and initially offered the Graduate in Midwifery program.

To further enhance the institution’s contribution to the development of the healthcare manpower in the country, the Nursing course was offered in 1990.

On September 6, 1993, the administration, in an ardent desire to serve the community more, decided to change the name of the school to St. Anne College Lucena, Inc., thus enabling it to offer non-paramedical courses that include Bachelor of Science in Hotel and Restaurant Management, Bachelor of Science in Physical Therapy and AB Psychology. Non-degree programs accredited by the Technical Education and Skills Development Authority (TESDA) such as Food Technology, Computer Technology, Associate in HRM, Computer Office Management, and Nursing Aide were also offered.

With rapid advances in science and technology of the modern world, the SACLI administration opened more degree and non-degree programs to broaden students’ scientific and technological knowledge and skills.

In 2000, Bachelor of Science in Business Administration, Bachelor in Secondary Education and Bachelor in Elementary Education were offered. The Caregiver Program, Biomedical Equipment Technician course, and Medical Transcriptionist course followed suit in 2003, 2005 and 2006, respectively.

It was in 2002 when the College opened the Kiddie Course (Kindergarten) to help promote good values among children.

To help serve the community better, the SACLI administration opened the Elementary and Secondary Levels in the 2003.

All these have been made possible through the united efforts of personnel and administration, in their desire to become more responsive to the ever-changing needs and demands of the times.

PRESENT TIMES

St. Anne College, Lucena, Inc. has come of age. As it celebrated its 21st founding anniversary last February 28–March 4, it has adhered faithfully to its theme "Reinventing for Better Image and Competitiveness." And the proofs?

Marked improvements of its infrastructures and facilities were made for fast and easy delivery of instructional services to its teeming clientele. The newly built administration building houses fully air-conditioned offices, standard-size classrooms, a complete I-Tech. Center, a well-equipped computer laboratory, a simulated mini hospital and a spacious library. These were all provided for convenience in the research and study of the students.

The computerized system of enrolment and payment of fees started in school year 2005-2006. In this system, all data about the students are encoded to facilitate the delivery of services to them.

The recently inaugurated Hot-and-Cold Kitchen and Laboratory of the HRM Department is a source of pride for SACLI, for it is the very first one of such kind in Quezon Province. This is an advanced preparation for the offering of Culinary Arts and Bachelor of Tourism Management this coming academic year, 2007-2008.

Plans for manpower resource development are also under way to improve the quality of faculty and improve their teaching competency. Aside from the administrators’ encouragement and support for faculty professional growth through educational loans and scholarships, in-house seminars and workshops are conducted every year to improve and enhance their communication skills, teaching strategies, test construction and validation, and use of instructional media. The faculty are also provided with other instructional guidebooks.

To further improve instruction, the SACLI administration gave specific guidelines to the Academic Affairs Office, to wit: screen the faculty thoroughly before admitting them to teach; hire qualified faculty, preferably M.A. degree holders over non-M.A degree ones; evaluate the teaching performance of the faculty; set definite guidelines for giving of teaching loads; and encourage non-education graduates to enroll in professional subjects in Education.

These guidelines are to be strictly followed by department heads/deans starting this coming School Year 2007-2008.

To make the school more competitive and to prevent the rapid turnover of faculty, the SACLI administration has upgraded the salary offering this past school year, to the delight and satisfaction of the teaching personnel.

Truly, SACLI is moving surely towards quality and excellence in education!

FLAGSHIP COURSE

The Hotel and Restaurant Management (HRM) program of St. Anne College Lucena, Inc., started in 1993, the first such course that was recognized by the Commission on Higher Education (CHED) in the province of Quezon, through the leadership of founding and present Dean Rogelio Llave (a doctoral candidate with the highest distinction), and the utmost support of SACLI president Dr. Potenciano Andaman and executive vice president Dr. Elvira Andaman.

The culinary programs and Bachelor of Science in Tourism Management were introduced in answer to the needs of the community. All these programs were strengthened under the Institute of International Hospitality Management (IIHM) of the institution.

The main thrust of the programs of the IIHM is to professionalize international hospitality and tourism by producing highly competent leaders in hotel foodservice, tourism, travel and events. The IIHM has become the flag bearer for being an awardee of the Plaque of Recognition from the Provincial Council of Quezon for bringing honors and prestige in the field of HRM.

SACLI–HRM has been a consistent top recipient of the Medals of Excellence in the Chefs on Parade, Culinary Grand Prix, COHREP Skills Competition and recently, in the ASEAN Skills Olympics for the Diploma of Excellence for Culinary held in Brunei Darussalam – a first time among Philippine delegates. It has also been a favorite feature in FOOD, FLAVOR, F&B, and Bartender Magazines and in local and national newspapers depicting local and international accolades.

In terms of practicum and affiliations, students are sent to overseas exposures such as in Canada, Thailand, United States, Singapore, Jordan and soon, in Australia. In the Philippines, practicum is held in de luxe and first class hotels, class A restaurants, class AAA resorts and county clubs, and in-flight and cruises facilities.

CCA tops first Philippine Culinary Cup

MANILA, Philippines - Students and chefs from the Center for Culinary Arts (CCA, Manila) wowed leaders and connoisseurs from the food and beverage industry once again after winning medals in the recently concluded First Philippine Culinary Cup, a competitive event that is part of WOFEX 2010 (World Food Expo), the biggest food show in the country held at the SMX Convention Center.

CCA, Manila student Sonny Mariano won the gold medal in the Live Pasta category with chef Mira Cruz, chef-instructor, as coach. The pasta dish, entitled Rolled Spaghettini filled with Forest Mushroom Mousse, Cheese Stuffed Tomato Confit, and Truffle Cream Air, used a technique dubbed cannelloni-style using spaghettini.

Mariano also bagged silver under the category Live Filipino Cuisine with his teammates Chino Salazar and Earl Michael Calica. Under the supervision of CCA, Manila chef-instructors Mira Cruz, Jon Tin and Richie Custodio, the four delectable and distinct Filipino dishes (puso rice, kulawo, pinais na hipon, and pork hardinera) were presented to the judges and public.

Student Raymond Mendoza got a silver medal in the category Live Local Seafood with his dish Trio Pepper Crusted Bangus Belly with Pomme Pave, Chives Hollandaise and Caponata. He was also coached by chef Mira Cruz.

Marie Anne Uy bagged a bronze medal under the category Wedding Cake Display with chef Carol Lavin, CCA, Manila’s chef-instructor, serving as coach. Marie was inspired by the words je t’aime (I love you) in French.

Also cited for bronze was Arthur Ong in Dress the Cake with his entry Chocolate Satisfaction. Chef Carol was also the coach of Arthur, who said he was inspired and fascinated with chocolate.

i'm happy that Global Culinary and Hospitality Academy is inside the top 10. i'm actually planning to enrol there sometime next year. i can't leave work right now, just waiting for another promotion. :D

the school is walking distance from where i work so i'm really planning to enrol there. hopefully, i can be both a great chef and a great internet marketing guru. :D

MARCO Polo Hotel Davao brings back today the "Culinary School Showcase," a three-in-one lunch event featuring guest chefs from three of Davao's world-class culinary schools: the Center for Asian Culinary Studies (Cacs), the Institute of International Culinary and Hospitality Entrepreneurship (I-Chef), and Islacare Inc., an affiliate of Metropolitan Occupational Science and Technology (Most) Institute.

"We're seeing the return of this great lunch event because we can't have too much of a good thing," hotel general manager Nigel Fisher explains. The first showcase, which was in April this year also at Polo Bistro, was a resounding success.

"Judging from our first partnership with these great schools, we can expect breathtaking flavors from these adventurous chefs," enthused Marco Polo Davao executive chef Ed Tuazon. Tuazon heads the hotel's award-winning creative culinary team, which shall be working with the guest chefs.

From October 5 to 7, guest chefs shall be from I-Chef.

On October 8, 11, and 12, chef hopefuls shall be from Cacs. From October 13 and 15, Islacare Inc. students shall put their best dishes forward.

All three school teams shall work together on the lunch set menu in Monday's opening.

The lineup of gourmet menus is impressive, each menu including a delightfully unique entrée matched with an exquisite appetizer and a heavenly dessert. Available daily for the first two weeks of October, the intercontinental lunch treat costs only P500 net per person.

Is there a culinary school in the country that teaches and specializes in indigenous/native dishes and cooking techniques? From what I'm seeing that's being posted in this thread, most are geared towards the western palate (with emphasis on Italian cuisine).

I think that's part of the cause and reason why Philippine cuisine is hampered from being elevated to the status of "World Cuisine" with the likes of its other Asian counterparts (ie: Chinese, Japanese, Korean, Thai, and even Vietnamese) because of the lack of technical training, local promotion, and international exposure of our local dishes. Maybe it's the thinking that our local dishes are only meant to be savored and enjoyed in our own homes and only by Pinoys for Pinoys is doing more harm than good to the rich traditions of cooking handed down through the years. And with today's global reach of foreign influences, the tongues and tastes of upcoming generations will surely gradually gravitate to other cuisines rather than their own.

I agree mods, at ICA de la salle we only had one short module for filipino cuisine with very limited dishes, the rest of the modules were for classical french cuisine, asian ( indian, japanese, chinese etc), north american etc.

CCA was a most popular culinary school. If you are planning to open up a restaurant business, I will prefer to you that you must take up a HRM course, 2 years or 4 years, to gain you more knowledge about this kind of career.

Try Asian School of Hospitality Arts or ASHA! They do have 3 branches: Antipolo city, Quezon City and Tagaytay City. I took up front office operations and after i got my certificate and did an apprenticeship for 1-month, I worked to Seven Suites Observatory Hotel which is their affiliate hotel. After a year of experience, I applied abroad and hopefully tumawag na yung agency ko.
