Vegetable Stew
A native specialty of Kerala, its was brought in by Syrian Christians to Kerala, readapted to Kerala tastes.
The curry is prepared with sauteed Carrots, Potatoes, Onions, Green peas cooked with thin and thick Coconut Milk, cashew paste, spiced with cinnamons, cardamoms, cloves, blac pepper, green chillies and garnished with ginger/garlic paste.
The light spicy dish goes excellent with Appams

Manga Chammanthi
Its mango time and Kerala's special Mango snack- Manga Chammanti (Dry Chutney). Raw mangoes sliced along with red chillies, coconut powder, one small piece of Onion, together crushed and grinded without water, to form semi paste like substance, which can be balled. The dish can be taken alone or with rice or chappathis

Chicken Curry in Nasarani style
Chicken curry, prepared in typical Syrian Christian styles, popularly found in central Kerala. This fiery hot spicy chicken curry is prepared with semi-roasted chicken (marinated with turmeric, spices and pepper), cooked in thick curry comprising of tomatoes, coconut paste, thick coconut milk, onion paste, ginger-garlic paste, non-sour yogurt, heavily spiced with cloves, cardamoms, freshly crushed pepper, nutmegs, garnished with boiled eggs and fried cashews.
This rich chicken curry is usually prepared to break the Easter/Christmas fast among Christian community.

It is fiery hot spicy and sour dish
The dish is very popular and can be taken along with Chappathis and Rotis.

Kichadis are part of Thothu Curries series in Kerala Cuisine (meaning just served as side touch curries along with other dishes). Kichadis are thick consistent curries, mainly meant to differentiate taste of main entree in Sadyas.
Pavakka Kichadi (Bitter-gourd Kichadi) is one of the most popular among Kichadis, where chunks of bitter-gourd are fried untill golden brown, cooked in sour yogurt with green chilies, coconut paste, coconut powder, small onions, mustard seeds and curry leaves.

Mappas is typical Malabar delicacy cooked in pure thick coconut milk without usage of any chillies and lavish use of coriander powder. Chicken Mappas is extremely popular in Kerala, particularly Malabar area, where chicken marinated in ginger-garlic paste, coriander powder, pepper powder, garam masala, onion paste cooked in thick coconut milk untill it becomes tender soft semi brown, which shall be later sauteed (shallow fried) with tomato, ginger, cardamoms, fried onion slices, and dressed in very thick coconut milk for improving consistency and thickness.
Chicken Mappas goes very well with rotis, pathiris (rice breads) and Kerala parathas.

The dish goes well Puttu and Idiyappams as well as with chappattis.

Kuttanad Duck Roast
Kerala celebrated dish, popular in Central Kerala, particularly in Alleppey district. Prepared with fresh duck meat, marinated with turmeric, onion paste, chilly paste, pepper, garam masala, coriander power, salt and vinegar which is later semi-fried with ghee and water and roasted (with help of pressure cooker) with potato wedges and tomatoes untill its semi dry.
The dish is extremely popular as dinner main course and taken along with Kerala toddy (being part of toddy shop cuisines) and appams.

Yup I made it :D. I followed the recipe from youtube. After frying onions, you let the lamb cook in its own juices, which are let out after cooking it for a while.

Agreed ... I myself get hungry so much in flight and always feel that the portions served by them is way too less (for me) ...hahaha ... I have had some wonderful food on Singapore Airlines sometime back.
But nothing beats the non-vegetarian food served in Indian Railways (no guarantee on hygiene quotient), absolutley fab flavors when u r hungry and have nothing much really to do on a long journey. The same cannot be said about veg-meals (Rajdhanis, Shatabdis are exception)

Malabar Onasadya with fish fry
Onasadya
The most important part of Thiruonam- the main day of Onam celebrations, is the grand Sadya (traditional Kerala Buffet) served on Onam day. The Sadya served on Onam day is known as Onasadya which is the most grandest of regular sadyas.
The typical Onasadya is of 8 course vegetarian meal, served on banana leaf. Traditionally there are upto 21 curries for the buffet, though its mostly limited to 15 to 16 in today's context, barring those served in high-end hotels or in few major temples.
1. The first items served will be fried banana chips (Upperi) along with sweet Jaggery coated banana chips (sakaravarati) and jackfruit chips (Chakaupperi). Sometimes a portion of Ela-ada (a sweet steamed cake made out of rice-flour and jaggery, steamed inside banana leaf)
2. The next will be served will be Pappadams along with assortment of pickles. There will be normally 3 to 4, most famous being the tender mango pickle (Kadumanga), Lime pickle (Naranja). For the taste balance, a special sauce- Pulinjinee (sauce made of tamarind/ginger flavourings mixed with Jaggery) and Injithairru (Ginger paste mixed in sour yogurt) are served.
3. The next set will serving various thorans, a class of semi-fried toasted vegetables. There will be atleast 3 to 4 types of thorans like Beans, Beetroot, Cabbages etc.
4. The next class of vegetables would be Errissery/Pichadi-Kichadis, a series of semi dry thick gravy vegetable curries made of various assorted mix of vegetables like pumpkins, elephant yam, beans, drumsticks, brinjals etc.
5. Then serves small doses of various curries, known as Thottucurries or Touch Curries, like Masala curry, beetroot masala, stew, Koorkukalan (thick yogurt based curry), Olan (Pumpkin in yogurt curry) and Kootucurry (mixed vegetable curry)
6. Then serve the hot piping rice, which the main staple. The rice is accompanied with 4 main entree's
The first entree will be lentil curry (thick mashed lentil curry known as Parippu mixed with Ghee and salt)
The next will be Avial (mixed vegetable thick curry)
The third and most important entree will be famous Sambar.
The final entree will be Pullissery/Kalan/Mooru curry- a thick buttermilk based curries
7. Once the main staple and 4 entree's over, the sadya takes the closing note, with servings of sweets, mostly plaintains and Bolis (an omlette like rice flour sweet cake) and in some cases unniappams or Neyyappams
8. Then the final 8th course starts with serving various Payasams (Kheer/Puddings). Normally there will be 2 to 3, the most popular being Pala-ada (Milk Kheer with rice flakes). Likewise the important Payasams are Pazhampayasam (Kheer made with sweet plantain and jaggery), Gothambhu (Wheat flakes Kheer) and Pala-payasam (Milk Kheer)
With this, the 8 course mega Sadya comes to an end.
Typically in Kerala, Sadyas are pure vegetarians. However in Malabar, Onasadyas will have one Non-Veg dish to make the meal as complete course. However in other parts of Kerala, it will be pure vegetarian for the 10 days of Onam festival.

Haha, Frenchwindow, you can get this in most of backwater areas, particularly in Alleppey, Paravur, Kollam etc. Try at Alleppey-Changanassery (AC Highway as popularly known) highway, famous for its scenic beauty with n number of fresh water farms and small family toddy shops where extremely fiery hot typical Kerala dishes like this can be found at affordable rates. Its highly popular among tourist.

Ambalapuzha Palpayasam
The famous Ambalapuzha Palpayasam is known as King of all kinds of Payasams (Milk Kheer/Puddings/Desserts), served only in Ambalapuzha Sri Krishna Temple as an offering to the lord. The unique taste is believed to be a blessing accorded to the temple's Kitchen by the lord himself and could never be recreated even by the same cooks with same ingredients outside the kitchen.
This Milk Kheer is prepared with only dry rice, cow milk and sugar only is has some of the best tastes. It is served in the temple premises from 12:00 noon onwards after offering to the deity. While visitors and those who have not booked may able to get a glass or small containers outside the temple, only those who make prior bookings gets from Temple office in bulk. The temple is located in Ambalapuzha, just 13 kms from Alleppey City.

Making chapatis at least for me is the most difficult task in cooking. taking the wheat flour, mixing water/milk and making a dough with a particular hardness, rolling out the dough and then making them on the pan its just too much for me.

This is a stylized version of Kerala Sadya. Kerala Sadya is royal feast served for any Hindu Marriages, festivities at temples of Kerala etc..... The most lavish Sadhya in Kerala, would be at Aranmula Temple for more than month prior and after Onam...
In Kerala, many hotels serve this as full fledged sadyas itself...
In Mumbai if you look for, I would recommend Riceboat (Kettuvallam in Malayalam) restaurant in Bandra East as something of most recommended. If you are looking Five start services, Dakshin Restaurant at ITC Maratha is highly recommended. There are many more in Mumbai to check upon... Perhaps Kerala Hut in Malad, Taste of Kerala in Fort..... For simple meals, perhaps the Canteen at Kerala House- the official guest house and office of Kerala Government in Mumbai, in Vashi can ideal... But don't expect lavish spread, being government owned service......
For Chennai, Blore, I would definitely recommend Ente Keralam Restaurants. I have no idea for other cities in India......

Well, this is Maharajakeeyam (Grand Royal) Sadya of Ente Keralam Restaurants (Chennai/Blore)
Just an introduction to varieties
The Staple is Par Boiled Rice (Palakkadan Matta) along with Pappads.
On Left bottom is Starters Assortments- Jackfruit chips, Plantains chips, Savories etc.
On Left top is Pickles Assortments- Lime, Mango, Salted vegetables and Ginger-Tarmind Flavorings (Injipuli)
The Primary entree is Mashed Lentils Curry (Parippu) seen in small Katori on right side of plate, served first along with Ghee
The Main entree will be Sambar, seen in larger vessel on top. The other dishes are side dishes along with Butter milk. Rasam (Pepper-Tomato water curry) is the last entree which is seen along with Sambar.
On Right top, is the Payasam assortments or Sweet Kheers, to be taken with Plantain/Banana as an ending note.

Kappa Puzhukku (Tapioca Potage)
If one gets dry Tapioca which not good for steaming, then the best usage is making it into Puzhukku or Potage. A highly popular potted curry which can be taken alone as a staple or with rice, made of mashed boiled tapioca cooked in water with coconut paste, untill becomes thick and mashy, seasoned with fried shallots, garlic and ginger bits along with cumin and mustard seeds.
The dish can be either taken alone with tapioca wafers or as a dry curry for rice or rotis.

The biggest Onam feast ever happens, perhaps even world's largest, is at Aranmula Krishna Temple, which is famous for its mass feast, spread over months prior to Onam.
The grand Vallasadya, which is an expensive offering made by devotees to the temple, comprises to a mega Onam Sadya or Feast comprising of 63 curries. The custom is that, any number of times or quantity, should be served at the feast, when demanded those who attend the feast, when askes for in form a song, known as Vallapattu.
The typical Vallasadya comprising of 63 spreads over banana leaf, served at multiple numbers. It comprises for more than 10 types of Kerala sweets, 30 varieties of vegetable curries, more than 12 different type of pickles, number of side dishes etc.
