Hey redbaron, I've been having trouble logging in too. Or rather, I log in and then seem to get logged out again immediately. It worked this time, though. Thanks for your good wishes, I'm looking forward to my trip to Melbourne - not there yet, won't be there until Feb 20. I hope to contribute some Melbourne photos to the forum. I've been on here a fair while, although I don't post much, but haven't seen any evidence of you being "evil" or heard anything bad about you. Anyhow, I'm not the type to judge people on hearsay - I prefer to form my own conclusions. :)

Haha, you probably thought 'WTF, what weirdo is liking so many of my posts?' I was just making my way through that thread and liking the photos that took my fancy. Interesting to see the evolution of Melbourne in recent years through the pics you and others have taken. Your photos are great - you should start posting them again. :)

When it became a thing, most Americans were still heavy laborers, iirc, so food high in fat and salt was perfectly acceptable as they'd still find a way to burn it off anyway.

Cheese by its nature is pretty damn unhealthy, though. Whether it's processed or not, it's still got a lot of fat.

A lot of us eat greasy foods because those are cheap and quick, and a sizable number of obese Americans are too poor for fresh veggies or never developed a taste for them because no one forced them to eat them.

As for myself, I'm fat because I had a high calorie diet because of a job I had at a factory a couple of years ago (burned off just about everything I ate just doing heavy labor there, but it was mind-numbingly boring) and just didn't change my diet quickly enough when I changed jobs to a much more sedentary and mentally engaging job.

That's probably the biggest reason, since other means of extending shelf-life (the various aging processes) get a little pricey and cost intensive, and also aren't very quick. Another reason is that it melts better than your standard block of cheese, and is insanely cheap to make per pound/kilo, in part because of that extended shelf-life. That cheap factor was very important for expanding the market of cheese consumers when the concept of processed cheese came about sometime in the first half of the 20th century.

Sorry RB, you seem to wind me up the wrong way at times ...

As I recall, we're both Grandfathers. I care for my little ones too.

    Ah thanks, you're too kind.

While we all sometimes get into heated debates, I love the lively atmosphere of this forum. And the collected wisdom of so many who contribute. :)

Haaa.....I know it bugs so many people !!!!! I don't even try to use spelling or grammar....or any real literary ideals.....OK maybe I am just dumb ? But I write it as it flows from my head ....with stops for thought or hesitation etc......like I am talking face to face with someone. I don't know if you are just having fun with me or what ? We all have our own personalities and life experience.....Haaa I am an Aussie....we are all mates so I have a go....or stir up sometimes but never would want to offend any US citizen. Funny you sent this message because I see you on here and looked at your profile a while back......SSC is a good part of life hey ? Gives me a somehow a connection I like to have with places I have visited and care about.....all the best Colin....thanks for the message....however you meant it.......all good : ) Roger
