I remember one cook used to always make what appeared to be kind of burnt green tea rice. I thought he was just making a booboo, but now I understand the burning gives a specific flavour.

My parents love burnt rice that is stuck on the bottom of the rice cooker, and what they do is to scoop it out, put it on a plate, and pour coffee in it. Add a breakfast dish, and they're in heaven: rice, coffee, and a meal... And that's a great breakfast for them! In fact, I know multiple terms for rice in Filipino... I hope my buddy spearhead will explain in the process!

Burnt rice is the best rice. It caramelizes the sugar in the rice and makes it taste good.

Well, the best part of burnt rice is that it's crispy, and all you got to do is to pour coffee in it... Yum. Breakfast may never be the same again.In English, rice is rice is rice. Just add terms, like fried rice, burnt rice, boiled rice... In my language, it comes in multiple terms: - Raw rice (grains): bigas - Cooked rice: kanin - Burnt rice: tutong - Softened rice: ampaw - Fried rice: sinangag - Sticky rice: malagkit In fact, white rice is the most popular type of rice consumed in the Philippines, with favorites being Jasmine and locally-grown. There are other types, aside from white and brown: think of red, violet, or even black rice, eaten up in the mountainous regions.

That's usually the rice that may be thrown away, when in fact, it is one of the tastier parts because it's crispy and can be soaked in liquid to make it soft. How do Indonesians treat burnt rice when you cook it over a flame?

Spearhead, you're right... ampaw is like that. But the one about lugaw, it is congee, in which rice is boiled and softened. Geeze, I mixed up a bit on that one since I haven't had ampaw or congee for a long time! Perhaps I'll have lugaw soon.

This evening I as in a Korean supermarket, and saw a dried disc called "Scorched Rice Cake". I think it was a dessert, because the French description translated as "Sweetened Rice Cake". Funny I should see it just as we were discussing such things! I was hungry and bought a few little Korean chocolate chip cookies. They were good!
![]() Earlier for my dinner I had a Hot Tamale (and man was it hot), and a Pupusa, some coleslaw and some black refried beans. I washed it down with a Mandarina (Jarritos) soft drink and a Tecate cerveza. Cena muy buena!

Ergo, TB, before putting into the compost bin the burnt rice, take it out, put it in a bowl, have some hot liquid (e.g. soup, coffee, or hot chocolate) and pour it over... Have a taste.

I think I just though of it in the same way as scraping the burnt part off toast, or not eating the burnt part at the bottom of mashed potatoes, etc.. ! hehe...

I'll tell you how best to eat burnt stuff:- Burnt toast: just ramp up the jam or add some maple syrup (a.k.a. French toast) - Burnt mashed potatoes on the bottom: just add some gravy on it - Burnt meat: well, dip it into something (e.g. ketchup, mayo, mustard) I've done those before, and those taste great!
