Gastronomy of Bosnia and Herzegovina

In this thread we are going to introduce our gastronomy to the foreigners. If you can't eat, just feel it for a moment.

Zanimljivo je to što većina ''naših'' jela ustvari ima orijentalne/turske korijene...naša gastronomija je velikim dijelom turska, pogotovo kod Bošnjaka.

Ove tufahije su tako blizu, a tako daleko.

Uffff, super izgleda ja sam sliku na netu nasla, ali uslikat cu kad budes sljedeci put pravila, nisam probala s bademom, najbolje su sa orasima

Derventski ćevapi u srcu Sajgona

Sajgon je grad koji ne ostavlja ravnodušnim. Preko osam milijuna stanovnika i na desetke tisuća turista ovu metropolu s burnom prošlošću čine gradom koji nikad ne spava. Grad koji nikad ne spava treba i nahraniti, a za to se brine četa ugostitelja. Ponuda je bogata: počevši od bezbrojnih uličnih kuhinja u kojima se prodaje nacionalni specijalitet phỡ, juha, uglavnom od govedine ili piletine, s rezancima od rižinog brašna, preko brojnih restorana koji nude tzv. vijetnamsku kraljevsku kuhinju, pa sve do restorana s francuskim specijalitetima što je, kao i na svakom uglu pristupačni francuski kruh i kava, ostavština nekadašnjih kolonizatora.

Nedaleko od samog središta grada, u četvrti u kojoj se nalaze mnogi hoteli, restorani se nižu jedan za drugim. Ponuda je, osim vijetnamske kuhinje, internacionalna: hamburgeri, pizze, steakovi. No jedan restoran odskače, i to prije svega nazivom: Balkan`s Restaurant. Prva nevjerica i pomisao da se radi o još jednom „izvornom“ restoranu u kojem su špageti bolonjeze azijski rezanci s kečapom, nestaje bacanjem pogleda na jelovnik: livanjski sir, hurmašice, janjetina s ražnja i ćevapi. Pravi pravcati ćevapi u somunu i to usred Sajgona? A tko je zaslužan za ovo gastronomsko čudo usred Indokine?




Odgovorni za miris ćevapa u Bui Vien ulici sjedi za šankom i daje upute osoblju. Odaziva se na ime Adi i rodom je iz Dervente.
U moru pitanja koja se postavljaju sama od sebe prvo je: što jedan Dervenčanin radi u Sajgonu i to još za šankom vlastitog restorana? Odgovor je kao i mnoge sudbine osoba koji dolaze s prostora koji se nekad zvao Jugoslavija, povezan s ratom u devedesetima. Adijeva obitelj je iz Dervente prvo preselila u Bremen. No Njemačka nije bila zainteresirana za sposobne useljenike s bosanskohercegovačkom putovnicom i smislom za ugostiteljski biznis pa je obitelj Babić produžila za Australiju.

Posao pilota nije za 100-postotnog Balkanca

Adi peče ćevape: Ponosni Dervenčanin i u Vijetnamu

I dok su se roditelji i na petom kontinentu snašli, Adiju je Australija bila predosadna, „bez izazova“. Nije pomoglo ni uspješno školovanje na pilotskoj školi. „Ja sam se u Australiji osjećao kao na nekoj stanici gdje čekam neki autobus ili vlak pa da idem dalje. Nikako se nisam osjećao kao da sam došao kući nego da čekam negdje pa da odem kući", kaže Adi. I dom je pronašao ovdje u Sajgonu i to, kako to obično biva u životu, pukim slučajem. „Imao sam jednog prijatelja kojeg sam upoznao u pilotskoj školi. On je bio Vijetnamac i pozvao me da ga posjetim u Vijetnamu. Ja sam odugovlačio, ali sam na kraju ipak došao i tjedan se pretvorio u mjesec, i tu sam još uvijek", govori Adi i s ponosom pokazuje na svoj restoran koji je u međuvremenu postao gastronomska atrakcija Sajgona. Iako mu je san nekada bio postati pilot, kad je počeo letjeti za australsku kompaniju JetStar postao je svjestan da taj posao sa svim svojim strogim pravilima i stresnom svakodnevicom baš i nije po mjeri jednog, kako kaže, „100-postotnog Balkanca".
