Practically everything. What did not survive WW2 bombings in good condition, was simply destroyed - immediately and in the 50s.
Could also be a matter of protection and preservation of historic buildings.
Furthermore, we shouldn't forget, that 100 years ago Hamburg was world's biggest port and one of the richest cities at all, what means, that the quality of new buildings was pretty high then. The walls of many warehouses, for instance, are extremely stable, since up to 2 meters thick. Also the "white" architecture in the centre of the city, in great parts called "Hamburg style" (as contrast to fragile Art Nouveau elsewhere) at that time, is of a very high quality.
