Bussaco Palace Hotel, Portugal
The last palace built by the Portuguese Royal Family as a hunting lodge between 1888 and 1907. Converted to a luxury hotel in the 20th century.

I've just finished reading the whole thread (amazing by the way!), but I've seen only one Belgian castle. Let's do something about that!

Bouillon castle (8th-16th century): This castle is most famous as the residence of crusader Godefroy de Bouillon but the castle had a military function until 1830!

^^ These are indeed palaces, not castles!
I find Neuschwanstein and Hohenzollern a little tacky, i'm not a fan of the revival style and of XIX century reconstructions, but they are very iconographic, i must say.
I still prefer the older castles and Burgs of Germany!
