On St.Petersburg - Helsinki train it's done during the ride, passengers don't have to leave their seats. And USA - Canada border is much easier to cross than Russia - Finland, so it should not be a problem at all.

There is no check-in as such for Eurostar, you scan your ticket at a barrier and then firstly navigate security before dealing with border control. Depending on how busy it is the process takes anywhere from 10-20mins in my experience (I'm a regular passenger). The recommend arrival time is 30mins before departure. Note there are no custom checks though - for now at least.

There is no reason why passport/ID checks can't be done on the train, the British insistence on border controls prior to getting on the train is more about political signalling imo.
