The sharklets are the winglets you can see at the end of the wings, it's just called sharklet because Airbus wanted to dissociate them from boeing's.
It is supposed to reduce fuel burn by 3%.
The thing you're talking about is usually on test planes, but I have no idea what is it for, anyone??

The orange thing on the tail is some kind of pressure sensor used on test flights.
