I see it as you've got the best of everything! and I did find dishes which, to my knowledge, are an Iraqi specialty. Masgouf, Tepsi Beytinijan, a lot of the Mergas and others are all examples of which.

I honestly think it's the most varied cuisine in the Middle East and this is coming from a Saudi (our cuisine includes dishes of Indonesian origin haha)

I don't agree with that BigD there are plentyyy of Iraqi dishes that are solely Iraqi and not brought from somewhere else. And even when dishes do come to us from other regions such as the Levant, Turkey and Iran they were brought centuries ago and we make our own versions of them. For example our Dolma is extremely different from Turkish Dolma. Same goes with Biryani or fesenjoon. Even our Kabab is different. Plus, dishes like Pacha and Qoozi are authentic traditional Iraqi dishes and just because a variation of them may exist in other countries doesn't mean it's not Iraqi. There's also Maqlooba, Freeka, Msakhan, Tashreeb, Parda palaw, Ma7roog Isib3ah and many others. After all 80 years ago there were no borders, we were all part of the ottoman empire and different areas adopted things from one another.

yes, but if we name the ones that are truely native to iraq (and originated from iraq), i dont think it's that many.. I'm curious to know actually

other than masgouf, what else is there that is 100% iraqi ?

doulma, pacha, qouzi, maqlooba, freeka, mskhan, tashreeb, parda palaw, etc are all non iraqi in origin (or we simply dont know where they started, too long ago to keep a record).

Well yeah few dishes are 100% Iraqi; just like nothing is 100% Lebanese, or 100% Syrian.. or 100% Palestinian. We all to some extent have the same sort of dishes in the area, they can be named the same or they can be named differently, they can taste the same/be prepared the same way and they can taste completely different!

Just because variations of these dishes exist in other countries doesn't mean they're all originally non-Iraqi; that was my point. If all these dishes were brought from somewhere else la3ad what did we eat before that? Were we cannibals? Ma ma38oola ya3ni!

For example, Mujaddara. If I had mentioned Mujaddara to you before you probably would have said 'Mujaddara is not Iraqi, it was brought to us from somewhere else'.

And yet: The first recorded recipe for mujaddara appears in Kitab al-Tabikh, a cookbook compiled in 1226 by al-Baghdadi in Iraq.

This is from the Wiki page..

No clue actually. Which doesn't really help my point but it was written in the 'Iraqi cuisine' page on wiki; perhaps it has another name in Iraq..

Thanks for this... is that a Diwaniya specialty or is it just general Iraqi? I'd love to try what they're making, looks good.
