Most of those foods are not cooked at Oduduas lounge (in Newark). Looking at the pictures I think I only ate plaintain, fufu and goat head (which is not there) but that was over a year back

Even if you are too poor for the ingredients, the poor people might eat some of the more expensive foods on special occasions. That is Nigerian culture anyway, we tend to eat our best food on special occasions - even if you have little money, you save up money so you can have a big Christmas for example or people share food on the big occasions. I plan on visiting Nigeria at the end of this year and I plan to spend 50% of my time there eating Nigerian food.
