But does that mean there are more departures than arrivals in HK? Cause it sounds weird that HKIA needs more capacity for check in than the existing terminal can support and yet arrivals can take it.

Not really, the arrival capacity at the existing terminal has always been designed to handle the extra demand in the future huge "X" satelite terminal. This new terminal 2 only has check-in desk actually make perfect sense.

Only 2 airlines in T2 so far, so it's very quiet. Don't think Oasis had their check-in counters open when I was there, but at least there were some people in the restaurants.

I dun like this terminal
It is darker then terminal 1
It doesn't have enough natural sunlight
If I were there I wouldn't have mood to shop there

I found a video that shows the transport from Terminal 2 to Terminal 1. Nothing much to see, though.

I was there last week, if you don't have to check in at the airport, I would advise you to get off the Airport Express to the new T2 side.
Less crowded, nicer shops, absolutely no one at the immigration, after that there is an automated train connecting to T1 stopping at 2 stations.
