Is there a chance that one day they'll run service from London to NK or Beijing?

I don't think so. It's currently hardly even practical to run trains beyon Paris and Brussel from London.

What are some of the issues preventing expansion?

The main issue is the security regime imposed on cross channel trains. This (entirely pointless in my opinion) security theatre requires that passengers get checked and have their luggage scanned before they board the train.
This makes it very hard to serve other cities that don't have dedicated Eurostar terminals.
On the few seasonal trains frrom Southern France to London passengers have to disembark in Lille, go through security, and then board another train 1 1/2 hours later. This is advertised as a through train, but in reality this isn't.
