In the video the (military) police escort the transport with their flashing blue lights. Normally I would not try to overtake anything with flashing blue lights, but is that allowed in Poland?

Yes, but not in built-up areas.

Sure, it was just a joke BTW, the motorway seems absolutely perfect - I suppose it'a a new section but generaly if I can compare road infrastructure in Poland some 15 years ago and now it's a huge step forward, keep going polish neighbors

I once saw a escort vehicle (for large truck load) with flashing blue lights, I passed him on A4 with 190 km/h and shit my pants when I saw the blue lights Then realized wasn't police only escort... so I went back to my 190 km/h

Astra rented at Warsaw airport I would have gone more but the little 1.6 had not much more left (I am used to my 4.3 V8 Mercedes here in Canada )

The Polish budget and police camera's thank you (this would be followed by a rage on irresponsible drivers that cause the hundreds of deaths on our roads, but it is too late for that.)

When the A4 is dry, traffic is light, and visibility is good, a moderately skilled driver in a modern, well-maintained car can safely drive well in excess of 200 km/h, so please stop the nonsense about "irresponsible drivers".

How many of Poland's road deaths are on A-series roads?

First of all there are strict rules allowing 140km/h max on conditions that "it is dry, traffic is light, and visibility is good".
Please memorise it and stick to it. Poland is not Germany, where you can drive 200+ on selected roads.

The discussion was about safety, not the law. What is safe and what is legal are two very different things -- usually with very little connection.

You shouldn't be going at that speed anywhere on a motorway, you're going to get someone killed or be killed yourself. Idiot.
