Are these things as playing volleyball over the fence common there or they just did it extraordinary for media? In Europe border officers wouldn't be happy at all with such things.

I noticed that there is only one check, when entering the country, thatīs good. Do you have this single check also with Bulgaria?

Yes, also with Bulgaria. Usually passing through these border points takes just 2-3 minutes.

Same with UK borders, Chunnel and airports (i.e you don't go though passport control when leaving.)

Yeah, but in the sea ports seems to be different. There are passport checks in Hoek van Holland (NL) and Harwich (UK) too.

There’s no law against that. The game is fun and surprisingly uninteresting to the border patrol, who zipped down at the drop of a hat several times earlier but now seem content to observe with binoculars people playing a real USA vs Mexico volleyball match.
