Yes! That's the one I was referring to. The signage and the store look so similar. But I also noticed that you can't see the harbour in the picture. Very interesting.

Great photos, but I think every picture should at least be labelled with the year it was taken. They just don't mean much without the historical context.

一盅兩件　走入歷史

飲茶對大部份香港人來說，是一件普通不過的日常瑣事，但現在隨生活轉變，由昔日上「茶樓」，過度到今天上「酒樓」，甚至有時在茶餐廳吃點心，昔日水滾茶靚、一盅兩件的風味都漸漸淡化，最早留在記憶中的飲茶味道，還剩多少？

頭帶起早茶文化

據香港博物館名譽顧問鄭寶鴻先生說：「飲茶文化源自廣州，因香港割讓給英國後，發展越來越蓬勃。 1930 年代，因大量內地和香港人乘船往來香港、澳門和廣州等地頻繁，他們都習慣出發或抵港時，上茶樓食點心飲茶醫肚，令飲早茶文化開始興起。當時在現址上環西港城，就有一家著名的清華閣，其後飲早茶的酒樓越開越多。」

■ 1915 年的永樂東街，有「吉祥茶居」。

深水一帶有好多老酒樓盤踞，如信興、北豪等，原來也跟碼頭有關。在深水進行西九龍填海計劃之前，附近有一個由 1924 年已建成的碼頭（ 1992 年才清拆），那時主要是荃灣一帶居民往中、上環的出入口，加上有巴士總站和對正桂林街街市，所以十分興旺，於是信興第一代的羅如璋先生，就在這選址開茶樓。而北豪當年都是因相同原因，在 66 年於北河街開業。在油麻地超過 80 年的得如酒樓，也跟以前附近的旺角碼頭及油麻地碼頭不無關係。

要緬懷昔日上「茶樓」飲茶的感覺，好多人第一時間就想起「蓮香」，不過隨時代變遷，好多舊式茶樓買少見少。不過走入深水老區，你還可以尋得這種昔日風味，只要走過桂林街，便會看到一個門面帶點古意的酒樓，別以為它是「地」酒樓，其實內別有洞天。這家「信興酒樓」，原來是家自 1936 年便創業的茶樓老舖。

早上八時走入信興，發覺自己變成了數一數二的「年輕人」，原來來飲早茶的茶客，不少都是有 20 年茶齡的熟客，當日找到最老的茶客何先生，便是由 1956 年撐場到現在。在這隨處都可見「歷史文物」，如負責茶的「茶檔」，已有 50 多年歷史；有個用了 40 多年的電水，仍沿用發熱線電爐煲熱水；最重要還有一個「人間鎮店寶」馬師傅，他在 1960 年 6 月 16 日上班，直至現在仍專責替信興調茶。老實說，我很怕上茶樓喝普洱，因為很多酒樓都是供應「黑水」給客喝，但信興自設茶倉，存了大批茶葉，全部由馬師傅來調校，用自存 8 、 9 年的舊茶，混入質素較好的新茶做成；加上水夠滾，我敢說在這，最起碼可以喝到一杯有質素的「普洱」。

■ 水晶天花燈， 40 多年來見證信興的歷史，燒臘部牌匾都是玻璃字。

■ 現在很多茶樓的點心都是即叫即蒸，很少再見到阿姐「片車」的情形。

兩件唔少得
新鮮料做大包
有一盅，豈能缺兩件，儘管現在新酒樓都有點心供應，但老店點心卻更令人懷念。大包和糯米雞都有個傳說：餡料是由每日賣剩的料頭料尾做成。但信興的第三代掌門人羅先生拍心口說：「大包由我 40 幾年前落舖幫手賣，由五毫子到家十二蚊，糯米雞由八毫賣到十三蚊，呢兩樣點心我 70 幾年來都用足新鮮料做。」不過最好賣的還是豬肚燒賣，一日賣幾多無正式統計，但見一出爐就被人拿走，可知其受歡迎程度。

大包老祖宗
至於北豪的點心也不賴，當中我最愛雞扎，它保留傳統餡料，因現在很多雞扎材料都將貨就價，魚肚變豬皮，豬肚變芋條，令雞扎口感改變了。這兒還可食到叫「雞窩」的點心，好像無頂大包一樣，相傳這才是大包的祖宗。另外，還有用椰菜、、芫荽和豬肉做成的燒賣，頂放冬菇成冬菇燒賣。但在北豪，懂得叫碟燒肉和半肥瘦叉燒才叫識食！在另一間老茶樓得如，你還可找到鵪鶉蛋燒賣、糯米包等已買少見少的點心。

大榮華 1950 年開業，由食神韜韜接手後耳目一新，九龍灣新店和老店一樣晚晚爆場，但他卻認為「茶樓已死」！
「傳統茶樓無得做喇！人工貴，師傅做得越好，產量就越少，加上材料費有升無減，但點心價錢就賣唔起價，好似我九龍灣早茶同下午茶市，大中小點一律 $9 ，賣一百碟賺晒都係 $900 ；但炒碟菜就可以賣 $50 ，惟有用小菜補貼。不過我為保存呢個傳統，都花唔少工夫，只要試我點心就知。」的確，有吃過大榮華的馬拉糕、叉燒酥等點心，就知若要繼續一盅兩件，水滾茶靚，不得不靠一班有心人。

我們去飲茶，有時叫茶樓，有時叫酒樓。原來箇中都有分別，鄭寶鴻解釋：「以前茶樓同酒樓分得好清，茶樓只做早市飲茶賣點心，早上 4 點就開門，最遲做到下午 4 點；但酒樓就做晚飯、酒席夜市，做到晚上 1 、 2 點。後來有酒家做埋午市， 11 點開市，漸漸又做點心，所以才令角色混淆。」

何為「一盅兩件」？
以前是用焗盅泡茶，所以「一盅」是指焗茶的杯。亦有說廣州人習慣上茶樓，「一盅兩件」是指廣州人每天清早必到茶樓，叫「一盅蒸飯」再加「兩件點心」作早點，是以變成「一盅兩件」。

開蓋斟茶有典故
現在打開茶蓋即表示要添水，原來這個動作都有典故。清朝時茶樓是用焗盅，當時的八旗子弟喜歡鬥鵪鶉，常捧鵪鶉上茶樓飲茶，還以洗茶杯的焗盅為鵪鶉洗澡，然後蓋讓鵪鶉在焗盅內休息。有次，一個伙記不小心，揭開旗兵的焗盅斟滾水，就這樣把盅內的鵪鶉燙斃，旗兵要求賠償。自此，廣州茶樓決定樓面伙記一定要茶客打開焗盅，才會斟水，以免發生同類事件。

敲多謝

■ 多謝手勢是廣東飲茶流傳下來的禮儀。

與朋友飲茶時，若有人為自己倒茶，習慣會用手指輕點桌面表示謝意。這習俗來源有二：隆微服南巡到廣東飲茶，當地知府派人到茶樓護駕，隆為了不想揭穿對方身份，依禮以主家身份為知府倒茶，而知府為答謝皇帝，就彎起食、中、無名三指在桌面敲三下，以代三叩之禮。
鄭寶鴻指出，另一個說法是老一輩廣東人認為有人為自己倒茶時，若滿口食物還要開口說多謝會很失禮，因此發明以點桌代表點頭回禮之意。

Kaitak747 EiGhT 5 & tWo Join Date: May 2006 Location: Hong Kong Posts: 4,086 Likes (Received): 6	一盅兩件　走入歷史飲茶對大部份香港人來說，是一件普通不過的日常瑣事，但現在隨生活轉變，由昔日上「茶樓」，過度到今天上「酒樓」，甚至有時在茶餐廳吃點心，昔日水滾茶靚、一盅兩件的風味都漸漸淡化，最早留在記憶中的飲茶味道，還剩多少？頭帶起早茶文化據香港博物館名譽顧問鄭寶鴻先生說：「飲茶文化源自廣州，因香港割讓給英國後，發展越來越蓬勃。 1930 年代，因大量內地和香港人乘船往來香港、澳門和廣州等地頻繁，他們都習慣出發或抵港時，上茶樓食點心飲茶醫肚，令飲早茶文化開始興起。當時在現址上環西港城，就有一家著名的清華閣，其後飲早茶的酒樓越開越多。」 ■ 1915 年的永樂東街，有「吉祥茶居」。深水一帶有好多老酒樓盤踞，如信興、北豪等，原來也跟碼頭有關。在深水進行西九龍填海計劃之前，附近有一個由 1924 年已建成的碼頭（ 1992 年才清拆），那時主要是荃灣一帶居民往中、上環的出入口，加上有巴士總站和對正桂林街街市，所以十分興旺，於是信興第一代的羅如璋先生，就在這選址開茶樓。而北豪當年都是因相同原因，在 66 年於北河街開業。在油麻地超過 80 年的得如酒樓，也跟以前附近的旺角碼頭及油麻地碼頭不無關係。 ■ 62 年上環街市街景，可看到當時的銀龍酒家。要緬懷昔日上「茶樓」飲茶的感覺，好多人第一時間就想起「蓮香」，不過隨時代變遷，好多舊式茶樓買少見少。不過走入深水老區，你還可以尋得這種昔日風味，只要走過桂林街，便會看到一個門面帶點古意的酒樓，別以為它是「地」酒樓，其實內別有洞天。這家「信興酒樓」，原來是家自 1936 年便創業的茶樓老舖。早上八時走入信興，發覺自己變成了數一數二的「年輕人」，原來來飲早茶的茶客，不少都是有 20 年茶齡的熟客，當日找到最老的茶客何先生，便是由 1956 年撐場到現在。在這隨處都可見「歷史文物」，如負責茶的「茶檔」，已有 50 多年歷史；有個用了 40 多年的電水，仍沿用發熱線電爐煲熱水；最重要還有一個「人間鎮店寶」馬師傅，他在 1960 年 6 月 16 日上班，直至現在仍專責替信興調茶。老實說，我很怕上茶樓喝普洱，因為很多酒樓都是供應「黑水」給客喝，但信興自設茶倉，存了大批茶葉，全部由馬師傅來調校，用自存 8 、 9 年的舊茶，混入質素較好的新茶做成；加上水夠滾，我敢說在這，最起碼可以喝到一杯有質素的「普洱」。 ■ 水晶天花燈， 40 多年來見證信興的歷史，燒臘部牌匾都是玻璃字。 ■ 現在很多茶樓的點心都是即叫即蒸，很少再見到阿姐「片車」的情形。兩件唔少得新鮮料做大包有一盅，豈能缺兩件，儘管現在新酒樓都有點心供應，但老店點心卻更令人懷念。大包和糯米雞都有個傳說：餡料是由每日賣剩的料頭料尾做成。但信興的第三代掌門人羅先生拍心口說：「大包由我 40 幾年前落舖幫手賣，由五毫子到家十二蚊，糯米雞由八毫賣到十三蚊，呢兩樣點心我 70 幾年來都用足新鮮料做。」不過最好賣的還是豬肚燒賣，一日賣幾多無正式統計，但見一出爐就被人拿走，可知其受歡迎程度。大包老祖宗至於北豪的點心也不賴，當中我最愛雞扎，它保留傳統餡料，因現在很多雞扎材料都將貨就價，魚肚變豬皮，豬肚變芋條，令雞扎口感改變了。這兒還可食到叫「雞窩」的點心，好像無頂大包一樣，相傳這才是大包的祖宗。另外，還有用椰菜、、芫荽和豬肉做成的燒賣，頂放冬菇成冬菇燒賣。但在北豪，懂得叫碟燒肉和半肥瘦叉燒才叫識食！在另一間老茶樓得如，你還可找到鵪鶉蛋燒賣、糯米包等已買少見少的點心。 ■ 得如的鵪鶉蛋燒賣，令人有回到昔日茶樓的感覺。大榮華 1950 年開業，由食神韜韜接手後耳目一新，九龍灣新店和老店一樣晚晚爆場，但他卻認為「茶樓已死」！「傳統茶樓無得做喇！人工貴，師傅做得越好，產量就越少，加上材料費有升無減，但點心價錢就賣唔起價，好似我九龍灣早茶同下午茶市，大中小點一律 $9 ，賣一百碟賺晒都係 $900 ；但炒碟菜就可以賣 $50 ，惟有用小菜補貼。不過我為保存呢個傳統，都花唔少工夫，只要試我點心就知。」的確，有吃過大榮華的馬拉糕、叉燒酥等點心，就知若要繼續一盅兩件，水滾茶靚，不得不靠一班有心人。我們去飲茶，有時叫茶樓，有時叫酒樓。原來箇中都有分別，鄭寶鴻解釋：「以前茶樓同酒樓分得好清，茶樓只做早市飲茶賣點心，早上 4 點就開門，最遲做到下午 4 點；但酒樓就做晚飯、酒席夜市，做到晚上 1 、 2 點。後來有酒家做埋午市， 11 點開市，漸漸又做點心，所以才令角色混淆。」何為「一盅兩件」？以前是用焗盅泡茶，所以「一盅」是指焗茶的杯。亦有說廣州人習慣上茶樓，「一盅兩件」是指廣州人每天清早必到茶樓，叫「一盅蒸飯」再加「兩件點心」作早點，是以變成「一盅兩件」。開蓋斟茶有典故現在打開茶蓋即表示要添水，原來這個動作都有典故。清朝時茶樓是用焗盅，當時的八旗子弟喜歡鬥鵪鶉，常捧鵪鶉上茶樓飲茶，還以洗茶杯的焗盅為鵪鶉洗澡，然後蓋讓鵪鶉在焗盅內休息。有次，一個伙記不小心，揭開旗兵的焗盅斟滾水，就這樣把盅內的鵪鶉燙斃，旗兵要求賠償。自此，廣州茶樓決定樓面伙記一定要茶客打開焗盅，才會斟水，以免發生同類事件。敲多謝 ■ 多謝手勢是廣東飲茶流傳下來的禮儀。與朋友飲茶時，若有人為自己倒茶，習慣會用手指輕點桌面表示謝意。這習俗來源有二：隆微服南巡到廣東飲茶，當地知府派人到茶樓護駕，隆為了不想揭穿對方身份，依禮以主家身份為知府倒茶，而知府為答謝皇帝，就彎起食、中、無名三指在桌面敲三下，以代三叩之禮。鄭寶鴻指出，另一個說法是老一輩廣東人認為有人為自己倒茶時，若滿口食物還要開口說多謝會很失禮，因此發明以點桌代表點頭回禮之意。 __________________ 這裏是香港，這裏有力量
