Yes! That's the one I was referring to. The signage and the store look so similar. But I also noticed that you can't see the harbour in the picture. Very interesting.

Great photos, but I think every picture should at least be labelled with the year it was taken. They just don't mean much without the historical context.

So, I tried my best to locate the locations and years some of the pictures have been posted so far, can't say they are 100% correct, but should give a pretty good idea.

Hey thanks ericishim, I'm still browsing the pictures, the sheer volume of them is quite exciting. Some of them are fairly obvious, but some are so anonymous I'm just interested in seeing if I can picture those pictures today.

一 盅 兩 件   走 入 歷 史

飲 茶 對 大 部 份 香 港 人 來 說 , 是 一 件 普 通 不 過 的 日 常 瑣 事 , 但 現 在 隨 生 活 轉 變 , 由 昔 日 上 「 茶 樓 」 , 過 度 到 今 天 上 「 酒 樓 」 , 甚 至 有 時 在 茶 餐 廳 吃 點 心 , 昔 日 水 滾 茶 靚 、 一 盅 兩 件 的 風 味 都 漸 漸 淡 化 , 最 早 留 在 記 憶 中 的 飲 茶 味 道 , 還 剩 多 少 ?


頭 帶 起 早 茶 文 化

據 香 港 博 物 館 名 譽 顧 問 鄭 寶 鴻 先 生 說 : 「 飲 茶 文 化 源 自 廣 州 , 因 香 港 割 讓 給 英 國 後 , 發 展 越 來 越 蓬 勃 。 1930 年 代 , 因 大 量 內 地 和 香 港 人 乘 船 往 來 香 港 、 澳 門 和 廣 州 等 地 頻 繁 , 他 們 都 習 慣 出 發 或 抵 港 時 , 上 茶 樓 食 點 心 飲 茶 醫 肚 , 令 飲 早 茶 文 化 開 始 興 起 。 當 時 在 現 址 上 環 西 港 城 , 就 有 一 家 著 名 的 清 華 閣 , 其 後 飲 早 茶 的 酒 樓 越 開 越 多 。 」


■ 1915 年 的 永 樂 東 街 , 有 「 吉 祥 茶 居 」 。

深 水 一 帶 有 好 多 老 酒 樓 盤 踞 , 如 信 興 、 北 豪 等 , 原 來 也 跟 碼 頭 有 關 。 在 深 水 進 行 西 九 龍 填 海 計 劃 之 前 , 附 近 有 一 個 由 1924 年 已 建 成 的 碼 頭 ( 1992 年 才 清 拆 ) , 那 時 主 要 是 荃 灣 一 帶 居 民 往 中 、 上 環 的 出 入 口 , 加 上 有 巴 士 總 站 和 對 正 桂 林 街 街 市 , 所 以 十 分 興 旺 , 於 是 信 興 第 一 代 的 羅 如 璋 先 生 , 就 在 這 選 址 開 茶 樓 。 而 北 豪 當 年 都 是 因 相 同 原 因 , 在 66 年 於 北 河 街 開 業 。 在 油 麻 地 超 過 80 年 的 得 如 酒 樓 , 也 跟 以 前 附 近 的 旺 角 碼 頭 及 油 麻 地 碼 頭 不 無 關 係 。



■ 62 年 上 環 街 市 街 景 , 可 看 到 當 時 的 銀 龍 酒 家 。

要 緬 懷 昔 日 上 「 茶 樓 」 飲 茶 的 感 覺 , 好 多 人 第 一 時 間 就 想 起 「 蓮 香 」 , 不 過 隨 時 代 變 遷 , 好 多 舊 式 茶 樓 買 少 見 少 。 不 過 走 入 深 水 老 區 , 你 還 可 以 尋 得 這 種 昔 日 風 味 , 只 要 走 過 桂 林 街 , 便 會 看 到 一 個 門 面 帶 點 古 意 的 酒 樓 , 別 以 為 它 是 「 地 」 酒 樓 , 其 實 內 別 有 洞 天 。 這 家 「 信 興 酒 樓 」 , 原 來 是 家 自 1936 年 便 創 業 的 茶 樓 老 舖 。


早 上 八 時 走 入 信 興 , 發 覺 自 己 變 成 了 數 一 數 二 的 「 年 輕 人 」 , 原 來 來 飲 早 茶 的 茶 客 , 不 少 都 是 有 20 年 茶 齡 的 熟 客 , 當 日 找 到 最 老 的 茶 客 何 先 生 , 便 是 由 1956 年 撐 場 到 現 在 。 在 這 隨 處 都 可 見 「 歷 史 文 物 」 , 如 負 責 茶 的 「 茶 檔 」 , 已 有 50 多 年 歷 史 ; 有 個 用 了 40 多 年 的 電 水 , 仍 沿 用 發 熱 線 電 爐 煲 熱 水 ; 最 重 要 還 有 一 個 「 人 間 鎮 店 寶 」 馬 師 傅 , 他 在 1960 年 6 月 16 日 上 班 , 直 至 現 在 仍 專 責 替 信 興 調 茶 。 老 實 說 , 我 很 怕 上 茶 樓 喝 普 洱 , 因 為 很 多 酒 樓 都 是 供 應 「 黑 水 」 給 客 喝 , 但 信 興 自 設 茶 倉 , 存 了 大 批 茶 葉 , 全 部 由 馬 師 傅 來 調 校 , 用 自 存 8 、 9 年 的 舊 茶 , 混 入 質 素 較 好 的 新 茶 做 成 ; 加 上 水 夠 滾 , 我 敢 說 在 這 , 最 起 碼 可 以 喝 到 一 杯 有 質 素 的 「 普 洱 」 。


■ 水 晶 天 花 燈 , 40 多 年 來 見 證 信 興 的 歷 史 , 燒 臘 部 牌 匾 都 是 玻 璃 字 。


■ 現 在 很 多 茶 樓 的 點 心 都 是 即 叫 即 蒸 , 很 少 再 見 到 阿 姐 「 片 車 」 的 情 形 。

兩 件 唔 少 得
新 鮮 料 做 大 包
有 一 盅 , 豈 能 缺 兩 件 , 儘 管 現 在 新 酒 樓 都 有 點 心 供 應 , 但 老 店 點 心 卻 更 令 人 懷 念 。 大 包 和 糯 米 雞 都 有 個 傳 說 : 餡 料 是 由 每 日 賣 剩 的 料 頭 料 尾 做 成 。 但 信 興 的 第 三 代 掌 門 人 羅 先 生 拍 心 口 說 : 「 大 包 由 我 40 幾 年 前 落 舖 幫 手 賣 , 由 五 毫 子 到 家 十 二 蚊 , 糯 米 雞 由 八 毫 賣 到 十 三 蚊 , 呢 兩 樣 點 心 我 70 幾 年 來 都 用 足 新 鮮 料 做 。 」 不 過 最 好 賣 的 還 是 豬 肚 燒 賣 , 一 日 賣 幾 多 無 正 式 統 計 , 但 見 一 出 爐 就 被 人 拿 走 , 可 知 其 受 歡 迎 程 度 。




大 包 老 祖 宗
至 於 北 豪 的 點 心 也 不 賴 , 當 中 我 最 愛 雞 扎 , 它 保 留 傳 統 餡 料 , 因 現 在 很 多 雞 扎 材 料 都 將 貨 就 價 , 魚 肚 變 豬 皮 , 豬 肚 變 芋 條 , 令 雞 扎 口 感 改 變 了 。 這 兒 還 可 食 到 叫 「 雞 窩 」 的 點 心 , 好 像 無 頂 大 包 一 樣 , 相 傳 這 才 是 大 包 的 祖 宗 。 另 外 , 還 有 用 椰 菜 、 、 芫 荽 和 豬 肉 做 成 的 燒 賣 , 頂 放 冬 菇 成 冬 菇 燒 賣 。 但 在 北 豪 , 懂 得 叫 碟 燒 肉 和 半 肥 瘦 叉 燒 才 叫 識 食 ! 在 另 一 間 老 茶 樓 得 如 , 你 還 可 找 到 鵪 鶉 蛋 燒 賣 、 糯 米 包 等 已 買 少 見 少 的 點 心 。


■ 得 如 的 鵪 鶉 蛋 燒 賣 , 令 人 有 回 到 昔 日 茶 樓 的 感 覺 。


大 榮 華 1950 年 開 業 , 由 食 神 韜 韜 接 手 後 耳 目 一 新 , 九 龍 灣 新 店 和 老 店 一 樣 晚 晚 爆 場 , 但 他 卻 認 為 「 茶 樓 已 死 」 !
「 傳 統 茶 樓 無 得 做 喇 ! 人 工 貴 , 師 傅 做 得 越 好 , 產 量 就 越 少 , 加 上 材 料 費 有 升 無 減 , 但 點 心 價 錢 就 賣 唔 起 價 , 好 似 我 九 龍 灣 早 茶 同 下 午 茶 市 , 大 中 小 點 一 律 $9 , 賣 一 百 碟 賺 晒 都 係 $900 ; 但 炒 碟 菜 就 可 以 賣 $50 , 惟 有 用 小 菜 補 貼 。 不 過 我 為 保 存 呢 個 傳 統 , 都 花 唔 少 工 夫 , 只 要 試 我 點 心 就 知 。 」 的 確 , 有 吃 過 大 榮 華 的 馬 拉 糕 、 叉 燒 酥 等 點 心 , 就 知 若 要 繼 續 一 盅 兩 件 , 水 滾 茶 靚 , 不 得 不 靠 一 班 有 心 人 。

我 們 去 飲 茶 , 有 時 叫 茶 樓 , 有 時 叫 酒 樓 。 原 來 箇 中 都 有 分 別 , 鄭 寶 鴻 解 釋 : 「 以 前 茶 樓 同 酒 樓 分 得 好 清 , 茶 樓 只 做 早 市 飲 茶 賣 點 心 , 早 上 4 點 就 開 門 , 最 遲 做 到 下 午 4 點 ; 但 酒 樓 就 做 晚 飯 、 酒 席 夜 市 , 做 到 晚 上 1 、 2 點 。 後 來 有 酒 家 做 埋 午 市 , 11 點 開 市 , 漸 漸 又 做 點 心 , 所 以 才 令 角 色 混 淆 。 」




何 為 「 一 盅 兩 件 」 ?
以 前 是 用 焗 盅 泡 茶 , 所 以 「 一 盅 」 是 指 焗 茶 的 杯 。 亦 有 說 廣 州 人 習 慣 上 茶 樓 , 「 一 盅 兩 件 」 是 指 廣 州 人 每 天 清 早 必 到 茶 樓 , 叫 「 一 盅 蒸 飯 」 再 加 「 兩 件 點 心 」 作 早 點 , 是 以 變 成 「 一 盅 兩 件 」 。

開 蓋 斟 茶 有 典 故
現 在 打 開 茶 蓋 即 表 示 要 添 水 , 原 來 這 個 動 作 都 有 典 故 。 清 朝 時 茶 樓 是 用 焗 盅 , 當 時 的 八 旗 子 弟 喜 歡 鬥 鵪 鶉 , 常 捧 鵪 鶉 上 茶 樓 飲 茶 , 還 以 洗 茶 杯 的 焗 盅 為 鵪 鶉 洗 澡 , 然 後 蓋 讓 鵪 鶉 在 焗 盅 內 休 息 。 有 次 , 一 個 伙 記 不 小 心 , 揭 開 旗 兵 的 焗 盅 斟 滾 水 , 就 這 樣 把 盅 內 的 鵪 鶉 燙 斃 , 旗 兵 要 求 賠 償 。 自 此 , 廣 州 茶 樓 決 定 樓 面 伙 記 一 定 要 茶 客 打 開 焗 盅 , 才 會 斟 水 , 以 免 發 生 同 類 事 件 。


敲 多 謝



■ 多 謝 手 勢 是 廣 東 飲 茶 流 傳 下 來 的 禮 儀 。


與 朋 友 飲 茶 時 , 若 有 人 為 自 己 倒 茶 , 習 慣 會 用 手 指 輕 點 桌 面 表 示 謝 意 。 這 習 俗 來 源 有 二 : 隆 微 服 南 巡 到 廣 東 飲 茶 , 當 地 知 府 派 人 到 茶 樓 護 駕 , 隆 為 了 不 想 揭 穿 對 方 身 份 , 依 禮 以 主 家 身 份 為 知 府 倒 茶 , 而 知 府 為 答 謝 皇 帝 , 就 彎 起 食 、 中 、 無 名 三 指 在 桌 面 敲 三 下 , 以 代 三 叩 之 禮 。
鄭 寶 鴻 指 出 , 另 一 個 說 法 是 老 一 輩 廣 東 人 認 為 有 人 為 自 己 倒 茶 時 , 若 滿 口 食 物 還 要 開 口 說 多 謝 會 很 失 禮 , 因 此 發 明 以 點 桌 代 表 點 頭 回 禮 之 意 。
